3-0 out of 5 stars A good resource about Native American foods
I purchased this book because my stepson harvested some acorns recently and I scoured my large cookbook collection, to no avail, for any information on how to process them or use them in cooking. This book contains information on that and so much more.

This would be an excellent resource for a hunter because game and fish of many kinds are covered here. There are recipes for venison curry, venison meatloaf, rabbit pot roast, wild duck with orange sauce and cornbread stuffed trout. There is also a section on edible wild plants and berries, with recipes.Nutritional information is given for many of the food items listed in the book.Did you know that deer meat is loaded with B vitamins, for instance?

To me, one of the best things about the book is that 100% of royalties go to Native charities. In the foreword it says that the royalties have helped to support scholarships, a children's camp and substance abuse programs. So you can give a little back, and you get a great source for Native North American foods. ... The traditional dishes featured in A Taste of Turkish Cuisine make use of a variety of beans, grains, fresh fruits, vegetables, herbs, and, of course, yogurt, one of Turkey's most important contributions to international cuisine. Simple yet rich in flavors, Turkish cuisine resounds of its varied influences, which range from Chinese and Mongolian to Persian and Greek. A history of Turkey's culinary traditions accompanies the 187 recipes, as well as glossaries of commonly used ingredients and Turkish cooking terms.

"In Turkey we talk about individuals with `tasty hands,'" writes Nur lkin. "This implies that they have wonderful recipes and are excellent cooks. I hope you will find that I have `tasty hands' and I hope you will acquire some `tasty hands' by preparing my recipes." ... Read more

5-0 out of 5 stars very authentic
This is a great cookbook. My family has lived in Turkey and can atest to the fact that the recipes are very authentic and explained very well for non-turkish readers.

there are a few typos and such in it.

1-0 out of 5 stars Thoroughly disappointing
This book was a disappointment from start to finish. Written by a non-professional (the author is the wife of a senior Turkish diplomat as is repeatedly impressed upon the reader and furthermore needed the assistance of a co-author to get the project completed), what we have here is more a vanity publication than anything else. The recipes show a lack of feeling of genuineness and demonstrate unpleasant presumption and lack of respect both for the cuisine and for the reader. Killer example: in the explanation of terms, tahini is explained and then the suggestion made that a cup of tahini may be replaced by 2/3 cup of peanut butter mixed with 1/3 cup of oil. This revolting (and culturally and ethnically wrong) advice sets the tone for this sad excuse for a cookery book. My recommendation for the real thing: get The Sultan's Kitchen by Ozcan Ozan, a professional restaurateur.

5-0 out of 5 stars A memorable cornucopia of traditional ethnic recipes
Nur Ilkin (native born Turkey who learned the secrets of Turkish cooking from her grandmother) and Sheilah Kauman (traveling cooking instructor, food writer, lecturer, and author of 24 cookbooks) effectively collaborate to create a memorable cornucopia of traditional ethnic recipes in A Taste Of Turkish Cuisine. From Zeytinyagli Yer Elmasi (Jerusalem Artichokes with Vegetables); Sarmisakli Cevizli Yogurt (Yogurt Spread/Dip with Garlic, Dill, and Walnuts); and Zebzeli Tavuklu Pilav (Chicken, Green Beans, and Rice with Saffron); to Etli Yaprak Dolma (Grape Leaves Stuffed with Meat and Rice); Patlicanli Pilav (Eggplant with Rice); Zeytinyagli Bakla (Fresh Fava Beans in Olive Oil); and Su Muhallebisi (Mastic Pudding in Rose Syrup), A Taste Of Turkey is an impressive and very strongly recommended addition to any personal or professional ethnic cookbook collection! ... AMERICAN COOKERY,

VIANDS, FISH, POULTRY and VEGETABLES,

AND THE BEST MODES OF MAKING

PASTES, PUFFS, PIES, TARTS, PUDDINGS,

CUSTARDS AND PRESERVES,

AND ALL KINDS OF CAKES, FROM THE IMPERIAL PLUMB TO PLAIN CAKE.

ADAPTED TO THIS COUNTRY, AND ALL GRADES OF LIFE.

PREFACE.

As this treatise is calculated for the improvement of the rising generation of Females in America, the Lady of fashion and fortune will not be displeased, if many hints are suggested for the more general and universal knowledge of those females in this country, who by the loss of their parents, or other unfortunate circumstances, are reduced to the necessity of going into families in the line of domestics, or taking refuge with their friends or relations, and doing those things which are really essential to the perfecting them as good wives, and useful members of society. The orphan, tho' left to the care of virtuous guardians, will find it essentially necessary to have an opinion and determination of her own. The world, and the fashion thereof, is so variable, that old people cannot accommodate themselves to the various changes and fashions which daily occur; they will adhere to the fashion of their day, and will not surrender their attachments to the good old way—while the young and the gay, bend and conform readily to the taste of the times, and fancy of the hour. By having an opinion and determination, I would not be understood to mean an obstinate perseverance in trifles, which borders on obstinacy—by no means, but only an adherence to those rules and maxims which have flood the test of ages, and will forever establish the female character, a virtuous character—altho' they conform to the ruling taste of the age in cookery, dress, language, manners, &c.

It must ever remain a check upon the poor solitary orphan, that while those females who have parents, or brothers, or riches, to defend their indiscretions, that the orphan must depend solely upon character. How immensely important, therefore, that every action, every word, every thought, be regulated by the strictest purity, and that every movement meet the approbation of the good and wise.

The candor of the American Ladies is solicitously intreated by the Authoress, as she is circumscribed in her knowledge, this being an original work in this country. Should any future editions appear, she hopes to render it more valuable. ... Read more
