I've been smoking for about 6 months. I already have the "Smoke and Spice" and "Backyard BBQ" books.

This book is a mixed bag.

On the plus side, the recipes are truly adventurous - smoked venison carpaccio with baby frisee and red oak salad with maple soy vinaigrette anyone?

However, there are problems:
- the book is aimed at Cookshack owners.It's not an insurmountable problem for those comfortable with smokers, but it's irritating.
- the recipes don't offer much in terms of explanation (such as Smoke and Spice does). For example the "Smoked Steaks" says ingredients 1&1/4" steaks.The recipe is smoke at 240 for 1 hour.That's it!
- it feels at times to be a catering book in terms of the recipe sizes: Pulled Pork BBQ = 40lb boneless pork butt!!!
- the recipes don't do much in terms of explaining what to look for or substitutions (again, such as Smoke and Spice). It's very mechanical = take this do that.
- a small portion of the recipes aren't even smoker recipes.

So here's the deal:
- if you own a Cookshack smoker, add a star.
- if you're an experienced smoker looking for different recipes, or willing to experiment a bit, then 3 stars.
- if you're looking for handholding or discussion (like Smoke and Spice) subtract a star.

I ordered this book hoping to find some good recipes for BBQing but instead I found a book that would you give part of the recipe and then you need the secret ingredient, cookshack's rib rub.Most of the recipes require you to order different types of rubs from cookshack instead of giving you the information needed to make the rub.

I purchased a Cookshack smoker over 5 years ago and have experimented with it off and on.While I realize that barbeque is more art than science, I have been frustrated by the lack of information on just how much wood to use with particular recipes.I pre-ordered this book in anticipation of learning some secrets and tricks in the use of the Cookshack smoker.I waited for more than a month for delivery of the book and upon receipt of it, I eagerly delved into it looking for answers to my many questions.To my great disappointment, this book offered absolutely no information that I hadn't learned from trial and error.How much wood should I use?The book suggests that I consult the Cookshack Operator's Manual.There are some general guidelines but the guidelines don't tell you what amount of wood works best with what amount of food.Although I have had some delicious food from the Cookshack, if I am cooking for guests, I use my Brinkmann smoker as I am more confident that the food will be cooked to perfection.The water smoker takes longer, but is more forgiving than the sealed, dry smoking Cookshack. People who like to smoke fish will find 48 pages of recipes.If you prefer beef or pork, the list is much smaller, 16 and 15 pages respectively.There are also small sections dedicated to sausages, lamb and game.In short, this is a book that should have been a digest for Cookshack owners and prospective buyers.At best, it is a generic guide for smoking recipes.It doesn't promote the product line and it isn't a worthwhile choice for anyone new to smoking foods. ... I bought this for my husband when I bought him a smoker for Christmas.He has used many recipes in the book.It is a good guide for different brines and marinades.I wish it were a little more comprehensive and set up like a standard cookbook but all in all it is a good guide.

It's an OK book, but will SOMEONE please write a cook book where I can go to ANY STORE and purchase the INGREDIENTS easily? I'm not sure what that other review was talking about, but it appears to be drug-induced. Certainly the person has never actually read the book.

Likely this is just another attack on co-author John Bear. He regularly gets attacked for his other books (on distance learning).

This book is well worth the price of admission, particularly if you're looking for something different and unique.

To be honest, I wish I had not spent my money. Any kitchen cookbook has many of the recipes found in this.

From reading it, I would not say that Marina Bear American as many of the ingredients of the "unusual" recipes simply cannot be found in your local store so the book is a waste of money.

Perhaps if you lived in Mongolia, it would be of some use.

If you own only one cookbook, this one should be it. It is the collection of recipes from the Cook's Illustrated magazine series. The recipes are reliable. While the explanations of how they arrived at the final recipe can be winded, they foster an appreciation for the work it took to arrive at the best recipe. The pot roast is the best ever, and the creme brulee tastes like the one at my favorite restaurant.

Being of the engineering variety (of human), cooking has not come naturally to me in the past.This book changed all that, with its "how to" and "why" style of informative direction.The book is written almost like a story, and you can learn a great deal about whatever type of food you're considering just by following the "story."I'd HIGHLY recommend this for any beginner or expert cook.It covers all aspects of cooking, grilling, and everything in between.It gets as nitty-gritty as helping you figure out how much gas is left in your grill's propane tank.The style of food in this book appears to be much healthier than many of the books I've seen on my mother's or grandmother's book shelves.By experimenting with many ways to prepare the same dish, the authors have guaranteed your creation will be a hit.For example, the "Classic Apple Pie" was designed to focus on the apples, avoiding ingredients that mask or otherwise smother the natural citrusy flavor.As previously stated, I'm new to cooking in general, and found the "how to" information related to pie-making to be extremely helpful.I see no need to buy any other book - and am sure this will provide YEARS of interesting, thoughtful, and delicious meals.

This is the best all-purpose standby cookbook I've used.I have the Joy of Cooking: 75th Anniversary Edition - 2006, Betty Crocker, and How To Cook Everything: Simple Recipes for Great Food, and a multitude of books devoted to particular cuisines.The New Best Recipe is extremely reliable.It's a happy medium between the fussiness of the Joy of Cooking and the homey-ness of Betty Crocker.The recipes are much better refined than in Bittman's How to Cook Everything (which does tell you how to cook everything, just not necessarily how to cook it well!).I'm always surprised at the breadth as well.Random sampling: tabbouleh, caesar salad, broiled chicken, phad thai, apple crisp, chocolate ice cream.

Before each recipe is an explanation of how the authors arrived at their final formulation of the recipe.They try it a bunch of different ways and arrive more or less scientifically at the "Best" Recipe.The explanation helps beginners learn how recipes work and it also helps you to tweak the recipes as needed since you can understand what elements are critical and which aren't.Of course, you can always ignore the explanation and get right to the recipe if you're not up for the extra reading.

Further, this book is currently a steal!

If you like it, I'd also recommend Thomas Keller's Bouchon and/or Ad Hoc at Home.The recipes are a little more exotic than The New Best Recipe, but the preparations aren't much more complicated.As you might guess from the title, ad hoc is the easier of the two.

    I happened upon this little book when it first came out, and have consistantly been delighted by the recipes inside. As a homesteader with a very large (and ever-growing) vegetable garden, I'm always looking for more ideas for specific veggies. The fact that this cookbook is arranged by vegetable or fruit (what a concept!) makes it easy to use and easy to find just the recipe you need.

    Each food has several different types of recipes associated with it, including cold or hot, raw or cooked, and incorporates interesting herbs and other seasonal foods as well. In fact, there's an entire section just devoted to herbs and edible flowers.

    What's especially nice is that it's not just tomatoes and zucchini -- other home-grown produce covered include melons, chard, fennel, leeks, and a cornucopia of different salad ideas. You'll be delighted by this book, especially if you're an avid gardener.

The recipes are grouped by vegetable type, but many of them are for hearty main dishes in addition to side dishes - there are even desert recipes! Add this to your cookbook collection.

    I can make some use of this book since I've been making wine and liqueurs for a long time.
    But this book is not at all useful for someone just starting out - only historical value.

    This is an old book with a new cover, originally published in 1909. The author assumes you
    already know how to do everything she mentions, have all the gear she uses, so on and so
    fourth. All you have are her recipes. Nothing to help you figure anything out, such as:

    Amounts (Hundredweight, pennyweights...)

    Terms/things (Fume the vessel with brimstone, alembic...)

    Ingredients (isinglass, rhatany root, red tartar, catechu, logwood, tincture of kino, canary, savin... )

    I love it, but that's me...

    Wilbur does a spectacular job on breaking the code to restaurants top secret recipes. I've tired several from this book and end up being amazed each time. My biggest fear of when I walk into a restaurant is how they are preparing the food. What is the kitchen environment like, and most importantly are the workers and kitchen clean? Wilbur comes so close pinning down the exact taste & flavor of these dishes, that you'll amaze your family and friends with your new at home creations for half the price you'll pay in the restaurant. So why not eat in the comfort and convenience of your own home, and know exactly what your putting in your mouth. A necessity to every cooks kitchen preparation collection.

    I LOVE this book simply because I've been trying to recreate popeye's fried chicken on my own and failed miserably! I checked the table of contents and found it was there and that alone was worth the $9 investment. I'm not going to make everything but its fun to see how you could make Mary Jane's. :D

    Check the table of contents first, then if there's a recipe you would like, take a chance. Most times, its pretty good!

    After watching "The Cooking Ladies" quickly prepare a delicious-looking veggie pasta dish along with a unique version of a chicken Caesar salad entrée during a WGN News' lunchtime cooking segment, I felt compelled to get their cookbook.

    Good move on my part! Love, love it! EACH and EVERY recipe has a color photograph of the finished product as well as an entertaining description of the inspirational origin of the dish. What a concept for us visual-craving cookbook readers!

    The eclectic recipes come from their travels to Europe and over most of the North American continent, with a just a touch of Caribbean, Asian, and South American influence. I found many healthy, low fat, low carb dishes along with scrumptiously decadent, calorie-laden recipes for special occasions.

    The travel stories were a unexpected bonus. I enjoyed reading about some of the exotic locales that most of us will never visit, and the interesting people the spunky duo have encountered over the years.

    This is a wonderful book. The knowledge it gives on what a dog really needs for a well balanced diet is great. It even giveS the amount of calories a dog should have per day. You can't get that in can dog food. The ingredients in each recipe can be calculated for calorie content. This enables you to regulate the pets weight as well as have a well balanced and heathly meal.

    I love to cook and I love my dog so I knew it was only a matter of time before I cooked for him as well.As soon as I knew I wanted to cook for my dog I picked up just about every book on the subject.One of the things that I have been most disapointed in is the lack of guidance from most books in creating a balanced diet for your dog.Even though they list recipes for things that sound like main meals for your dog's diet they don't tell you much about how balanced the meals are or whether they are appropriate to eat everyday.

    While this book isn't exhuastive in its nutritional information, it is better than most.It has good basic information like how to deal with issues of animal weight, healthy herbs for dogs, and food dangers.Since I am a newbie to cooking for animals all this information was interesting to me and appreciated.I also appreciated the reference section which directed me to books like Canine Nutrition and Dr. Pitcairn's New Complete Guide to Natural Health for Dogs and Cats.After reading the reference section I now have plans to read both of those books.

    On the plus side, this book does contain interesting and fun recipes, many of which I have not seen in other animal cookbooks.I am especially excited to make the Bow-Wow Brownies as a special treat.However, if these are not up your alley know that you can find treats, meaty meals, fish and fowl, vegetarian meals, special occasion meals, and meals for special diets all in this book.Thus if whether you're only looking for meals or treats or everything in between you are sure to find a lot of what you're looking for.

    The bottom line is that this book's strengths lie in the variety of recipes and good beginner nutritional info, that is MUCH better than most cookbooks for dogs.However, if your aim in cooking for your dog is to create a healthy balanced diet that will help your dog thrive, you will probably want to check out more detailed and scientifically backed dog nutrition books before starting the process.

    Are you familiar with the saying "If I can sew, you can sew"?
