This book has some decent flavorful recipes but should not be confused with cholesterol-free cooking. It is far from that. It often uses buttermilk, lobster, shrimp and meats.

I had this book, gave it away in a generous moment.After borrowing it from the library, I've decided I need a copy to keep. The reasons why: the food is original, flavorful; the preparation ranges from easy to moderate; the ingredients can be had in just about any supermarket; it is healthful, but you'd never know it.The turnip gratin is outstanding--I've served it and other recipes from this book to guests.It makes very simple substitutions for fat--buttermilk is used frequently.Corn syrup is used to maintain texture in some of the baked confections.

Why it merits 4, not 5, stars:There are only 125 recipes and the only nutritional data offered is the fat gram count.

I had mixed feelings about this cookbook. I am going to hang on to my copy for a while and see if I ever use it. Here is what I think.

First the positive:
The recipes are very yummy. They turn out wonderful. They have reasonable serving sizes that are low in fat. The pictures are gorgeous.

These are the types of recipes that you want to cook to impress someone when time and effort are no bother. You can fluff your hair and say, "yes, I made it from scratch and it's low in fat too"!

The negatives:
Each recipe is a lot of work. These are the types of recipes a budding gourmet cook might want to make. They are time consuming and use a lot of ingredients that is not always on hand (shrimp, lime juice, fresh herbs etc). Low fat cooking should not be so hard.

IF you want to really impress someone with a yummy dish and don't care about how much time and effort it takes, this is the book to get. However, I think for the one or two meals that you might be doing this- it's easier to just forget about the low fat part and go with some high fat easy to cook wonderful meal.

5-0 out of 5 stars IT REALLY IS FAT-FREE AND EASY....TASTES GOOD TOO
My husband needed a quadruple by-pass.His kidneys started to give him a problem before he could have the surgery and the surgery was delayed.We heard about and bought and read the book "Prevent and Reverse Heart Disease" by, Caldwell B. Esselstyn, Jr., M.D.. Dr. Esselstyn and his wife "Ann Crile Esselstyn" suggested "Fat-Free and Easy" as a good book for fat-free recipes as well as the recipes in his own book.We have been cooking these easy and delicious recipes from Dr. Esselstys' book and from "Fat-Free and Easy" for the past four months. My husband has improved so much that a Stress Test and an Echocardiogram he had taken last Friday showed a big improvement in his health. His Total Cholesterol went from 166 to 108.His cardiologist and surgeon have decided that he should continue with the program he is following and they will check him again in six months.If he is doing as well, then, as he is right now he may not need the surgery.By the way, my husband is 80 years young. Oh, and his kidney are back to normal.
We couldn't have done all this without the wonderful recipes in "Fat-Free and Easy" that taught us a whole new way to cook and enjoy our meals. Thanks also to "Jennifer Raymond" the author of "Fat-Free and Easy.Smart Lady!

This small, compact easy to read vegan cookbook is wonderful and the recipes have no added fat. This is a very hard to find combination in a vegan cookbook.I especially love the berry cobbler recipe and make it over and over again varying the fruit.My husband and family love it and it is sooo easy to make...The whole wheat pancackes are simple, and delicious.My 3 year old granddaughter loves them.What I like about all of her recipes, besides the fact they contain no added fat, is the simplicity of ingredients and preparation.I keep this little book right next to my stove and use it frequently.A must have for any vegan cook who is fat conscious.

I love this book! The recipe for oatmeal waffles is outstanding. I purchased Fat Free and Easy in 2001 and it has remained one of the most heavily used cooking references in my collection. It is definitely worth the money. Bravo, Ms. Raymond!

I brought this book a year ago and I finally tried some of the recipes. What I found was great tasting food,fewer calories, and just about no fat. I found some dishes exotic as well as simple. My only disappointment iswhen it show how much was taken in, nothing show the amount/% of sugar. Tome sugar is almost as bad as fat. Besides that I'm thrilled about this bookand what it has done for me!

In "The Secrets of Fat-Free Kosher Cooking", Deborah Bernstein, M.D. provides us with a large variety of mouth watering, lowfat recipes which essentially are quite simple to assemble. In addition, the authorclearly explains all recipes while giving the reader background informationand amusing stories, relating to the importance of the recipe, and whichalso bring balance to the wonderful illustrations. Among other timelytidbits, the reader will also learn about the laws of Kashrus. Im a newlywed, and my wife and I love this cookbook!It provides usefull recipes for food which we should eat, provided in a clear straightforward manner which is easy to follow. And all this within our kosher paramenters. Even more important, every recipe we tried we loved! I reccomend ithighly to everyone! And oh yes my Bubie (jewish grandmother) loved ittoo!

"Secrets Of Fat Free Kosher Cooking" is an incredibly unique cook book.It's well written and arranged.Each page includes easy to follow illustrations and prepartion directions.Whether you are anexperienced cook, or just starting out you can be successful with therecipes.I like the fact that the ingredients and directionsare on thesame page.The book includes metric conversion tables, not to mentionfacts related to nutrition and healthy eating.

The book is full oftraditional recipes...chicken soup, matzoh balls, guiltfree hamentaschen,latkes, kugels, cholent...and much more.On the comtemporary side I found,tex mex cholent, buffalo wings, chili, burritos, chocolate chipcookies....there is something for everyone in this book.

I showed thisbook to my dentist, at the time he was doing the family cooking.He askedif he could take the book home and try some of the recipes.I said sure. The follow week he told me he was ordering three books.One for himself,one for his rabbi, and for the temple library.But...could he keep my copyuntil his recieved his.

This is a good cook book for people who are wanting to cut their fat intake.I bought this book in 1997, and after using the recipes in this book, along with some other low-fat cookbooks that I had at the time, I managed to lose a decent amount of weight and get healthier.The recipes are good, my kids even liked them.Some of the nice features in this book are that each recipe has a shopping list at the bottom of the page, it includes diabetic exchanges, and the book even includes a 14-day menu plan.I used that plan for the times when I was trying something new and wasn't quite sure what I should serve with it.All in all, I'm happy with it, and I still use many of the recipes in this book 7 years later.

I have a lot of cookbooks, but this one will remain a favorite.With several in my family that have food allergies and intolerances, Cooking Free has enabled me to provide them their favorite foods using alternative recipes for homemade bread, cookies, pastries, soups, even whole meals.I recommend this book to all who find that they too need to replace wheat, dairy, eggs or other ingredients in their diets.

It is a joy once again to have a dish to share, that we can eat, and yet be good enough to bring to pot-lucks or parties.The no-gluten desserts and breads have been such a hit.

I bought this book for neices and nephews (10, 12 and 7 years old) who were diagnosed with gluten and diary issues. The flour blend allowed them to stretch their wings. They made Basic Chocolate Cake and Chocolate Brownies without much guidance. They will be using this book as a reference book. An easy book to use.

I love this book--not only are the recipes great, but in the back it talks about the "whys" and "hows" of substituting ingredients and the chemistry of cooking. Most of the recipes have options for eggs OR eggless, etc. I love this cookbook and so do all my in-laws with allergies!!

5-0 out of 5 stars Great for those with multiple sensitivities
I am gluten-dairy-egg-and-sugar-free (among other things), so finding this book was like a godsend. Many recipes have been fantastic. The Foccacia is my current favorite. However, many of her recipes use soy - pureed tofu for example, to replace eggs. In those cases, since I am avoiding soy, I simply use my own egg-replacement - ground flax mixed with hot or boiling water (1T flax to 3T water = 1 egg), and it has worked for me. She also tends to use "fructose granules" instead of sugar, which I have been hesitant to try, since I am used to non-refined sugars only, this one sounds refined to me. It is difficult to find other dry sugar replacements so when I replace with agave or honey (using her instructions of using 3/4 the amount AND reducing other liquid in the recipe), it still comes out too moist. I still love this book though, and highly recommend it. Another great book that is very similar is "Whole Life Nutrition" by Alissa Segersten and Tom Malterre - mostly gluten, dairy, egg & refined-sugar free also - as well as their wonderful blog, [...]. ... This book has over 120 heart healthy, delicious recipes for vegans and non-vegans alike! Let me get this out of the way...my absolute, hands down, favorite recipe in this book: "Linguine With Spicy Red Garbanzo Sauce". The simplicity of the healthful ingredients was a real shock to me. I figured ok, another spaghetti recipe...It is so much more. Serve it with some "Cheezy Garlic Bread" and a spinach salad topped with "Tomato-Garlic Dressing". Do your palate and your heart a favor...With a mere 21 calories and 0 fat, this dressing packs a punch! Of course if you've been missing ranch, there is the "Classic Ranch Dressing" to try as well...so creamy! The "Moroccan CousCous" is authentic and tasty. I love it! "Garlic Infused Smashed Potatoes" are heavenly when smothered in "Golden Gravy". It almost seems wrong that there is 0 guilt associated with these dishes! Looking for breakfast? Try what is (in my opionion) a vegan's best friend...flax! The "Flaxjacks" on page 40 are a tasty way to start your day right. I like to top them with "Peanut Whip" instead of jam. "Tropical Style Museli" is filling and healthful, I love it with a dash of vanilla rice milk.
Of course there are too many recipes to review them all here, but I always save room for dessert...in this book namely the "Apple Crisp". Simple, traditional and stunning...a real crowd-pleasing crisp.

I recently purchased this book for my father who was diagnosed with high blood pressure and cholesterol.He's a pretty dedicated meat eater, but he's loved all of the recipes he's tried from this book!I especially like the menu plan--it gives me great ideas for deciding on my weekly menu.Some of my favorite recipes include Buckwheat Banana Pancakes, Cream of Broccoli Chowder and Fennel with Italian Style Tofu Steaks.The addition of flax to a number of the recipes is also appreciated.This book is a must for any Joanne-fan and is a great intro to heart-healthy compassion eating!

I ordered this mistakenly thinking it was a cookbook for one- but it is not bad, but not great. A very rudamentary cook book. Be advised the "low fat" recipes are scattered throught (and highlighted), sonot all are 'heart healthy'....(one has mayo as the main ingredient). Withall the other cookbooks out there, I would recommend 365 Easy One-DishMeals by Marie Haughton and Natalie H. Haughton...much better layout.... Idon't think the paperback spine layout of this book made it easy in thekitchen....nor did it list ingredients well (don't tell me "1 cup ofmilk" and then in another part of the recipe tell me about ANOTHER"1/2 cup of milk".

I will keep this cookbook as a reference,but not as a day to day....many of the recipes I have seen elsewhere, andeasier to use/read/reference.... Save your time and hassle- go buy 365 EasyOne-Dish Meals(not trying to plug it, just like it so much better...)

I've made about a dozen of these recipes and they have been well received by the family. I really like the index that allows me to look up ingredients I have in the house and find all receipes that use that ingredient. Love the one-dish ease of the recipes. Only complaint is that many of the dishes are very similar, with only a small change in ingredients. Well worth the money.

I've had trouble with several of the recipies from this book, and have hardly started trying all 500. I get the impression that only some were tested, and others were derived. some successfully and some not.

Theother knock is that quite a few of the recipies seem to rely on largequantities of pepper for their seasoning, or are otherwise quite bland.More creative seasoning would be good.

Still, the concept is solid, andthe counts are very useful, so the recipies can be used as a startingpoint.
