5-0 out of 5 stars almost every spicy dish I tried in this book was quite good
"The Hot and Spicy Cookbook red hot and sizzling dishes from Around the World"by Linda Fraser (2003) is a version that was published in 1991 that I picked up (this was hard cover version) for sale for relativley cheap ($6 and on sale). It has interesting recipes within its 256 pages. The step-by-step techniques along with the photos are really well done. The latest (p.148) Coleslaw in Triple- hot dressing was 8.9/10. I tried wasabi horsedish instead of regular and added some miracle whip salad dressing. It was fine not spectacular. But I have tried others in this book.
Cheddar and Jalapeno Quesadillas rated 9.6/10, while the San Franisco Chicken Wings which included Rice vinegar and orange peel were awseome (9.6/10)/ Spicy potato salad rated well (9.6/10 ). There are a lot more appetizers, ethnic entrees and more that look really good and I will try. If you like spicy foods look at this book and see what you think. ... Read more

Product Description
The long-awaited companion to The Green Chile Bible, this vibrant collection of rich red chilli recipes celebrates the blending of historic Spanish, Indian, and western frontier traditions in southwestern cookery, and explores some of the best European and Asian contributions to the latest Southwest 'fusion' style. The Red Chile Bible caters to the desires of every chilli cook -- from the passion for finding new ways to cook with chilli to the ambition to achieve the ultimate classic salsa. It covers the gamut of Southwest styles from the traditional to contemporary, from down-home rustic to unashamedly elegant, from comfortably mellow to fiery hot. Reflecting the modern cook's commitment to natural flavours and healthy foods, The Red Chile Bible emphasises fresh ingredients and dishes 'made from scratch' but the authors have also suggested shortcuts and substitute ingredients to save preparation time, without sacrificing quality or flavour.Providing important practical help for the novice chilli cook, the authors give complete information on the major southwestern and Mexican red chillies, along with tips on buying, storing, and handling fresh, dried, crushed, and powdered red chillies. A glossary and a list of sources are included. ... Read more

1-0 out of 5 stars not good
The book was fine and made a great gift.Amazon screwed up not only the order by the credit back to my account.

3-0 out of 5 stars Agh, my eyes
This book definitely focuses more on the "gourmet" side of things, so you won't find too many of the recipes you've come to know and love from that tin shack truck stop off the dirt road in Chimayo. There are still some gems in here, but my single biggest complaint has to be about the fact that the entire thing is printed in red ink. Not dark red, either; bright, vibrant, difficult-to-keep-your-eyes-on-the-page red. I'm sure somebody thought it would be a cute gimmick, but it wears off instantly.

5-0 out of 5 stars I think that this book is a gem among modern cookbooks.
The red chile bible has brought the exciting red chile into my life and I am very grateful to the authors for creating such a masterpiece! I would recommend this bible to beginners and aficionados alike. ... Read more

4-0 out of 5 stars A great book for the well educated chile-enthusiast!
Having traveled quite a bit in my life I've noticed how cultures all around the world prize their locally grown chile peppers. From India to Africa and from China to Cuba, they all have chile peppers that they believe are the best in the world.I am not sure that most people (even those in the afore mentioned countries with the expection of Cuba) realize that chiles are a new world agricultural find.Columbus brought them back to Spain then the Spanish and the Portuguese spread them across the globe.

I have read several books about the history of capsicum (the botanical word for the family) but none that went into as much detail as this one did.At times I felt that the author spent too much time with the minute details of where particular species of capsicum came from and where and when they arrived in other parts of the world. However, for the chile enthusiast who wants to know it all this is a very well researched book.

As always, I am dissappointed when a book like this one does not use photographs. The Pepper Trail does have some drawings and graphics but I would like it better if there were some photos of the peppers and of the dishes that were included in the recipe section. All in all I enjoyed this book and give it 4 stars. ... Product Description
In more than 100 recipes, "Peppers Peppers Peppers" offers an eclectic mix of sweet and spicy with traditional and contemporary. A colorful celebration of the versatile pepper, Marlene Spieler's recipes are innovative and straightforward - few have more than a handful of ingredients. From the fiery hot Thai chile pepper to the mildly sweet and familiar red bell pepper, this cookbook accommodates all tastes with recipes originating in North America, the Mediterranean, the Far East, India, the African continent, the Caribbean and Eastern Europe. Opening with a history of the pepper's "discovery" by Columbus and its subsequent introduction to European cooking , "Peppers Peppers Peppers" includes:

* extensive information on how to grow, store and dry peppers* roasting and preserving peppers* a directory of peppers listing all varieties of fresh sweet and chile peppers* how to cook with - and safely eat - hot peppers* buying and preparing bottled, pickled and powdered peppers* recommendations of what to drink with pepper dishes* A World Guide to Chiles map* mail-order sources of exotic pepper varieties* spiciness ratings of the more fiery dishes

The recipes include soups, appetizers, salads, poultry, meat, fish, sandwiches, pastries and accompaniments. From the opening Louisiana Mixed Pepper Gumbo, Apache Soup and Yellow Pepper Soup with Pistou to the closing New Mexican Style Chile-Braised Beef, Bayou Gnocchi, Thai Mango, Papaya & Chile Relish and Provencal Red Pepper Mustard, cooks of all experience levels will find inspiration here. All of the recipes are fundamentally simple to execute: Orzo with Roasted Chiles, Chile-Lime Butter and Grated Cheese takes just 25 minutes; Moroccan Pepper and Tomato Soup, 25 minutes; Garlic-Roasted Monkfish with Peppers and Saffron Cream or Red Pepper and Tomato Souffle, 40 to 50 minutes. From simple, fresh salsas to rich, creamy stews - the pepper is one of the most accommodating staples of the kitchen.

Marlena Spieler is a respected and well-known food writer and broadcaster based in London and San Francisco. 1-0 out of 5 stars Cooking in the Nude is nothing more than a misleading title
I ordered this book with high expectations which were quickly dispelled after opening the book.I guess the title is justified by a mild twist on words(ie. "Appeteaser") becuase I find no other reason for it.However, the fact that this piece of garbage(which I returned so minus one of those) has sold over 400, 000 copies has motivated me to wrie my own book.Thanks.

5-0 out of 5 stars A note on safety
Sure, cook in the nude.Just wear an apron if you are working with hot grease.Be well. ... Read more
