June Ewing The present day African-American population, like many other ethnic groups, is several generations removed from their original land. Thus many practices and habits have been lost, dropped, simulated, or modified. The greatest influence on many African-American families is the lifestyle of their parents or grandparents who lived in the southern United States.
Acceptable Nomenclature
Acceptable nomenclature for this cultural group include African-American, Black Americans, or People-of-Color. People-of-Color is preferred by many when addressing groups or discussing issues that affect several ethnic groups.
Food Habits and Their Relationship to Dietary Guidelines
Eating Practices, Food Preferences and Food Preparation Techniques
Common ways for African-Americans to prepare food include frying, barbecuing, and serving foods with gravy and sauces. Home-baked cakes and pies are also common.
Teaching Implications
Custom and Family Traditions
Many African-Americans are Protestant and have no specific food restrictions. However, a large number of families are members of religious groups that may have some restrictions or dietary preferences. These may include Seventh-Day Adventists, Muslims, Jehovah's Witnesses, and others. This should be discussed openly.

Fran Thomas of Cordova, Tennessee, has won $50,000 in the 3rd Annual Betty Crocker, "Recipes From the Soul" cooking contest! The hefty grand prize was awarded to Thomas after her recipe, Ma Lynn's Collard Greens and Turkey Quiche impressed the taste buds of celebrity judges at the Finalist Cook-off at the Betty Crocker Kitchens in Minneapolis, Minn. on Sat., Feb. 17, 2001. Second and third prizes were also awarded. Joan Tarpley of Stone Mountain, Georgia, came in second place with her Bisquick Sweet Potato Bread Pudding with Orange Sauce. She won a range, refrigerator, dishwasher and washer and dryer courtesy of Whirlpool Corporation. Third prize winner, Estella Loggins of Richmond, California, walked away with a Whirlpool range for her recipe for Momma Loggins' Cantaloupe and Peach Cobbler. "Recipes from the Soul" is a cooking contest designed to celebrate the traditions of African-American cooking. Ten finalists from various parts of the country, submitted an original recipe containing any Betty Crocker spoon branded product. All recipes were prepared on Whirlpool AccuBake Ranges, which provide consistent results everytime. Recipe submissions were judged on the basis of taste, creativity and how accurately the recipe celebrates the traditions of African-American cooking. A star-studded line-up of celebrity judges was charged with the 'arduous' task of tasting the delectable recipes and choosing winners. The judges included:

    Learn the Secrets of African Cooking and Enjoy an African Feast
    (June 17, 2000 North Adams, MA) On Saturday, July 8, at 5 pm visitors to MASS MoCA will discover the rich, sultry blend of meats, tropical fruits, vegetable, grains, and spices that form the foundation of West African cuisine. Culinary historian and author Elizabeth Jackson will host a journey through the south of the Sahara with Taste of Africa. The evening will include a cooking demonstration and a hot buffet dinner featuring the demonstrated recipes. West Africa stretches southward from the Sahara Desert to the humid coasts of the Atlantic Ocean, encompassing everything from Senegal to Nigeria. West African cooking requires very little specialized equipment and, as Jackson makes clear, "the beauty of West African cooking is its flexibility. There may be dozens of variations for a single dish, and you can easily tailor that same dish to suit your tastes." The daughter of missionaries, Elizabeth Jackson grew up in the Kano area of Nigeria, just south of the Sahara desert. She moved to the United States before going to college and eventually began reproducing the Nigerian recipes of her childhood. Her West African-style cookbook, South of the Sahara is one of few on the topic. According to the
