There may be fancier candy-making books written by better known authors, but David Jones knows what he's talking about. He is a highly respected member of the candy industry and the owner of the Hansel & Gretel Candy Kitchen in Helen, Georgia, a popular tourist destination.

His recipes are precise and well written with much more information than you'll find in most candy books.Once you see them, you'll want to drop everything and get started making candy, David's way.

I saw Beth Kimmerle on a Food TV special about candy and thought she had an amazing job. A candy expert? How did she get such a job? Is there an opening for me? I bought her book and found it fascinating. She covers all the old school favs from Wacky wafers and Lick M Aid. The pictures are great. If you dig candy like me and wish you had her job, you'll love this book.

This book was listed by John Mariani as one of the BEST FOOD and DRINK books of 2003 and his words inspired me to buy several. What a treat it really is!

I have never seen another book about the history of American candy, and here, with "enormous affection and dogged scholarship", Beth Kimmerle provides an informative and graphically rich nostalgic food book.

The pictures are great--a real trip down memory lane. The book, along with a few handmade treats from the recipe section, will make a wonderful and unique holiday gift.

This book has a great cover and wonderful pictures but it seems to have missed both the editor and proofreader. The writing is also mediocre.It's nice to look at but very hard to read especially when one is attempting to make corrections during the reading process.

The Sweet:
The book is obviously well-researched, and the author's enthusiasm for the topic shines through. Each page is nicely designed and chock-full of colorful photos of vintage packages and ads. It's fun to flip through.

The Sour:
The amateurish writing style, poor editing and number of glaring typos detract from what could've been a real treat. Even a proofreader would have made a world of difference.

All the recipes I have tried have turned out well, although I have to admit, if my husband had his way, all I would ever make is the Marry Me Toffee! This recipe alone is worth the price of the book. Kudos to the author for this book: people like me whose mothers did not make toffee can learn to do so with ease, confidence and with great success!

You have checked a book out of the public library more than a few times!I've enjoyed this book for quite some time and just recently broke down and purchased it.I've had great success with everything I have tried.My normally "I don't eat sweets" husband could not stop raving about the Hopscoth Candy.Beware, you may not be able to stop eating your confections! :)I've read many books on candy making and this one is by far the most informative.It has a nice layout with a wealth of recipes for every level of candy-maker.What more could you ask for?

Serious, this is the best book on making candy out there. I've looked, I know. I own over 300 cookbooks, and yet, if I want something sweet, this is my go to book. Not only has Jane Sharrock taken all the mystery out of making candy with 27 pages of easy to follow directions and instructions, she rates every recipe, telling whether it's Novice Super Simple, Novice Easy, Average, Advanced, and Expert. She tells you how much the recipe will make and exactly what you need to make it- not only the food ingredients, but all the utensils, so you can be sure you have everything on hand before you start.

The recipes themselves are a treasure hoard of delights from the elegant to simple, from complicated to comfortable. Generations of her family are represented by recipes and she tells delightful anecdotes about most of them along with the recipes. Because such a broad range of time is covered, you'll not only discover new treats, you'll find family favorites.

My only word of warning is that there aren't many pictures, so if you're someone like my friend Lindsay that thinks cookbooks need pictures I wanted to warn you, but I still recommend this book! It's perfect the way it is.

I must admit that I am disappointed in this offering from the Ultimate Series. I tried several recipes and none of them were successful. I won't go away from my grandmother's 20 year old hand me down cook book (A present given to me several years ago) again. I would recommend the Ultimate Ice Muffin, Ice Cream, or Chocolate Cookie Book. I have not had a recipe fail out of those books.

This is the greatest book.I found it originally in the library and liked it so much i looked for it at amazon and found it for cheap.Love it!Tried the pecan pralines so far, and the hints it gives are really good- like use a high pan or it'll boil over and don't stir too much or it gets crystally.i am planning on trying out a bunch of recipes before Christmas to decide what to make for gifts and for myself!you won't be sorry with this book.

I bought this book for my daughter for xmas.She wants to be a pastry Chef (thanks to the food network). So far, she has made the carmel corn (absolutely fantastic), the homemade marshmallows (amazing)and carmel (gooey fun).

The only down side to this book is that there are NO pictures, NONE.Not demonstrating or showing the final product.We may need to purchase another book that has pictures.

I acknowledge that sugar work is tricky, but after using this book for a few recipes and then giving it away, I have to wonder how well the recipes were tested, or whether they could be described further. I've had much better luck with Nick Malgieri and Alton Brown candy recipes.

This book has really helped me learn so much about candy making. I have been making family recipes for chocolate candy for a few years now and finally decided to buy a book to learn more (my Grammy taught be but passed away last year and I still had so many questions). I now know why certain batches I made failed and why last year I got a weird color on my chocolate covered pretzels. I would probably not suggest this book for true beginners but if you are somebody like me who has little experience and no formal training this should truly be your ultimate guide book. I now have all of her cookbooks and each one had been easy to use, well written and understandable even for a novice. Given the tenuous state of the world, if you can only have one cookbook, have Y2Kitchen. If you have other cookbooks, also have Y2Kitchen. No, it does not tell you how to make grass sandwiches or grind acorn flour. Whatit does offer is an attractive long list of recipes that are nutritious, require minimal ingredients and equipment to prepare, and are flavorful.Obviously, preparation for uncommon events is a necessary prelude tosuccessful survival, and survival preparation is superbly addressed in the22 page Appendix. In this section you will find imaginative cooking andshopping tips, detailed food storage suggestions, and a long list ofimportant emergency essentials. As they began fixing my computer at work, I began reading snippets from Y2Kitchen, The Joy of Cooking in a Crisis, to my captive audience.

Use separate cutting boards for meat and veggies to not cross-contaminate theboards with bacteria. Didn't my biology instructor mention something aboutthe kitchen housing the most bacteria of any room in the house?

Add waterto your food when cooking it in a microwave so the steam can kill thebacteria. Yes, he also lectured on how bacteria thrive and die.

Dropfrozen veggies into boiling water while they are still frozen to preserveVitamin C. And never soak any fruit or veggie in water for longer than aminute so large amounts of vitamins and minerals won't be lost.

Therewere so many wonderful tips; my computer geek friends were beginning totake an interest.

Did they know which baking powder was aluminum free?Could they tell the difference between a fresh and cooked egg withoutbreaking it? Did they know how to reduce the gas content of beans?Moreover, if they knew how to keep a bottle of champagne from bubblingover, did they know how to keep a pot from doing the same?

By now, myaudience was asking for the name of the book and where to get a copy forthemselves. It was just amazing how many wonderful tips there were. Someseemed like good old common sense, and yet I don't remember my mothermentioning them.

Never defrost those herbs before cooking...measure honeyin oiled utensils...submerge lemons in hot water for 15 minutes for twice thejuice on squeezing...the list goes on and on. Candy's book has it all, aswell as a collection of fine recipes interspersed with historical tidbitsand a nutritional analysis of each meal. Give it a look. You won't bedisappointed!

Only a fair regular cookbook and really not useful for Y2k. The author must think that we will be able to get to the store for butter, dozen clams scrubbed, fresh squessed lemon juice, sour cream, etc. I was hoping to geta cookbook that uses canned goods or survival type foods.

This is an awesome book!!Every recipe looks so delicious and they don't seem to be too complicated either.For anyone who likes candy, and likes to use candy in their baking, this is the book for you.I know that these recipes are all tested good recipes.I went to school with one of the authors.I would recommend this book to everyone!

5-0 out of 5 stars Best. Cookbook. Ever.
Although a previous reviewer suggests starting at the beginning and going all the way through the cookbook to learn necessary techniques -- which is not a bad idea -- I did it the hard way. My mom is a huge Wilton fan, and as a teenager, my favorite way to feel grown up was to make candy out of this book.

Before I got my driver's license, my candymaking choices were governed by what ingredients we had on hand, so I started with divinity and some of the beaten fudge recipes. The instructions in the book were so clear and thorough that I had no trouble following them, despite my inexperience, and my successes with challenging candy recipes really boosted my confidence in the kitchen and undoubtedly made me a better (and much more adventuresome) cook.

I liberated the book from Mom's kitchen when I graduated from college, and 10 years later, I'm still using it to make Christmas candy, impress the boss, say "thank you," or simply express affection for important people in my life.

I also have the 1983 edition and would agree with the previous reviewer's assertion that some of the recipes fall into the "professional stunt driver, closed course" category, but a little common sense and a healthy respect for boiling sugar syrup have been sufficient to keep me safe all these years -- even when I was a gangly, clumsy teenager.

These days, the art of making candy in a home kitchen is extinct.For those who wish to learn this lost art, this book is as good as any you will find. I recommend it highly for those willing to devote the the time to the task.

This book is designed as a self-guided course in the traditional art of confectionery and candy.You are expected to go through the book from cover to cover, chapter by chapter, doing recipes and learning necessary skills.This is definitely not a book for the casual home cook who wants to flip through the book and pick out a recipe at random that sounds appealing.It is the only place I know of that shows you how to make your own fondant from scratch.

The order of the chapters is important, and you should go through them one by one as recommended by the authors. They represent a reasonable course of instruction.On the other hand, I would present the chapters in a slighlty different order: fudge, caramel, and nougat I would put towards the end, and put fruits, jellies, marzipan, and truffles first.

Note that I have the 3rd edition published in 1983, so some of the recipes are 25 years out of date and no longer worth doing. I am also concerned about the lack of safety and sanitation information. One of the easiest ways to give yourself a nasty burn requiring a trip to the hospital is to have an accident while making some of the more dangerous types of candy. The recipes are not rated for safety, but probably should be.

It has these chapters: easy-do candies, basics, confectionery coating, popcorn candies, fudge, caramel, nougat and divinity, marshmallow and jelly, truffle, fondant, chocolate molding, marzipan, fruit and nut, hard candies, european chocolates.

I've enjoyed making many of the recipes out of this book, but have found that the instructions lack detail and are sometimes inaccurate, requiring the reader to fill in the gaps.This is ok if you're willing to try out the recipe several times, inventing the instructions on your own.

Otherwise, the variety of recipes covers many candy-making genres, and the book is a good starting point for those getting into candy making.

I feel that this cookbook is missing a couple of important candy genres. Although it does include two recipes for marzipan, a rare phenomenon in the world of American candy books, there is no mention of hard candies other than nut brittles, and perhaps even more surprisingly, there are no fondant recipes. I consider fondant to be one of the cornerstones of candymaking, and lovely though this book may be, I can't help but feel cheated by its misleadingly wide-ranging title. It does, however, boast an extensive section on truffles, and the technique chapter at the beginning of the book sports an exceptionally thorough and unique explanation of chocolate tempering and how one holds a temper. If you already have a collection of candy books that covers all the bases, ¨Truffles, Candies and Confections¨ is a nice addition. But if you're looking for an introduction to candy making in general, this is not it.

For those who want to make candy in their kitchen at home, this book is the only game in town. In spite of some shortcomings, I do recommend it for the dedicated home cook.There are a number of older candy books, but are mostly out of print and date back 50 years or more; as such, they do not reflect current abilities or tastes. This book is the only complete one on confectionery I can think of published in recent years. This is a reprint of the original published in 1992.

This book does a good job of representing those candies that people want these days. When they think of confectionery, they mainly are thinking of chocolate truffles and clusters; consequently, the first half of the book is devoted to just that. The second half contains chapters on caramel, brittles and marzipan, fudge and nougat, and fruit. The recipe instructions are well described and easy to follow. The sections on ingredients, techniques, and equipment are also important, as these subjects in older candy books are out of date and mostly worthless.

There were some shortcomings, however. The description on tempering chocolate is brief, and leaves out many details. I object to the many ministrations that chocolate be put into the refrigerator. Many of the recipes in the second half call for hot sugar to be cooked to 240 degrees and beyond. This is the most dangerous thing in the kitchen to do (even more dangerous that deep-frying in oil), yet there are no instructions on how to do this safely. This subject by itself would need a section 3 or 4 pages by itself.There should also be more information on the difference between milk, white, and semi-sweet chocolates and the various brands.

This was a huge disappointment.Thank goodness I bought it from Amazon so can return it.All those recipes but no hints about why they're special -- and there's a vast difference between recipes you treasure because they contain ingredients that are readily available, because they're cheap, because they're quick and easy, and because they're delectable.I like to know which is which before spending my time and money, and this book provides no hints. It could have been cranked out from any sterile test kitchen.I prefer tried-and=true recipes that tell you why they're treasured.

The crafts are even worse.For example, a "new or recycled" picture frame to which you glue birdseed and hang it on a bush or tree.A *NEW* picture frame?Yeah, right.Is this book intended for the Rockefellers?I feed birds every day, but they'd rather have me spend my money on birdseed than on picture frames!
