FanTAStic book - I'd recommend it to anyone, and even buy it & give it as a gift! I got it from my library several times, and ended up copying out some recipes. My family loves them, and they're nice additions to our menu. A very worthwhile book!

This is a great concept, and appeared to be perfect for my family, which includes both vegetarians and non-vegetarians.In practice, however, I could hardly find any recipes that were appealing.Lots of convenience-food style cooking and inauthentic ethnic recipes calling for unlikely combinations of ingredients, such as a lo mein recipe made from spaghetti, peanut butter, yoghurt and soy sauce. The meat versions are mostly derived by throwing in a bit of pre-cooked meat to the finished recipe.This is not likely to satisfy anyone, really - and I could have done as much on my own without a recipe.

This book is absolutely perfect for my family.My family is one of those where only half the members don't eat meat.When I come home from work, sometimes I just can't get myself psyched up to cook one meal, let alone two!This book helps me cook for the whole family with minimum fuss.All of the meals are rather quick, and there aren't really any ingredients that would be hard to find in your local grocery store.You just begin cooking up one of the meals for your family and then split it into two pots or pans, just adding the meat to one.In many of the recipes, the meat isn't added until toward the end of the cooking process.The only thing this book is missing are pictures--color pictures in a cookbook are always appreciated. ... This book doesn't say "vegan" anywhere on it, and I myself am not vegan (just a vegetarian for now), but I feel like I could be vegan based on this cookbook.Oser gives a great, not-too-lengthy but informative introduction to using soy, with a complete list of "unusual" ingredients and where to get them, as well as a conversion chart.The recipes are great -- easy to make and delicious!She has a fantastic mix of foods, but my VERY favorite thing about this book is all the "comfort foods" she includes.There's an AWESOME recipe for shepherd's pie, for example, that is filling and tasty and makes you not miss meat at all.This book also has the hands-down BEST vegan chocolate cake recipe I have ever eaten.I recommend this book to both new and veteran vegan/vegetarian cooks.You will not be disappointed.

I have been an ardent vegan for nearly 2 years, and this book nearly made me go and buy a McDonald's hamburger.The recipes I have tried had ingredients that were expensive, difficult to find or both.The finished dishes were not appealing to any of the senses, and had a horrible aftertaste. The aftertaste may have been attributed to the massive amounts of nutritional yeast and miso required by many dishes.After the third time I tried to make a meal using recipes in this book, I threw it out (and almost threw up).I did not want this book to go to Goodwill or Salvation Army and continue the legacy of horrible vegan cooking.There are good vegan cookbooks out there, try again.IF YOU MUST TRY THIS BOOK AVOID:Quiche Lorraine, Brussels Sprouts with Chestnuts and Creamed Artichoke Hearts.All will break your vegetarian/vegan spirit, and scar you for life.

I give this 4 stars, only because some of the ingredients are not typical pantry stock and many of the recipes are labor intensive.However, they are "delicious" and filled with nutritional balance.The quantities are large, so often, I will freeze recipes.Also, I've found that if I don't have all the ingredients like mushroom powder or nutritional yeast, the recipe is still very good.Thank you, Marie Oser, for taking the time to test and balance healthy recipes that are worth making.

I bought this cookbook after about 6 months of being on a diet recommended by my naturopathic doctor.I was told to avoid meat, dairy and sugar.I had been doing o.k. with one of the Moosewood Restaurant books, but was looking for more variety.When I first started looking at the recipes in here, I was a little nervous, being "cooking-challenged".There were a number of ingredients I had never heard of!But there is a glossary in the front that explains what the ingredients are and where you can find them.Also a good techniques section, which helped me a lot in preparing tofu.And now having made several of the recipes and being amazed when they are finished (they actually look like something I'd get at a restaurant), I'm not so daunted anymore.They are really fairly easy to make and don't take as much time as you might think from reading the ingredient list. The desserts are great, and believe me, I was addicted to sugar!But these recipes use evaporated cane juice, which you can find at the health food store, and are very tasty!I especially like the chocolate chip cookies and the brownies!I would definitely recommend this to anyone looking to make a change to a healthier diet!

I focused anew on healthy foods a few months ago, and several recipes from this cookbook are in my "regular rotation".They are very tasty, easy to fix, and call for easy-to-find ingredients. I like the page lay-out of the book, too. I have lost over 25 pounds in 4 mos without ever going hungry or "dieting".When my doctor's nurse called to tell me about the improvement in my blood lipid panel, she added, "We rarely see so much improvement."My favorite recipes (paraphrased titles which I am copying from the back of my meal-planner) are:

This cookbook is filled with easy and inexpensive recipes.The recipes center around a vegetarian kitchen that relies on staples such as pasta, beans, grains, etc.Even if you don't usually have these things on hand, they are easy to find and inexpensive.
Most recipes are hearty and enjoyable for vegetarians and non-vegetarians a like.My only complaint is that of the hundreds of recipes, there are pictures of only a fraction of them.

This cookbook is easy to understand and does not require a lot of cooking skill.The recipies are easy and delicious, and a lot of them use the same basic ingredients so you can mix and match with appetizers and dinners.I am very happy with my purchase.

We just got back from a wonderful trip to Istanbul and Greece and I must say upon returning I was looking for some more of those wonderful meze and the Turkish Delights (yum).So I took a chance on this cookbook since there aren't many (any others) out there that are vegetarian never mind vegan!I'm really enjoying this cookbook - the first 76 pages (out of 249 so that's not a big deal) are indeed history/travelogue but its kind of fun to flip through and the pictures were of some of the same places we visited so that was neat.Just before the recipes there's a section on subsitites and here the author gives you the info you need to find certain ingedients that might not be in the local supermarket - e.g. there's discussion of egg substitites and where to find them, non-dairy butter substitites and where to find them, meat/fish substitites and where to find them etc. In the recipes there are some ingredients like non-meat chicken broth that is called for.Why not just go with a vegetable broth?I did.Anyway, the recipes have all been great so far.I've tried mostly mezes so far - the fried carrots, the fried eggplant with two sauces, stuffed grapeleaves (mine never turn out looking like they should - need more practice...).There are wonderful soups in here - the only one I've made so far was the hot and spicy soup, but others like the lentil look good too.I definitely recommend this cookbook.I had a *really* hard time finding vegetarian dishes in restarants in Istanbul which is why I enjoyed a lot of mezes, so I can see why there are recipes in here (like Sultan's delight) that use meat substitutes. I think this is quite authentic and the author did a terrific job at trying to bring the Turkish flavors to the vegetarian table!

I find this book disappointing. Firstly, one fourth of the book is taken up by the author's travel accounts. It's a different story when an author gives some background to each recipe. But it is not the case here and I find the result of those two books rolled into one very awkward. Second, and more annoyingly, many recipes rely on meat substitutes. I have always found it sad and the sign of a certain lack of imagination when vegetarian cooking tries to mimick meat-based dishes. It is particularly regrettable in a book on Turkish cooking which has a rich tradition of NATURALLY vegetarian dishes. Which is why I ordered the book in the first place ! ... Read more

I own tens of vegetarian cookbooks, but the one that I depend on is Jeanne Lemlin's Vegetarian Classics.There isn't a bad recipe in the book!You can open the book to any page and find a recipe that is bound to make your "favorites" list.In the back of the book, Lemlin has conveniently made a menu guide, so that whether you're cooking for company or cooking casually, you'll know the perfect set of dishes to pair together.Many recipes include a "tip" section, that either allows you to substitute ingredients in the recipe and customize the flavors to your tastes, or gives you advice to make the recipe a no-brainer. I also love the stories that accompany the recipes.I can't commend Lemlin enough for her thoughtful cookbook!(The only negative comments I have are that there are no pictures in this book and some of the recipes are higher in fat than I'd like to consume.)I can't wait for her next cookbook!

'Vegetarian Classics' was my first cookbook by Jeanne Lemlin, author of 'Quick Vegetarian Pleasures.' This is one of the best vegetarian cookbooks I've bought. I use 'Vegetarian Classics' along side my 'Better Homes & Gardens Cookbook.' There's 300 great recipes for every course and meal. I find this differs from other cookbooks which has interesting introduction and history of vegeterian origins. Did you know that St. Franics of Assisi, Leonardo da Vinci, Percy B. Shelley and George Bernard Shaw were all vegetarians? There's an alphabetical list of food ingredients used in the recipes from barley to wheat berries. It explains what each food is and it's use.


The book is easy to follow as every food is put in it's own category starting with the basics and appetizers to everything from soups, salads, breads, side dishes, all types of pies, pastas, stovetop cooking and desserts. In the back there is a handy menu layout to give you ideas for casual, elegant, summer and holiday meals. In each section Lemlin has side notes and colored blocks of additional information and tips like for perfect brown rice, about olives with an excellent recipe for marinated olives, frittatas, cooking beans, choosing & preparing potatoes, successful puff pastry tarts, cookies and polenta are just a few of the items you'll find in the book. Most of the recipes are simple and easy to follow instructions. I love the guide to light breads, flaky scones and tender muffins. The masala chai is heavenly and the mixed berry smoothie yummy. Even if you're a semi-vegetarian or not, and just looking for new ways to cook your veggies this book is excellent!

I have all of her cookbooks.I like them because they taste good and are simple.These are taste that grown-ups enjoy.As well as children.With all of her cookbooks I think she has made and worked on all of the receipes.Some cookbooks I know they couldn't made the receipes just from the taste.This book is the one I gave for Holiday Gifts and Weddings. The soups are wonderful in this book.I have made them all and everyone loves them.If I had to grab one cookbook and the house was on fire this is it.

I am an avid fan of Jeanne Lemlin's and own all of her cookbooks. I learned to cook from her first book which is falling apart from so much use. Her latest book, Vegetarian Classics, is one you should own regardless of whether or not you are a vegetarian. It is just wicked good food. I made the Thai noodle salad and it was as good as any from my Oriental cookbooks, with no hard-to-find ingredients. Jeanne makes certain her clear and easy recipes work, letting her family and friends be her judges. Hurry and order this book so you won't eat another meal of bland, boring food.

Being vegetarian I think that good presentation isn't only for meat-eaters! One of the main reasons I enrolled in culinary school is because I like to entertain my friends over food and drink -- always vegetarian. I recieved this book as a Christmas gift and I used a few recipes for our housewarming dinner party. The results were fantastic and having great photos were very helpful for improving my presentation skills.

The ingredients for the recipes were easy to find, looked and tasted fantastic. My party was a success and I look forward to using Noraika's book as an aid for future dinner parties.

I bought this book because I think food presentation is important and prefer to have cookbooks with foods that both taste AND look good. There weren't many vegetarian cookbooks on the shelves, but this one really stood out.

That said, a lot of the recipes are great places to start. But I've found that many taste rather bland. This may be because I am used to recipes that call for a healthy amount of seasoning. This book tends to let the flavor of the vegetables exist alone. I do love taking the original recipe and adding my own mixes of seasoning though. I just wish the originals were a bit more flavorful.

While the number of recipes in this full-color cookbook is limited, the selections are wonderful. As a vegetarian, it's sometimes hard to find suitable menu ideas for entertaining, but this has me wanting to throw dinner parties. I've made about a third of them and have always been impressed. The roasted squash risotto has become a regular at our dinner table! If you are looking for recipes that are packed with flavor and nutritional value, you need not go any further than this book.The Yam & Black Bean Burritos quickly became a family favorite as did the Mushroom Nut Loaf.The Carrot Cake could go head to head with one made in the traditional manner and still come out the winner.The Quinoa Coffee Cake is delicious, dense, moist and flavorful.

The main course recipes use familiar, whole foods that you don't have to travel to a health food store to purchase.If you are accustomed to stocking a gluten free baking pantry, you will find the desserts do not need any special ingredients.The typical flours are used:sorghum, brown rice, tapioca, quinoa, and arrowroot.

Best of all, these recipes are EASY.Many are one dish meals (yea!) that go beautifully with a simple salad on the side.The deserts are sweetened with just the right amount of agave nectar (perhaps the only ingredient you won't have at your local grocer.However, it is available via Amazon.com).I'll wager friends and family members that are not Vegan or gluten intolerant will love these recipes.

Please note, if you are sensitive to nuts you need to look elsewhere.The vast majority of the recipes here use tree nuts.However, if glutenand animal products are your only foes, this book is a must have.

So, just to satisfy cravings and as a good judge of character, I always check a cookbook to see how the biscuits turn out.Excellent biscuits (though I used less baking powder--didn't get very puffy but still tasted awesome, and what I remembered of the real thing), and a good mix of recipes that covers some basics and some exotic treats all in a small package.The book calls for a lot of "normal" ingredients, so for a college kid it's not to difficult to enjoy.My only issue is the oats thing, so just skip that paragraph and substitute when you get to the (2 or 3) recipes that call for oats.

If you have celiac and you have ever tried to go vegan, you have probably woken up several days later, laughing hysterically:"There's nothing to eat!"

Not so: mayonnaise, meatloaf, brownies--it's all here.

The author also limits recipes that use corn, soy, and sugar, resulting in food that is low glycemic index, allergy-free, vegan and gluten-free.Perfect, perfect, perfect.

Well, almost:many of the recipes have long ingredient lists, but they won't take forever, and they include recipes that can be cooked a month in advance and then frozen.(Your mother should have taught you not to freeze tomatoes.)

My only real complaint is the book's discussion of oats:the author says that oats don't have gluten, and so they are safe.Actually, oats contain avenin, which is just a different form of gluten;in a test tube, intestinal samples have an immune reaction to avenin;but, in live people, there are many fewer anti-gliadin antibodies (the bad stuff) in diagnosed celiacs who eat oats.

The problem is, some celiacs do fine on oats--and some don't.It's difficult to tell until the person in question starts to get sick again.

However, with that one caveat, this cookbook is way cool, and very, very useful.If you are willing to spend any time in the kitchen at all, this is well worth picking up.

Ok, so you're a vegan who suddenly finds yourself diagnosed with Celiac Disease or gluten intolerance. You're thinking "Help!" right?This new book is a good start toward feeling like you're: A) Not alone, and B) Perfectly able to feed yourself for the rest of your life.O'Brien's 150 delicious, animal-free, gluten-free recipes make a great basic cookbook, containing easy direction and advice, as well as resources for the suddenly-wheatless vegan.

Or perhaps you've been gluten-free for years, but are trying to feel even better, the kind of better that sometimes comes from trying a vegan diet. It happens. Then you turn to Susan O'Brien's The Gluten-Free Vegan and make the Corn Chowder on page 31, or the Pumpkin Scones on page 131, and say "I love you, world!I think I want to live."

Which recipes shall you try first? I fell in love with the incredible Thai Vegetable Soup, then had to follow it up with something Mom might have made--the Carrot Salad on page 43. Now I'm planning a feast with Yam Enchiladas with Pomegranate Sauce, accompanied by the Antioxidant Chili, concluding with Apple Pie Bars. Seriously, you can go wild with this healthy food, and never regret a thing.This is a great title to have in your VGF kitchen.

You meat-and-wheat-eating foodies out there need this book, too. Be broad-minded enough to consider that a delicious dish containing no gluten or animal parts still might really make you lick your chops.Besides, understanding your friends' food needs and preferences makes you a very wonderful, sympathetic and sexy host/hostess.

This is a great book that really delivers what it promises.Easy, great tasting recipes. Two of my favorites are the roasted cabbage with peanut sauce and the bean salad with citrus vinagrette.It includes many, simple ways to spice up rice dishes (if you have a ton of spices on hand already -- or force yourself to invest in them).However, I didn't give it five stars because like most recipe books, it has some ingredients that I've never heard of....but that's my own subjectiveness/food ignorance speaking.You might have the stuff already. ... I used to only cook Thai and Indian vegetarian foods, then saw this book and was impressed by the variety of new recipes, including things I knew from Southern and African restaurants.When tagging the recipes I wanted to try first, I found myself marking half the pages!It's great for planning a week of menus using similar ingredients to make a ton of different things.I half all the recipe quantities, and they are good for 2-3 people that way.It's all been delicious and easy, with most main dishes only using one pot.The instructions for Injera (Ethiopian bread) were creative and it turned out great!I'm starting to use the more authentic ingredients suggested in the recipe descriptions instead of the Americanized versions, using produce and flours from Mexican and Indian grocers (we don't have an African grocer here), and it is even better that way.It's all very protein-rich, so I've never been tempted to add meat to anything in this book.

I've tried about 5 recipes from this book and all of them were dismal failures. The author is way off with the amounts needed for each ingredient. I tried the jerk tofu and plantain and black bean fritters. What a mess! This is the worst vegetarian cookbook I have and I will not be trying anything else in the book.

This is a wonderful cookbook.Oftentimes vegetarian cookbooks' recipes are difficult to "veganize".Not so with this one!Most of the recipes are vegan already! Also, my roommate has Celiacs Disease and eats a VERY strict gluten-free diet.I have no problem finding recipes in this book that satisfy both of our dietary restrictions.

This book is a great book for those who are trying vegetarian recipes for the first time.The recipes are easy to follow and all of the ingredients are available at your local grocery store.I serve my family about 2 vegetarian meals a week, and everyone loves the recipes.Also, I have sent one to a friend who was forced to change his diet for health reasons.Going from Snickers to kombu is too big a step for a newbie.

Hard core vegetarians would have a problem with this book because there are a few non vegetarian recipes.But this book is not for hard core vegetarians.

a vegetarian book should not have dishes with pork,beef,chicken, and on and on...this is not a vegetarian book and should have a disclaimer stating that it is a book for health-conscious individuals looking for a majority of vegetarian options, but this book is catering to carnivores that want to feel healthy, aka a title that does not lie and claim to be a vegetarian cookbook is needed.
heck, i know some people that would not keep this book around because it has meat dishes in it.
and on top of that, of course, is a whole section to eggs and cheese...now, im not vegan, and do eat cheese and pastry that was made with a small amount of eggs,but dont put recipes for cooking undeveloped fetus in a book and still try to call it vegetarian. don't get me wrong, i'm not kidding myself...if i'm eating something with cheese or egg in it,i'm just not gonna pretend i'm not eating animal products.

in short, this publisher is doing false advertising...if you're vegetarian or looking to be vegetarian,there are some decent dishes in here, but these and more are covered in other, better books that don't lie about their content in the title. ... Read more

Troth Wells has travelled throughout Asia, Africa, and the Caribbean to do research for the New Internationalist magazine and along the way has picked up fantastic insight into the culinary practices of the cultures she has seen. The food in these recipes are simple and very delicious and incorporate the ingredients that are mainstays in the particular country. Along with the recipes, Ms. Wells has included beautiful pictures of people cooking, gathering, bartering, farming, ranching, and producing their food items. Though this book is vegetarian recipes only (which appeals to my way of living), I have also bought her other global cookbooks which are fantastic as well. In each cookbook, Ms. Wells includes a littly synapsis on the history of food production and how certains grains and crops became important to certain areas of the world.The culture, history, photos, and delicious recipes make this a truly wonderful book. Please see her other books too which would be wonderful in any collection

Almost Vegetarian Entertaining offers upbeat support for planning your next party or casual get-together. It includes recipes for the same kind of original cooking that Shaw showcased in her Essential Vegetarian Cookbook, but with an emphasis on dishes perfect for parties. This time, some of Shaw's pleasingly creative dishes are Jalapeno-Spiked Vegetables Stewed in Peanut Sauce, and an Apple Risotto with tangy cheddar cheese. As the title of Almost Vegetarian suggests, seafoods and poultry are used in about a third of the dishes--but the main emphasis is still on vegetarian cooking.

Shaw's reassuring tone and relaxed advice on menu selection, setting the table, and coping with failed recipes will calm the nerves of any cook who views entertaining as a big deal. One way to simplify your work is by serving up a cheese tray. Here's the true test for the quality of a vegetable recipe: transcendance. You're looking for nothing less. Cabbage should taste like cabbage but also like something divine, and unimaginably delicious.

Don't like cabbage? Oh, you will. Try the Cool-Hot Cabbage (a thai green curry type dish with coconut milk). The best Napa Cabbage in the world is waiting for you. And Beans with Fancy Toppings are delicious too...

This cookbook is for people who want to mix and match food from around the world.It will guide people who are interested in experimentation but need some guidance for what foods to combine.My family's favorites are the German-Thai peanut cabbage, the baked couscous with saffron, the Iranian tofu stew, and the kale-apple soup (among others).I would highly recommend it to vegetarians (especially those who are bored with the same old same old) and to anyone who is interested in truly international food.

The recipes are clear and well written, and will add another level of creativity to your cooking--even when not making a recipe from the book.One thing I appreciate most is the variations at the end of each recipe; there are both vegan and meat-eating suggestions.She also does a good job suggesting menus, if you need help deciding which dishes to combine.Best of all, most of the recipes are very healthy and will help work protein, fiber, and veggies into your food.

This is my favorite cookbook in terms of innovation and ideas.It will change the way you cook.

Bharti Kirchner has the right credentials for this kind of book:she is extremely talented in the cuisine of her native Bengal (see THE HEALTHY CUISINE OF INDIA), as well as a cookbook author who has traveled widely and grained widely from her travels (see INDIAN INSPIRED).As she did with her two earlier cookbooks, Kirchner goes to great lengths to explain her ingredients and methods to an American audience.Her food is innovative, interesting, reasonably easy to make, and great fun to eat.For vegetarians tired of "the same old thing," this book is just the ticket to new culinary adventures!
