Gourmet certainly meant something different in 1962, when this book was first published. Ingredients called for here include bouillon cubes and packets, tinned crab and tinned wild rice, tins of potatoes, and lots of condensed soups.

But don't be too quick to turn up your nose and dismiss the recipes. They were, after all, conceived and written to be prepared within 30 minutes (helped a lot by the condensed soups), long before the general availability of decent stocks (so necessarily had to rely on bouillon), and before the widespread availability of fresh fish and shellfish.

If you don't want to use the condensed soups, you can use a basic white sauce and flavor it accordingly (the primary flavors are condensed mushroom and condensed chicken soups). But you also may be surprised at the taste of your dish using the recommended soups. On a hurry-up night it may be worth it to try.

I found the author's exuberance fun and the recipes interesting. I was pleasantly reminded and reacquainted with dishes I'd forgotten about and dishes that have gone out of fashion. When was the last time you saw frogs' legs, either on a menu or at the market? I also have been introduced to new dishes that will become regulars in my kitchen.

I hope you enjoy this book and the recipes as much as I have.
