Regarding the LIBELLUS DE ARTE COQUINARIA AN EARLY NORTHERN COOKBOOK, I can report as to exactly what this volume is all about. The LIBELLUS is among the oldestof culinary recipe collections & dates from the early thirteenth century.It survives in 4 versions in three languages... Danish, Icelandic, & Low German. It is thought to date back to possibly even the 12th century. It's a small collection of only 35 recipes and was published as part of the Collection included in AN OLD ICELANDIC MEDICALMISCELLANY [Ms. Royal Irish Academy 23D 43.]in 1931 by Henning Larsen.

What this new 158 page book does is to bring together the four versions, translate them, add textual notes, commentary indices, glossaries, and bibliographies.As such, it offers a rare glimpse into the world of early culinary manuscripts in Northern Europe. I should mention that it's the work of the late Rudolf Grewe (who provided us with the LIBRE DE SENT SOVI in 1979) and Constance B. Hieatt who is of course the scholar behind PLEYN DELIT, CURYE ON INGLYSCH, and AN ORDINANCE OF POTTAGE. The scholarship is as expected excellent.

So, if you collect medieval culinary texts, this is one for yourshelves. Unlike PLEYN DELIT, it does not contain modernized versions of the medieval recipes,but the composite translations offer many details and much commentary for any cook wishing to create their own working versions of these early recipes. ... I own a few volumes of Penfield Press cookbooks, including Dear Danish Recipes.I'm not of Danish heritage, but I'm very interested in ethnic cuisine and Penfield really gives the customer good value for so little money.

I like a little history with my cookbooks and every volume contains the history of that country's cuisine as well as information pinpointing significant settlements of that people (very interesting to know that Danish people settled Solvang, California, complete with a windmill, that mirrors Denmark.The late actress Inger Stevens took solace in the town, saying it reminded her of her childhood in Sweden).

Of all the things in this cookbook, every Christmas I challenge myself to make the Danish Christmas Bread.That bread is the singular most difficult thing I've ever baked in my life and the most labor-intensive.

This is definitely worth it as is any cookbook from Penfield.- Donna Di Giacomo

After tasting a wonderful Danish home made cookie platter, I decided I MUST find a cookbook that had those recipes.I found Glaedelig Jul: A Danish Christmas Recipe Book to be all that I was looking for and more.The cookie recipes turned out to be more delicious that I remembered (love the "Beer Cookies"), and the beautiful pictures and clear directions made it a simple task.The recipes from this cookbook then became the Christmas cookie platters for my best girlfriends, with a copy of the book to go with each.One of the best Christmas presents ever.

A bonus of this book was the incorporation of the Danish Christmas celebration with food from beginning to end.I knew, of course, about the Danish Smorgasbord, but I had no idea of all the wonderful foods prepared during the 4 days of Christmas.Although this is a recipe book, it is also a beautiful picture book chronical of the Danish celebration of Christmas.It is so beautiful that it is displayed with all my holiday books at Christmas time.

I ordered this book, mainly to avoid shipping costs on the Sante Cabin Kitchen Æbleskiver Pan pan I ordered.What a great little book.I have a great recipe for Æbleskivers, but this book gives me a number of other options.I knew when I ordered it that it had much more than just Æbleskiver, and that was fine because I wanted some more Danish recipes.

I will be buying more of these books to give to cousins and other family members.We're Danish (actually, I'm only half, but my cousins are 100%).In fact, some are from Elk Horn, which is featured in the book.

If you're looking for a great little (and I mean that literally) book with some really good looking Danish recipes, look no further.This is it.

I just re-read the other reviews.A couple mentioned they were looking more for Æbleskiver recipes.I mentioned that in myreview, but decided to let you know how many there are.There are 8 Æbleskiver recipes.There are 109 other recipes for things such as breads, soups, drinks, cookies, etc.Remember, a big part of the title is "...and More A Sampling of Danish Recipes".I stand by my review, this is a great little book.

I really like this book, and I don't understand so many people's negative reactions. Yet again people have failed to read the description for something, but really, I thought that since the title is: "Aebleskiver and MORE: A SAMPLING of Danish recipes" people would be able to figure out that there is other stuff in there. If you also look at the product details you can see that it is a very small book. I think this is a brilliant and fun idea because now all I have to do is take off the binding and I no longer have to transcribe all these recipes to index cards for my recipe box, since it has already been done for me! If you like buttery cookies, tarts, and other Scandinavian treats, this is a great little book. Some of the recipes aren't the best I've ever used (my grandmother's Danish bread recipes can't be compared with, after all), but all of them are still very good, and many of them are even great. With over 100 recipes for under $10, I think this would be a great gift and I think it is a clever way to introduce someone to the joys of making Danish foods and drinks.

As for people's problem with the limited number of aebleskiver recipes, the point of aebleskivers is that they are portable little round "pancakes" that you can either fill with jams, fruit, etc while you make them, and/or dip them in fun jams and syrups. It is a SIMPLE recipe that you do not need many ingredients for, and you CUSTOMIZE them to your tastes by what you put with them. Just think about sandwiches, and you will see what I mean. Sandwiches are two pieces of bread with something inside of them, and there is almost no limit to the different kinds of sandwiches you can make, simply by filling them with different things. The are essentially PANCAKES, after all, and how many different recipes for pancakes do you need? I'm sorry, but part of the fun of aebleskivers is putting something in them and seeing how they turn out. Will sprinkles in the batter make them festive, or will they just turn out weird? If I put in pieces of a very juicy apple, how long should I cook them, and should I add more flour? Just like people enjoy experimenting on and tweaking a cookie/cake recipe, it is the PROCESS of making aebleskivers that is fun. There are, in my opinion, plenty of recipes for aebleskivers to try/tweak in this book, especially considering that I would be willing to buy this book just for the other Danish recipes and instructions included within.

I was intially discouraged searching the Internet because most Aebleskiver pans will not work on a ceramic top stove.I was so pleased to find a pan that will work. Surely I must be Danish because I love, love, love this pan.
