CRC the other way to spell awesome
Simply put if you are talking a chemistry or physics course in college just buy this book (any edition). It contains information that you will need for classes and labs it is a great resource. I bought this book used. When I bought this book the 90th edition had come out. This made this edition about 40 dollars and it was worth every penny.

Disappointment
I am really disapointed by this big book.
The Title is different from what it contains. The Volume is so large, but does not contain great substance. I wish it is possible to return it and have my refund. It is not worth the trouble.

Excellent, classic reference work & source of a library of technical information & facts. Formerly (known by students 50+ yrs ago) as "The Rubber Handbook"

The Good Stuff
The CRC Chemistry Handbook has been near my desk for 25 years and probably gets used twice a week. My only regret is that it does not have more detailed information about the isotopes, the real building blocks of the universe. When we refer to an element, we are referring to an average of the isotopes, similar to each other only in their number of protons.

Organization is the key! This book is so well organized that even a beginner can find and use the information. One must remember however that this is a book on chemistry as it applies to food. If one does not have a solid foundation in chmeistry then one will get lost easily in this book.

You Need to Buy It
Up to now, it the only book that talks about food chemistry in details that I have found!

For a deep knowledge of what we eat
Books I've read before about food chemistry aren't so detailed and specific. This book is full of graphs, tables, chemical structures and very clear explanation of what are the components of a great number of foods and how their react to natural process as the fermentaton or in certain food treatments (cooking, freezing, ecc..). Chemical reactions are described in great details with reaction mechanism and intermediate products. Lot of fun while you sitting down at the table....or at the desk!

Excellent technical book on advanced food chemistry
Food Chemistry is an amazing book, BUT, be careful before you buy it. You DO have to have a fairly strong background in the fundamentals of structure, nomenclature, reactions and the like involved in organic chemistry and biochemistry. They show some great reactions and offer some pretty helpful tables and charts on chemical properties and reactivities of various foodtsuffs. The later chapters, such as dairy, meat/fish, fruits are extremely comprehensive. I will at one point be using this as a text book for an advanced food chemistry course. However, if you are just beginning to explore food chemistry I would suggest starting out with "On Food and Cooking," and work your way up to this AFTER you get a bachelor's in chemistry ... CRC Handbook
Google, Wolfram Alpha, Wolfram Mathworld, Wikipedia... specialist websites like NIST might have made reference works obsolete.The CRC Handbook is not endangered.If you work or play in the physical sciences, there will be day after day when you need the beast.Immediacy has admittedly diminished.Buy an updated edition every five or so years.If you do not have a CRC, there will be bad days.

Exhaustive and worth the price
If you have any use for the practical aspects of chemistry, this book is for you. Want to know how to fractionate pyroligneous acid to obtain methanol and acetone? Or how to separate different metals from foundry dross and scrap alloys? Or why you can't store fluorides in glass? Just look up the chemical and physical properties of the compounds in this book. It is definitely a must-have if you work in the reclamation industry. Information on the physical properties of metals and semimetallic elements is also contained in this book, essential for metallurgical engineers. I own an edition from 1976, but even the outdated one in my collection is indispensable. I thoroughly recommend it.

A real review for the CRC Handbook
While the first reviewer is correct concerning the Handbook's comprehensive and encyclopedic nature, I doubt it would make for a comfortable pillow.

It must be said early on that this Handbook is not intended to provide any type of tutorial on the topics, but is the product of many experiments from among the various fields mentioned in the listed sections above.The Handbook is a collection of scientific facts and values to be used for calculations and experiments.(The reviewer for the 87th edition of the Handbook rated it 4 stars because the tome failed to give his son good explanations for phenomena in chemistry--again, that is not the Handbook's purpose.)

Therefore, I am probably preaching to the choir with regard to those who will actually purchase the current edition.All others uninterested in chemistry & physics research, as well as up-to-date information on scientific data, will probably want to steer clear of such an expensive pillow.Nevertheless, those that are interested will be grateful for the depth and scope of work done to produce the best sets of tables, data, and constants so that we can frutifully carry out our own personal research.
