Having decided how I would review this cookbook, I then read the other three reviews already here.Amazing that we all came away with the same impression:marvelous stuff here, not easy but delicious.I first tried the Fall Squash Soup with Chorizo and Spicy Cinammon Croutons, and it was a knockout dish.Everyone just marveled at its layers of flavor, so well blended.This is truly a beautiful book, and the regulars at her restaurant for lunch are blessed.

Thanks to this simple cookbook, my reputation in the kitchen has improved by leaps and bounds.The recipes are time consuming (for a simplesandwich) but wait until you taste them! If I want to knock someones socksoff I prepare the Shrimp Sandwich with Mango Relish!The name cannotimpart how delicious this dish is!This recipe alone justifies the cost ofthe book. (I have substituted chicken w/ equally good results.) Buy thiscookbook.You won't be disappointed!

First I'll say that this cookbook is just beautiful, the pictures are fantastic, the print/layout is just wonderful.Now for the meat of the cookbook; there isn't many of the recipes that I think I would actually prepare.

The recipes are only soups, salads and sandwiches so you're limited to no true entrees.It's then further broken down into the seasons.

Many of the recipes have ingredients while fresh and seasonal would still be very expensive and hard to find.You'd definitely have to have a Whole Foods store nearby. These are not child friendly recipes.Maybe if you lived in New York and no kids this cookbook is right up your alley.

One of the soups is Fresh Pea Soup with Morels.First off this is a spring recipe so where would you get fresh peas in the spring?Then you'd have to get fresh morel mushrooms, fresh mint leaves, and make creme fraiche.The next recipe for spring is Watercress soup with creme fraiche.The photo is just beautiful but fresh ground watercress leaves is just not appealing to me.Then the next soup is Thai spinach soup with lemongrass, coconut and ginger.It looks pretty in the photo but yet another green soup.I think you'd have to make a trip to Whole Foods everyday and get a cash advance to buy all the ingredients.

There is a recipe for eggplant and chickpea soup with chili creme fraiche.A salad recipe is green leaf salad with edible flowers and lemon dressing.Another salad is a vegetable platter with aioli, tarator and warm anchovy bath.I'm not a big fan of anchovies and it just doesn't look good to me.Yet another salad includes grapefruit, blue cheese and celery and the dressing is made with the same ingredients but pureed.There is also a salad with squid and chili-lime black bean salad.I live in the mid-west I just don't know where I'd buy all these ingredients.

One of the sandwiches is spicy lamb sandwich with pistachio relish.Suggested side is fried artichokes.I know the ingredients are fresh and I'm sure the recipes are well constructed but I just don't find any of the recipes appetizing.I know I certainly couldn't get my kids to eat any of these recipes much less squid and anchovies.We've had fresh edible flowers before and they were bitter and just awful.

I can't say anything truly bad about the cookbook, the pictures, the layout, the design on all beautiful.HOWEVER...none of the recipes are for the average person or budget.You could do better with 5 a day: savor the flavor of fruits and vegetables by Pivonka.

The beautiful photos in this book make it inviting, and the recipes make you glad you accepted the invitation.I've prepared many of them and, indeed, will use the book in a cooking class I'm teaching.The focus on soups, salads, and sandwiches keeps the recipes fairly simple, while the use of seasonal food keeps the tastes fresh, even when one lives in north, as I do.

5-0 out of 5 stars Excellent Treatment of Seasonal Dishes. Buy It!
`Keep It Seasonal' by international restauranteur, Annie Wayte is a fine example of how to do a book on seasonal recipes. While Ms. Wayte has obviously gone to school with Deborah Madison's doctrines, specifically those in Madison's `Local Flavors', it seems to me that at least compared to `Local Flavors', Ms. Wayte has actually done a better job of promoting seasonal cooking.

I am generally very favorably inclined towards books giving recipes by the season or by the month, and Ms. Wayte has enhanced this first impression by focusing on `Soups, Salads, and Sandwiches'. First, as she correctly states, sandwiches are a woefully ignored corner of the culinary world (however, the current interest in Paninis, New Orleans specialities, Philly cheese steaks, and other trends suggests this is changing). I can count on one hand, with fingers left over, the really good books on sandwiches, with only `Nancy Silverton's sandwich book' being worthy of a place in a carefully selected cookbook collection. But sandwiches are also a great subject for a seasonal presentation, as so many ingredients are fresh. And, you don't want to spend a fortune on sandwich makings, so the seasonal lettuce and other veggies are always welcome.

The same argument works in spades for salads, as virtually all the more common salad ingredients are seasonal, including major protein sources such as lamb and fish. Soups can come along for the ride, as they are such great accompaniments to salads and sandwiches.

Several seasonal cookbooks, such as Alfred Portale's '12 Seasons Cookbook' and Brother Victor-Antoine d'Avila Latourrette's Monastery cookbooks (including soups and salads!) break things down by month, but I suspect dividing things by season is quite adequate for almost all produce.

If the seasonality thing were the only points of contact between Wayte and Madison, I would not be too impressed, but Wayte seems to have learned from (or in parallel with) Madison about the efficacy of creating stocks to match the soup. The simplest example of this is to create a broth for corn soup from the cleaned husks, after removing the kernels.

Ms. Wayte begins each season with a list of ingredients commonly available in that season, including meats, herbs, and even edible flowers along with the fruits and veggies. While she makes no special note of the fact, it is interesting to note that some vegetables such as broccoli are bi-seasonal, as they show up in the lists for both spring and fall. Speaking of broccoli, I do have to point out a slightly misleading photograph of a warm broccoli salad, where the recipe simply says `broccoli' but the photograph has broccoli rabe. I really suspect 7 out of 10 people who commonly use broccoli don't even know about broccoli rabe and would never look for it to work in a `broccoli recipe', and yet, broccoli rabe really works better in the recipe, especially with its fellow Italian ingredients, Parmesan cheese and black olives.

Otherwise, I was quite taken by the recipes in this book. There were a few `standards' such as a recipe for a Caesar's salad, which is similar to, but not identical to the Caesre Cardini original (based on the testimony of Julia Child, who was taught how to make the recipe by Maestro Caesre's daughter). This means that one can look forward to a fair number of relatively original takes on some standard themes. Ms. Wayte is especially fond of the sharp tasting greens such as watercress, arugula, and others, some of which one may have a bit of trouble finding. But then, the great thing about most greens is that they are eminently interchangeable.

If it has not been obvious from my previous statements, I must be clear that one way in which Miss Wayte parts company with our vegetarian Deborah is that Annie is highly omnivorous. There are lots of recipes for various types of animal protein in among the veggies standards, such as edible flowers and the like.

One thing that certainly impresses me about the book is that in spite of its oversized volume, it is priced below the average list of $35. This is quite in line with the number of recipes and is not inflated for the large pages or the supersized pics. It's almost unfortunate that the book has the appearance of a coffee table ornament, as it is certainly worthy to be used in the kitchen. The only problem is that its oversized proportions and glossy appearance may inhibit one. If so, be sure to buy it cheap or photocopy recipes for the kitchen rather than lugging the quarto tome into harm's way.

One thing I must point out is that some techniques for some recipes are just a bit involved. This is not your '30 Minute Meal' trip. There is much use of blenders and fine strainers on the path between the fridge and the final soup, just as there is much to do with homemade dressings. But, for the right audience, this is a plus, as one simply cannot achieve a truly gorgeously green puree of watercress without some skill and a few specialized pieces of equipment, not to mention some real attention to detail along the way.

This is a book that aimed for a really worthy target, and made a bulls-eye!

I've read about the author in a few magazines recently (and in the NY Times last year, I think), so when I saw the book, I was at first worried that it was too beautiful and full of amazing photos and so the food must be difficult. But I was wrong - I've tried a few things and they are really pretty simple. And it's great that I can look up recipes in the Spring chapter right now and know that the ingredients are in season. As well, the recipes are really creative and I love that Ms. Wayte includes sweet soups and sandwiches as desserts - I made rubarb soup last night! However, the best recipes, at least from the way they look in the book (I think there is a photo of every recipe), must be the salads. There are some amazing combinations and they all look like they could be a meal in themselves.

Anyone looking for a great gift for a novice or accomplished cook could do a lot worse than this! ... Read more

I read to my 8-year-old son every night, and Melvin Beederman is the first character who has my child begging for more reading time.He loves these books!We've read the entire series now and enjoyed every minute - my child even wants to reread them all.If your son hates to read, or thinks most books are boring, you will be thrilled with the Melvin Beederman series.These books are funny, engaging and appealing to boys, but they are not crude.(Moms and dads will actually enjoy reading these books out loud.)Highly recommended for relunctant readers!

Engaging text with a great message for children.Probably every child has, at one time or another, felt that his parents are just not as cool as those of another.Following a "the grass is always greener..." theme the author takes the reader on a journey through the eyes of Rafferty Fox.Fortunately the theme of "there's no place like home" wins in the end.Well illustrated.I recently met the author at a teaching conference.She is an enthusiastic speaker/teacher/writer/parent who has a wonderful ability to incorporate all the elements needed in a good piece of children's fiction.Don't miss this one.

My mother used to read this book to my brother and I when we were little. I remember everything about it so clearly; the little man, the children and the tons of food. Especially the surprise ending which should have been asequel: The Biggest Sundae Ever!This book is one that I and many willtreasure for years to come. I can't wait to read it to my own kids.

There is little to NO information in this manual specific to a Sandwich Shop/Deli Business.These authors seem to have simply taken a "how to start a small business" pamphlet and replaced the term "small business" with "sandwich shop" throughout.Amazon.com should really investigate this. If customers want to read about starting a small business, there are a million manuals out there, all better than this one.What set this apart was the industry-specific title -- a good marketing ploy, but not an honest one. The author has got to be kidding: two pounds of salmon or two pounds of chicken or 16 slices of bacon for two sandwiches-what is she thinking or is it just really sloppy editing? And why does almost every recipe include Lawry's lemon pepper. This book is a mess-nasty-looking and sounding breads and ridiculous fillings!

I had high hopes for this little book and I really wanted to like it. On the positive side, it's visually attractive - and unfortunately this gives the impression that the recipes are better than they actually are. It boasts more than 100 color photographs, most of them full-page. For a volume of 256 pages, that's more than generous. It's written with a friendly, conversational tone which makes the author likeable (pretense in a cookbook is rarely a good thing). The fonts are quite readable - even the index - and the layout is eye-catching, if not downright charming. The book is a handy size too, making it a welcome respite from the prevaling wrist-breaking leviathans. Certainly the recipes are creative, providing truly flavorful alternatives to your everyday Ham & Swiss on Rye.So what's wrong with this book?Inconsistency, lack of instruction, unwieldyrecipes and poor editing.

Nearly every book published has an error or two in the form of typos or mistakes in grammar. "Beautiful Breads" is no exception.On page 17, a line reads "Sweet dough is the firt dough I created."The "firt" jumps right out as it leads the recipe. A similar introduction on page 135 says, "...my parents would make a turkey..."One cannot ever "make" a turkey - only nature can accomplish such a daunting task. One can "fix"; "prepare"; "roast"; "grill"; "cook"; or "deep-fry" a turkey - but I promise you, you cannot "make" one. There are other errors, as well - mistakes that should not have been missed by the editor, Geoff Stone - who wasn't as "masterful" as the author stated.

Now - for the recipes (which include salads, soups, sauces, sides, and desserts as well as breads and fillings). The heart of this book - and Sky's reputation - is bread, yet there's very little written about the nature and technique of crafting bread.Serious bread bakers know that overnight starters and longer rise times translate to more flavor - but these breads do not have the benefit of either.Their flavors come from the add-ins ("filled breads") - some of which are delicious. Nevertheless, the breads themselves are quite ordinary (the "Concord Grape Bread" is an inedible gummy mess and not worthy of any filling) and there's nary a sourdough to be found.Sky sings the praises of white bread, feelingthat it is "underrated".Whole grain is so much better and "white" whole wheat flour is now widely available - why not use whole wheat for more of her breads? Sky also fails to detail the type of yeast to be used - Should we use "Active-Dry", "Instant", or "Rapid-Rise"?There's not much offered in the way of instruction.

ONE OF THE MOST ANNOYING INCONSISTENCIES ARE THE YIELDS.Some bread recipes yield one loaf, others yield as many as nine! The "Basic White Bread" uses 16 cups of flour and eight cups of milk and half-and-half. The "Basic Whole Wheat Bread" uses 18 cups of whole wheat flour (TOO LARGE FOR THE AVERAGE HOME BAKER!) The Kitchen Aid Artisan stand mixer has a 9-cup "Flour Power" rating.Even the Kitchen Aid Pro 600 only has a 14-cup "Flour Power" rating.Unless you have a Viking 7-Quart mixer or a Hobart commercial machine, you're going to be mighty tired after hand-kneading such large recipes. No suggestions or instructions are offered to cut the recipes in half. WARNING: IF YOU'VE NEVER WORKED WITH A DOUGH THAT CONTAINS ONLY WHOLE WHEAT FLOUR (NO WHITE) YOU'RE GOING TO GET VERY FRUSTRATED. THIS TYPE OF DOUGH TAKES SOME EXPERIENCE. IF YOU FORGE AHEAD, CALL THE KING ARTHUR BAKING HOTLINE FOR HELP - YOU'RE GOING TO "KNEAD" IT - PUN INTENDED.

Among the soup recipes, some yield six servings, some eight to ten.The "Pumpkin Soup" yields a whopping 12 -14 servings, employing four cans of pumpkin and five cups of maple syrup (this soup is very sweet and tastes more like pumpkin pie than soup.A savory garnish of crumbled bacon saved the day) - yet there are no recommendations for freezing such an excess of soup! The "Minty Yogurt Sauce" is fine - although painfully obvious, but the "Real Mint Sauce" and "Creamy Candied Carrot Sauce" are awful - each using a large amount of sweetened condensed milk.They are far too saccharine and the flavor of cooked milk predominates. Sky also seems to use "Lawry's Lemon Pepper" in virtually everything.There are some odd combinations, such as Hershey's kisses in a fruit salad and a full teaspoon of almond extract in both the Marinara and Rosemary-Sage Sauces. The large amount of butter in Sky's recipes didn't concern me nearly as much as the seemingly large amount of sugar - maple syrup, sweetened condensed milk, powdered sugar, brown sugar, and grape jelly. Ugh!We don't need more fat, sugar and white flour in our diets!

Sour Cream, Cream Cheese, and Mayonnaise are used - with no suggestions for the lighter versions of each.One sandwich recipe, "Stuffed Strawberry, Granola, Cream Cheese, and Brown Sugar English Muffins" contains one full cup of cream cheese per sandwich!Sky peppers the book with "health messages" (sometimes erroneous) at the bottom of many recipes, yet the book is full of fat and sugar!Further, the Butterscotch and Lemon Meringue pies employ traditional meringue, in which the egg whites are not fully cooked to 160 degrees.No mention is made of a safer substitute such as "Just Whites" or other pasteurized pure egg white products.Sky knows the dangers of Salmonella, as she mentions it in the introduction.A caveat urging those who may be immune compromised to avoid raw eggs is woefully missing.

The best I can say about "Beautiful Breads" is that it might serve as a source of inspiration for all kinds of interesting and tasty sandwiches. A first-rate chicken salad sandwich can be food of the gods.Before you part with a few dollars to buy this book, borrow it from your local library - try before you buy. There are better bread and sandwich books to be had, including Nancy Silverton's sandwich book, which is a far better choice.

This is a gorgeously written and mouthwatering cookbook---I'm so glad Margaux has decided to show the world how to make her delicious sandwiches and soups, as well as the sandwich that Oprah has made famous!Keep up the good work!

This is a great little book with lots of tasty recipes.The two ton chocolate cake is incredible for any chocoholic.The breads are not to hard to make and have interesting to complex flavors.I think the instructions could be a little better for some and that is the reason for 4 stars.For example putting 16 cups of flour and 8 cups of milk in a stand mixer is only going to work if you have an industrial size mixer.Cut that in two and your Kitchen aid will knead it wonderfully. Also I suggest you cut the filling recipes in half until you bake a loaf or two and see if you like it.

Margaux Sky's generosity in sharing her wonderful bread recipes with all of us is rivaled only by the generosity of the sandwiches she invents to fill the breads.I find her sauces particularly clever, adding enormous flavor and blending ingredients simultaneously.I have tried only a few of the recipes so far but all have been winners and I'm looking forward to tasting everything in time.The photographs are lush, able to stimulate an appetite all on their own.This is a marvelous small cookbook.If you are a bread lover, you must add this collection of bread recipes! ...
