Some of the recipes contained in the African Recipes cookbook are the same as those eaten and enjoyed by Africans many years ago. Except in limited instances, where fresh vegetables have been substituted by canned, the recipes stay true to the originals, We can imagine the significance a last meal as a free person could have had to someone, before his world was destroyed, before the slave chains were locked on his wrists and ankles. The new slaves faced unimaginable horrors; deprived of their freedom, displaced and despairing, transported between decks under appalling conditions, to face forced labor on the plantations of the new World and Caribbean. Everything was unfamiliar and threatening. They had nothing to fall back on.

Avocado: (Persia gratissima) This fruit is about the size and shape of a pear, and often called avocado pear. The dark green skin, which can be bumpy or smooth, covers a soft, light green, buttery flesh. A hard, oval pit is in the center of the fruit.
Baobab: (Adansonia digitata) The dried, powdered leaves of this enormous tree, which the Hausa call kuka, are added to soups and stews to give them a slippery texture similar to okra. The fruit of the tree is a large oval, 10 to 12 inches long. It is downy on the outside, with a woody shell covering compartments filled with fibrous pulp. It is sometimes called monkey bread. Powdered baobab may be found in African food stores, or by mail order.
Breadfruit: (Artocarpus communis) This round, bright green fruit grows on a large tree. It is about 8 inches in diameter, seedless, and covered with a thick rind. After ripening fully, it develops a sour taste, so it should be used before it becomes soft. Breadfruit has a mealy texture, and can be eaten raw, in a sauce, or simply peeled, boiled and served with a butter sauce. Breadfruit is sometimes available fresh in groceries, or can be purchased canned. It should not be confused with jackfruit, which is much larger, oblong, and contains large seeds.

Slaves powerless? Jessica Harris won't hear of it. To Harris, the Africans abducted and sold into American slavery never totally surrendered their dignity and authority. Their impact, she notes, endures tastefully in many of the diverse dishes of the southern United States, northern South America and the Caribbean. Denied many of the ingredients and methods of their native Africa, subsisting on the cheapest foods their slavemasters provided, they nonetheless adapted and survived. In resourcefully tapping their memories and rekindling their cooking skills, says Harris, slaves took over foods both familiar and strange in the Northern and Southern hemispheres. And their way with food didn't stop at their small gardens and spare quarters. Early on, slaves were assigned the growing, preparing and serving of food for their masters' families.

Native Indians developed corn porridge, cassava meal, sweet potatoes, many roots, hearts of palm, many species of game and fish, and the preservation of meats by smoking and drying. In 1533, the Portuguese colonized Brazil. After a lengthy Moorish occupation, Portugal had adapted a variety of North African cooking traditions, among them coffee, dried fruits and pastries. These culinary customs were in turn exported to Brazil, with the twist of being prepared using local ingredients. The largest single influence on Brazilian cuisine came with African slaves. Dende, peppers and coconut milk, staples of West African cooking, became firmly established on the Brazilian palate. During the Nineteenth Century, slavery ended and an independent Brazil became a melting pot for immigrants from all over the world. Waves of new arrivals from Asia, Western and Eastern Europe and the Middle East brought kitchen traditions with them that put a truly eclectic spin on Brazilian cuisine. The nation's multiethnic and multifaceted cooking is always unique and delicious.
