I can honestly say that EVERY receipe I have tried in this book is delicious.There is variety in appetizers, breads, main dishes, desserts and more which are so full of flavor and do not skimp on the portions.
I plan almost 75% of my meals directly from this book.It is the best thing to happen to my weight loss goal.Ever.

I purchased this book because I LOVE to cook and am always looking for lowfat ways to prepare the foods I ate growing up that had WAY too much fat for me now.I have been VERY disappointed with it.In the past 3 weeks, I have tried 6 recipes so far.It was not ANYTHING like I had hoped for, and I even threw a few away because they tasted awful!I will keep trying a few more but so far am very dissatisfied with this book!

I was fortunate enough to hear the author speak at a book signing. She speaks as well as she writes. I like her practical approach on nutrition.The fact she's a mother raising children adds value because I feel like she relates to me. I found her book easy to understand, easy to read, and easy to follow.She's made shopping easier with her varied lists of foods we can eat, including name brands.Changing eating habits is very difficult, yet after seeing her and reading her book, making changes seems obtainable.In fact, our family was able to make instant changes in our food buying/eating habits. Her book is a valuable tool for anyone who wants to make informative and positive changes in their nutrition.

When the fat is removed from a food, simple carbohydrates(sugars) are added to make the wonderful taste in these recipes. And sugar is the cause of most weight gain--not fats. Fats are misunderstood--especially saturated fats.
I eat eggs, meats, half and half, whipping cream, sour cream, cheese, chicken fried in lard and coconut oil all the time--never do I eat any fat free or low fat foods, and I have my cholesterol checked yearly--last time it was a mere 155 total, and I have NO weight problems or heart disease. the lipid hypothesis is a big myth. Gary Taubes say it all in his book: "Good Calories, Bad Calories." But everything one knows for sure is found in his own experience, and I have found this to be true in my own life experience with fats in my diet. actually I would rate this fat free junk cookbook as what it is--pure junk with a rating of zero, or maybe a minus zero.

Wow! What a great cookbook for anyone who is on a low fat or not fat diet. Usually recipes that are low or no fat are very bland, not the case with this book. I've tried a few of them, and all of them are really good! I can't wait to try the rest of them.

There is just one small drawback. This doesn't have any nutritional information about the calorie count.Other than that, it's a fantastic book. If you buy it, I can promise you won't be sorry. I know I'm not.

If you are a junk food junkie like me, and you need to extremely reduce the fat in your diet to lower cholesterol or other reasons like me.This is a must have book.With the help of this book and others like it, I was able to lose 25lbs. in five months (and keep it off), and I lowered my total cholesteral by 56 pts.!By using these recipes, I was able to "pig out" and still achieve my goals.I didn't feel cheated out of not having junk food.I also read labels...lots of labels and didn't eat anything that had more than 4% total fat in it.

I haven't had a chance to try any of the recipes yet, but am very disappointed that there is no nutritional information for any of the recipes.I understand that they're low fat/fat free, but they don't include calories, fiber, etc.

While I've only tried several recipes in this book, the cinnamon roll recipe alone is worth the price of this book. The first time I made them they flopped, but I just gave them a second try last night and wahla! I can hardly get over the fact that they're fat-free and my step son loved them, the real test! ANd my cinnamon rolls looked just as good as those on the cover, if not better! I didn't have any luck with the fudge recipe, but then again, it could be something I did and maybe I'll try it again. I don't know if these recipes have actually been tried but I've done a few of them and the quantities are just plain wrong in some of them.Try baking the cappuccino cookies and see what I mean, the dough doesn't stick together because there's too much flour mixture and not enough egg to hold it together, it just crumbles and they taste weird!

I just ordered this cookbook after reviewing it at a family members home.I have tried several recipes and my husband and I have enjoyed them all.The recipes are made from affordable ingredients commonly kept as staples or on your weekly shopping list. (i.e. ingredients are not "unique" to each recipe and then will sit in your cuboard unused until the next time you make the recipe.) The recipe photos are beautiful and are an accurate reflection of the finished product you can create in your own kitchen.

I have already ordered two of these books at the suggestion of a friend of mine.I gave one as a gift and kept one.It's so great and the recipes I've tried are wonderful and also easy.They usually have seasonings I have in my kitchen - nothing out of the ordinary.Anyway I ordered this most recent one and gave it as a gift also.It's a shame this is out of print.It's a great cook book.Also it was received at my home in great condition and just on time.

I have done a lot of vegan eating and although I don't use the recipes with seafood or dairy products, this book has many of my favorite recipes for fat free eating. He includes ethnic recipes from many countries for a variety of flavors. This book has many great recipes for those who want to go completely vegan but also is good for people who don't want to, but still want to lose weight and be healthier.

This type of diet is the only way I have ever found since I was about 30 to maintain the weight I want, and I'm over 50 now.

I bought this book in 1996 and used one of the recipes for the curried fruit. Time went by and I got fatter and sicker. Now my doc has told me that she has given me all the meds I can take. It's up to me to change my body. I opened up this book again and decided to try the recipes for a month with weekends 'off'. I've managed to lose more than 12 pounds and drop my cholesterol by more than 50 points. What a difference! I'm never hungry and the recipes are easily prepared.

This book has practical advice. And the recipes are pretty darn good, and amazingly inexpensive. He relies heavily on beans and canned tomatoes and lots of spices, so the food is interesting in flavor, color, and texture. Most recipes also make a LOT, so that you can have extras to freeze for later dinners or take some to work in your lunch. This not only saves your eating plan, but softens the blow to your pocketbook that eating out entails. We have not found too many recipes yet, that we dislike. Most are very delicious and filling and are even better the next day. This book was indeed worth the purchase price; equal amounts of advice and recipes. Well done!

Sadly this excellent cookbook was ahead of its time and has yet to be discovered. It is an must have for the conscious cook giving little known information to create delicious healthy meals. The book originally came with an video of the author demonstrating his ingenious cooking tips.

I love the little graphic at the bottom of each page with number of servings, calories, grams of fat, and percentage of fat.

He also has a graphic on Quick and Easy recipes and "freezer friendly."

This book doesn't say "vegan" anywhere on it, and I myself am not vegan (just a vegetarian for now), but I feel like I could be vegan based on this cookbook.Oser gives a great, not-too-lengthy but informative introduction to using soy, with a complete list of "unusual" ingredients and where to get them, as well as a conversion chart.The recipes are great -- easy to make and delicious!She has a fantastic mix of foods, but my VERY favorite thing about this book is all the "comfort foods" she includes.There's an AWESOME recipe for shepherd's pie, for example, that is filling and tasty and makes you not miss meat at all.This book also has the hands-down BEST vegan chocolate cake recipe I have ever eaten.I recommend this book to both new and veteran vegan/vegetarian cooks.You will not be disappointed.

I have been an ardent vegan for nearly 2 years, and this book nearly made me go and buy a McDonald's hamburger.The recipes I have tried had ingredients that were expensive, difficult to find or both.The finished dishes were not appealing to any of the senses, and had a horrible aftertaste. The aftertaste may have been attributed to the massive amounts of nutritional yeast and miso required by many dishes.After the third time I tried to make a meal using recipes in this book, I threw it out (and almost threw up).I did not want this book to go to Goodwill or Salvation Army and continue the legacy of horrible vegan cooking.There are good vegan cookbooks out there, try again.IF YOU MUST TRY THIS BOOK AVOID:Quiche Lorraine, Brussels Sprouts with Chestnuts and Creamed Artichoke Hearts.All will break your vegetarian/vegan spirit, and scar you for life.

I give this 4 stars, only because some of the ingredients are not typical pantry stock and many of the recipes are labor intensive.However, they are "delicious" and filled with nutritional balance.The quantities are large, so often, I will freeze recipes.Also, I've found that if I don't have all the ingredients like mushroom powder or nutritional yeast, the recipe is still very good.Thank you, Marie Oser, for taking the time to test and balance healthy recipes that are worth making.

I bought this cookbook after about 6 months of being on a diet recommended by my naturopathic doctor.I was told to avoid meat, dairy and sugar.I had been doing o.k. with one of the Moosewood Restaurant books, but was looking for more variety.When I first started looking at the recipes in here, I was a little nervous, being "cooking-challenged".There were a number of ingredients I had never heard of!But there is a glossary in the front that explains what the ingredients are and where you can find them.Also a good techniques section, which helped me a lot in preparing tofu.And now having made several of the recipes and being amazed when they are finished (they actually look like something I'd get at a restaurant), I'm not so daunted anymore.They are really fairly easy to make and don't take as much time as you might think from reading the ingredient list. The second edition which follows this one is MUCH better. I bought them in reverse order and loved the 500 More Fat-Free Recipies.This one is just getting up the momentum.However, both are good books to have on the shelf for no fat cooking ideas.

I ran into this title at the local library hunting ways to modify a diet for me to gain muscle and for my husband to protect his heart bypass which lasted 15 years and is now getting a worried eye from the Doc.Dragged in unwilling but knowing he has no other choice he's hard to please esp when his idea of a snack is 8 or 9 Mounds Snack Bites [not exactly low in fat] He doesn't miss it a bit. He also doesn't have to give up his beloved Chocolate with recipes like her Coca Cake with .9 [not 9 grams but point 9 grams] of fat or chocolate pudding ringing in with .6 grams fat and both with low cholesterol [0 cake and 2 pudding.]

She breaks down clearly at the end of each recipe calories per serving, fat, cholesterol [hanging it at 0 a LOT of the time], protein, carbs, Dietary fiber and sodium.Nice very nice but the recipes are varied, interesting and flavorful. I can make many of them without a special trip to the store on the spur of the moment.

Fruit without that ton of sugar added some recipes want to add but still sweet and flavorful. Excellent source for those meatless meals also or just plain great for adding to your favorite meat based meal. Easy to follow recipes esp for those who want to cut and not spend the entire day figuring out how to cut the fat. And the best part?You might not know you are [unlike the low sugar, low carb, low fat candy bar he just purchased "So they flavor plastic now?" ---The cake won hands down]

A must for any cooks library and a Golden book for anyone who wants simple recipes.

Schlesinger begins with a thorough guide to shopping, cooking and seasoning techniques. Organized by course, the book includes a chapter on breakfasts, lunches and snacks and another devoted to sauces, dressings and relishes.

Breakfast might include pear-cinammon muffins or frozen fruit pops made with yogurt and banana and for lunch there's vegetable tortilla wraps with nonfat cottage and cream cheese or baked potato pancakes.

No meat is included (except defatted chicken broth) but there's plenty of variety and creativity including marinated vegetable kebabs, vermicelli with roasted red peppers and lots of bean dishes, all well-seasoned. There's even dessert - apricot upside-down cake, pumpkin pie made with evaporated skim milk and egg whites, and numerous fruit creations.

Schlesinger sticks with naturally lowfat ingredients as much as possible and offers dietary information with every recipe.

In small leters in the introduction, the author explains this collectionwas developed for her husband who suffered from heart disease. They followthe Ornish program for heart reversal, which is basically low-fat,lacto-ovarian fare.The heart disease people, vegetarians, or those afterbetter health/weight loss in general will appreciate this effort but thosewho do not know what "Ornish" means or those who skip the prefacewill be surprised that it's vegetarian and "no meat." Thosewishing "meat-y" yet low-fat might be better off with one of SueSpitler or Sandra Woodruff's books.

There is no space/some small space inthe margins for notes although there is nutritional info. There are somevegan or vegan-friendly variations, but you have to hunt and pick.It'seasier to adapt to L/O than vegan -- it's usually right there in thevariation (ex: "use chicken broth or vegetable broth").

Thereweren't any overly exotic ingredients to me but the introduction does goover the ingredients used and explains what they are. That would be usefulfor cooking novices.

Some of the combinations are a little odd. Sometimes this works great and it's refreshing, other times it leaves meshort of expectations. There is however, a consistancy of style across therecipes, and it's not bad if you want to be adventurous. I'd consider thismore a "supplemental" cookbook rather than a "hardcoremainstay" one in my cookbook collection.

Overall, it's a nicecollection, but not necessarily my favorite one when I was l/o and now thatI am vegan I rarely use it. I didn't think it was so great that I wantedthe other cookbooks she wrote later but who knows? Maybe those improved. ... Read more

Having recently relocated to San Antonio and finding a lack of bakeries, I purchased a Cuisinart convection breadmaker. Although the Cuisinart CBK-200 comes with a decent set of recipes, many are laden with fat (with 30% or more of calories coming from added oil, butter, nuts, etc.) and sugars. I try to eliminate oils, fats, sugar and salt from my diet, so I was looking for a healthier alternative to home breadmaking.

Enter The Best Low-Fat, No-Sugar Bread Machine Cookbook. Added fats have been replaced by lean, fruit- and veggie-based alternatives such as unsweetened apple butter, applesauce, minced prunes, and mashed sweet and white potatoes. Sugars such as molasses and honey are replaced by dried fruits (raisins, currants, cherries). Sun-dried tomatoes, zucchini, corn, carrots, kale, and onions are among the many veggies that make a guest appearance.

Although I was doubtful that these healthy, lean (less than 5% calories from fat) breads would be tasty, I have tried three loaves thus far and all were sensational. My first loaf was the Butternut Squash and Balsamic Vinegar loaf (page 51). I substituted canned pumpkin for the squash and dried cherries for the raisins, and the loaf was pleasantly sweet, with an orange color but not an overwhelmingly pumpkin-y taste.

My second loaf was a breakfast bread (Oat and Raisin Bread, page 35). Although I only made a one-pound loaf, the bread was so light and airy that it was nearly as big as a large loaf. Both the Butternut Squash and Oat and Raisin bread are delicious toasted in the morning.

My third loaf was made to accompany soups: lentil bread, with a hearty helping of cooked lentils and Mediterranean flavors courtesy of sage and sea salt. Denser than the first two breads I baked, the lentil bread is a savory, hearty accompaniment to soups and sandwiches.

Although one reviewer mentioned a disasterous loaf of zucchini bread, I am brand new to breadmaking (my first loaf ever was from this cookbook) and have had nothing but success. It's important to add ingredients in the order recommended by your breadmaker: usually liquids first (at room temperature, except for water, which should be between 80-90 degrees), then flours and seasonings, and finally the yeast. The directions are straightforward and easy to follow. Several breads require finishing in the oven (low-fat challah, whole wheat baguettes, pitas). Besides low-fat, no sugar added recipes, the book also includes a chapter on salt-free breads (but not gluten-free).

The Best Low-Fat, No-Sugar Bread Machine Cookbook Ever truly lives up to its name. Although over ten years old, the recipes work beautifully with my brand new, circa 2006 bread machine. Thankfully, the ingredients are fairly common, with some alternative grains and flours (amaranth, quinoa, barley, rye) called for to add variety. I highly recommend this book for anyone who loves bread but is looking to lighten up on refined sugars, oils, and salt; these recipes offer all of the taste with none of the guilt. ... Read more

I may soon be able to contradict my favorite coffee mug that sports the message "Skinny cooks can't be trusted."In "Fat-Free Holiday Recipes" I bought through Amazon, Sandra Woodruff, RD, did a fabulous job of creating good-tasting, fat-free replicas of unhealthy foods that have made our holidays "special" most of our lives.She offers menus, with easy to follow recipes that include basic nutritional information, clearly delineated.Best of all the ingredients resemble cooking instead of "lab experiments" that call for expensive, exotic ingredients my grocer never heard of.(I'd rather spend my time cooking and eating delicious food that searching far and wide for eye of newt that "makes all the difference.")John Winchek's very droll illustrations had me chuckling right away but John Strange's photography had me visibly drooling down my chin and checking for ingredients without delay.Some cookbooks are "great literature," but this one is also a superb guide to help stave-off "deprivation" 365 days per year, no matter what "the doctor orders."
