Beef brisket is the traditional main dish for Nathan's Hanukkah dinner. My Favorite Brisket, from her cookbook "Jewish Cooking In America" (Alfred A. Knopf, Inc., 1998), redolent with red wine, herbs, onion and garlic is, well, her favorite. She says brisket is "comfort food, extremely favorable. Everyone enjoys it even the fanciest people love it." Why? Because of the bold beef taste enhanced by the ingredients that simmer along with it. As a bonus, it's easy to prepare and makes enough to feed a large holiday gathering. Nathan cooks brisket in advance, then chills it overnight in the refrigerator. The flavor is at its best, she says, when it's made ahead. To serve, she skims the fat, slices the brisket and then reheats it along with the cooking liquid which doubles as a sauce. What to serve with brisket? Crispy Potato Pancakes are the traditional favorites for Nathan's family.

It's a celebration of religious freedom, but also a celebration of oil and the miracle that provided light for the Jews for eight days instead of just one. It is the oil, not the commonly eaten potato latkes (pancakes) or soufganiyot (jelly doughnuts) that is symbolic at this celebration of freedom and festival of lights. The Importance of Oil Celebrating oil as a symbol of religious freedom dates back only twenty-two centuries, to 165 B.C., just after the Syrians had raided and damaged the Temple in Jerusalem. The Maccabees, the small Jewish army that had miraculously defeated the large Syrian one, returned to the Temple to repair it. According to the traditional story of Hanukkah, the Maccabees found only enough sacred oil, olive oil specifically, to light the menorah for one day. But, somehow, one day's oil supply lasted eight, and thus the oil is now symbolic of the cleansing and rededication of the Temple in Jerusalem. Hanukkah is celebrated for eight nights to commemorate this miracle.

When the Maccabees, as these freedom fighters were called, went to rekindle the holy light in their Great Temple, they found only enough oil to burn for a single night. A messenger was dispatched to a distant city to fetch more holy oil, but he was not expected to return for a week.

The oil miraculously lasted for eight days and nights. Lighting a menorah, playing with dreidels and eating potato pancakes and donuts are traditional ways to commemorate the miracle of Hanukkah. Every night, Jews light a candle on a nine-branched menorah. People light one candle on the first night and an additional candle each following night. Fried foods like potato pancakes (latkes) and doughnuts are special treats this time of year. Parents give presents or traditionally coins and nuts to children. Swiss chard is available year-round but it's at its best during the summer. Select chard that has tender greens and crisp stalks. Chard is a good source of vitamins A and C as well as iron, and can be prepared like spinach.

I said that I was making brisket, but would give them something else. "Oh, but we eat brisket!" she exclaimed. Almost everyone likes brisket. It is the perfect comfort food: fragrant, flavorful, and if you cook it right, fork tender. (I always have one on hand in the freezer.) In Eastern European Jewish homes, brisket was reserved for special occasions like weddings. In Texas, barbecue brisket is everyday food. A versatile cut, brisket can be simmered as a pot roast on top of the stove or cured and used for corned beef and pastrami. Brisket is the Zelig of the kitchen. It takes on the character of whoever cooks it. In the early part of the 20th century, when "The Settlement Cook Book" reigned supreme in American Jewish households, recipes for savory briskets of beef with sauerkraut, cabbage or lima beans were the norm. As tastes became more exotic, cranberry or barbecue sauce, root beer, lemonade and even sake worked their way into recipes. "My mother always sent me to New York with a huge brisket with gravy frozen in," recalled Eli N. Evans, the author of "The Provincials," who was born in North Carolina.

Lightly spray an oven-proof covered roasting pan with cooking spray. Brown the roast on all sides over medium-high heat. Surround the roast with the onion and garlic. Add the whole clove, bay leaves, thyme, carrot, celery, and beef broth. Bring to a simmer on top of the stove. Cover and place pan in the oven. Roast until the beef is fork tender, about 3 1/2 hours. Remove the roast and let stand on a carving board, covered with a sheet of aluminum foil for 15 minutes before slicing. Transfer the vegetables and pan juices to a large strainer; discard the clove and bay leaves. Using the back of a large spoon, force the vegetables through the strainer to thicken the pan juices to make a gravy. Remember to incorporate the brown caramel colored bits around the sides of the roaster. Remove and discard any visible fat. Place the gravy in a saucepan and heat, stirring until thickened and smooth. Season to taste with pepper. To serve, slice the pot roast into thin slices against the grain and nap with the gravy.

"Because the Jewish calendar is lunar, each month has 29 or 30 days," said Cantor Maurice Singer of Adas Israel Congregation in Washington, D.C. "The solar, or Gregorian, calendar has 30 or 31 days." In order to catch up, the cantor said, instead of a leap year with one extra day, we have a leap month every few years.
