I love Mexican cuisine, but this book is a decidedly mediocre offering in the genre.

Strengths:
* Lavishly stocked with full color photos (typical for Hermes House books, which seem to emphasize photos over substance)
* Most recipes have helpful head notes.
* Easy to read instructions and lists of ingredients.
* Decent, if unspectacular, overview of ingredients.

Complaints:
* POORLY ORGANIZED:Aside from a very top-level chapter grouping (by course/subject), recipes appear within any given section without any discernable order whatsoever - alphabetical or otherwise.Whoever was SUPPOSED to edit this book for the publisher should have their gender organs removed, cross-scored with a sharp knife, lightly dredged in generously salted flour, deep fried, and then served back to them, garnished with a freshly made spicy tomatillo sauce.

* ANEMIC HEAD NOTES:While present for most recipes, they're too anemic for my preference.

Overall, this is an adequate introductory book on ingredients and basic recipes typical in Mexican cuisine.However, more serious readers are referred to more substantial, in-depth, competent and inspired works by say, people like Rick Bayless.

This is a super cookbook -- it lies nicely when you lay it out to cook, the photos are large and in color, the instruction is detailed and simple and, most importantly, the recipes are first-class. I have never written a review of a cookbook, but I just received a copy of this excellent book. I get many cookbooks as gifts- primarily from my kids. This is the best cookbook I have ever received.I have been fortunate to have eaten at Dona Tomas in Oakland which is one of the many reasons I was interested in this book. Another aspect is the excellent review the book received in the LA TImes.

This is not the typical burrito and taco cookbook. The book covers the finer types of good tasting Mexican food for all meals of the day. There are no greasy or bland recipes in this book. This book brings tasty flavorful Mexican cooking to a really high level. This is the book to get if you like flavors!

The first thing that stood out for me is that, while lots of other cookbooks cover extremely complicated recipes that require a great deal of time to prepare, the vast majority of the recipes are quite simple to prepare, because they capitalize on the texture, and the balance of flavors in the ingrediants.

I finally found out the key to a simple item - "Toasted Pumpkin Seeds" and the different types of sauces, such as "Poblano Cream", to add to main dishes.Each recipe really is a piece unto itself.

Next one up for me this weekend is "Callos Con Calabaza"(sea scallops with butternut squash,chilies, and onions).

This is a perfect cookbook!Not only are the recipes mouthwateringlydelicious, they are simple and easy to prepare.The ingredient lists arefairly short and readily available at the neighborhood market.Many of thedishes take under 20 minutes to prepare.

Beyond the recipes themselves,the book contains some great reference information.There's a terrificillustrated guide to peppers, a glossary of mexican spices, and helpfulhints for general cooking are scattered throughout the book.

This is anamazing value!If you're interested in low fat / high flavor cooking snapthis one up!

I purchased this book along with the Italian and Indian versions. I have to reserve the Italian and Indian versions, but if they are anything like this then I am not going to be very well-pleased. Most of the recipes this book contains are not very authentic or Mexican at all. The only thing that struck my attention were the homemade salad dressings, macaroni and cheese, and broiled cheese sandwiches. I probably will not be using this book in the kitchen much as it does not appeal to me. I would not bother purchasing this book if I were you, search for something fullo f moreauthentic Mexican cuisine! If you find one then please tell me! :-)

First, this isn't vegan at all for anyone preferring that.Nor is this a healthy cookbook instead using lots of butter, sour cream, mayo, canned mushroom soup... in many of the recipes. Not exactly a Mexican cookbook but many of the recipes are authentic and/or adapted to American tastes. We have a lot of experience eating and cooking authentic Mexican and thoroughly enjoyed the style of recipe in this book. Very creative and hearty recipes from Mexican-American communities all over the U.S. that represent Mexican communities all over Mexico. There are recipes for Pork Chile Verde and Chiles Con Queso plus a lot of novel things that use Mexican and American ingredients to create an undoubtedly Mexican flavor.

It is a true, authentic Mexican-AMERICAN cookbook. This is what is really happening in the kitchens of Mexican immigrants all across the United States. If you are looking for an authentic Mexican cookbook you have come to the wrong place...this is a Mexican-American cookbook. (try anything by Diana Kennedy for Mexican) But I love it because it really captures the dance of two cultures that occurs in an immigrant's kitchen.

I bought this after seeing Scott on the "Today Show", where he cooked his Mexican twist on French Toast.The cookbook does NOT disappoint!The recipes are interesting variations on classics.There are detailed instructions will lots of photographs.I am in LOVE with this cookbook!

This is a great cookbook for Mexican food lovers.It is simple to follow and has great illustrations. Of course, I am a little predjudiced!Be careful with the chiles, though.I'm a little wimpy soI had to cut down the amount on some recipes!

I had the pleasure of attending a Scott Linquist cooking demo and one of the things made was guacamole. Now guacamole is how I judge a Mexican restaurant. The quality of the guacamole, usually reflects the quality of the rest of the menu. Needless to say I have tasted a lot of guacamole and was prepared to be unimpressed but I have to tell you it was the best guacamole I have ever tasted. On the strength of this alone I bought a copy of his cookbook Mod Mex half expecting the recipes to be intricate and complicated. I was pleasantly surprised to find not only clear easy to follow recipes but also loads of step by step pictures showing the techniques key to making each dish such as how to wrap a tamale properly.

If you love Mexican food this is a great addition to your collection both for it's fresh modern take on classic recipes but also it's detailed pictures of the proper way to prepare them. ... Read more

I found this cookbook at the airport in Phoenix and bought it on a whim, the recipes looked good, but no pictures!It is as great for the recipes as it is for the "side bar" stories and historical information.I worked as a hostess at a Mexican restaurant in Phoenix while I was in college.This food is the real thing- carnitas, red sauce, beans, sonora enchiladas, fish veracruz.If you like to "read" cookbooks as well as cook with them, you will love this book.

It's okay, but missing a couple huge areas--hominy (both white and yellow)and black beans. I can't imagine chile without either or both. Much less Mexican soups. Sort of why I bought the book in the first place. Also needs expansion in prickly pear cleaning and uses, and pretty thin in chili pepper ID. So I was disappointed. There are some goodies, and could help people in other parts of the country learn a bit about what goes on here in the Southwest.

I absolutely love this cookbook.Everything we've made from it has just been delicious!We've had it for going on three years now and I don't even think twice about making my own chile powder or enchilada sauces now.I love the regional variations that allow you to take one dish and make it New Mexican or Texan or however you want to make it!Everything is well researched, it's almost like a story book with recipes inserted.Definitely recommended to anyone who enjoys Mexican and Southwestern cooking!

An excellent cookbook.Well researched and the recipes all work.I especially enjoyed that there were recipes that are usually hard to find such as Horchata and Diablo Shrimp.I would have given it 5 stars but I think that some pictures of the food would have helped.I guess we get spoiled in today's world by various cookbooks and magazines that inspire us to try a recipe because it looks so delicious in a photo.I would recommend it based on the quality of the recipes though.

Learn the spice rubs-"recados," a panoply of salsas and the artof simple grilling for sumptuous results.

Gorgeous pictures, big format,inspiring recipes -- you'll want to dive in immediately.

This is the realdeal. If you're already an experienced cook and you know that most of theMexican food served in the US is bogus, then you'll really appreciate thisbook.

My only caveat is that I wish Mr. Hearon got a little moretechnical in terms of the cooking techniques. I also wish that he wouldhave illustrated the many varieties of peppers and herbs he cites for easyidentification.

If you love to cook with spices and herbs, and are intogrilling artistry, this is a must-have!

Sombrero's off to Reed Hearon! The contents of this book can not even describe the wonderful flavors that are produced when you taste some of the recipes that are presented in this handy little cookbook. Some of the styles of marinading and blending of different spices and chiles have to be tasted to be believed! One of my favorites turned out to be the Chipotle Rub,which I have been using on everything. On the down side I wish Mr. Hearon would have labeled all of his wonderful pictures.Many times I looked at the photos and wondered if thats what I was making.I could say that the author was a little vague on the equipment and instructions on some things. I know I have cursed Reed for wasting a bunch of my Chipotle peppers because I didnt understand how to fry them. If Mr. Hearon writes another cookbook on mexican with the same style and content as La Parilla I will be first in line for it!!Thanks for the experience! ... Read more

The market is getting crowded with cookbooks featuring light or low-fat Mexican recipes; I love Mexican food and have been trying to eat more healthfully, so I'm very happy with this turn of events."The Ultimate Low-Fat Mexican Cookbook" was one of the first of this genre, published in 1995.Some of these cookbooks in this area simply exchange low-fat ingredients (e.g., non-fat cheese) for the original high fat ingredient, which usually sacrifices a great deal of flavor and leads to bland Mexican food.This book focuses instead on some of the more naturally light Mexican-style foods, such as those using chicken or vegetables.A wide variety of recipes are covered, including appetizers, salsas and dips, salads, soups, chili, main dishes, and desserts.

Although the cookbook is in the Mexican food genre, the focus truly is on Southwestern cooking.For example, the "Corn & Green Chili Spoonbread," although delicious, is hardly something typically prepared in Mexico.However, serve it alongside some grilled chicken, and you have a terrific, light Southwestern meal.I've thoroughly enjoyed the recipes I've made from this cookbook.They strike me as very refreshing, often incorporating lime juice and fresh vegetables.The "Chicken Lime Soup" is a great example - one of the brightest tasting recipes I've made in awhile, and with only 8 grams of fat.

The recipes include nutritional information, but only fat grams and calories.Some call for canned ingredients (e.g., chicken broth, diced green chilies), so it would have been helpful to have sodium content listed in particular.However, this weakness is small compared to the overall quality of the cookbook."The Ultimate Low-Fat Mexican Cookbook" was deservedly a nominee for the prestigious James Beard Awards - the cookbook equivalent of the Oscars.Although time has dulled the novelty of a low-fat Mexican cookbook, this one is still a winner.

I've been using this cookbook for 20 years and it is one of my favorites!The cookbook is comprehensive and it uses ingredients that I can find.A friend of mine had us over for dinner recently; she cooks this cuisine a lot since her husband is Mexican, and lo and behold, she pulled out the same cookbook.We are both big fans.

I've used and abused this book so much that it's falling to pieces. I purchased it in the mid-80's while living overseas on a military base, and I think I've made at least one item from every page many times. During a recent trip to Mexico, my husband and I were delighted (and a tad disappointed, really) that my tamales were better than the ones in the upscale hotel we stayed in (as if I can actually take any credit for the recipe - ha!).

If you get this book for no other reason than to make your own chorizo (to add to chorizo, potato and eggs, of course), then it's well worth the small investment. Best. Mexican. Cookbook. Ever.

I looked for a long time for a Mexican cookbook with the recipes for my favorite foods - cheese enchiladas, chile rellenos, tamales, burritos, tacos, etc.Most Mexican cookbooks have a bunch of weird recipes for stuffI never heard of, but this cookbook has the really good recipes that I waslooking for.They turn out wonderful, plus the author has little Mexicansayings and extra tidbits at the bottoms of some of the pages.I recommendthis book!
