ARGENTINEAN RECIPES EMPANADA CRIOLLAS Nombre: Empanada Criollas Dough: 1 Kg. or 2 pounds of white flour
1 egg, salt, water
250 g. or ½ pound of "grasa de pella"
Filling: 2 pounds of veal beef, tenderloin in preference, in slices 5 milimeters thick. With a sharp knife cut it in small cubes 5 milimeters wide. It can be used minced meat from the butcher but this is not the right "criollo" way.
2 large onions minced well chopped.
2 tablespoons of paprika
1 tablespoon of dried crushed red pepper(flakes)
2 cups filled of "grasa de pella", salt
PREPARATION OF DOUGH a- Combine flour and salt in a bowl.
b- Pour in the tepid liquid "grasa de pella", the entire egg and water until reasonable well combined.
c- Turn out on a floured surface and knead until smooth. d- Leave 15 minutes to rest covered with a moisted cloth. e- Roll on the dough with a knead-stick stretching until 3 milimeters thick. f- Cut circles aproximately 5 inches in diameter. PREPARATION OF FILLING a- Heat the two large cups of "grasa de pella" in a saucepan until liquid. b- Saute in it the chopped onion until soft but not brown.

Chef/Owner Maria Vasconcelos and son Danny How often do visitors to Boston's historic North End long for one of those "tiny, intimate and cozy places" where the food's "as good as any" and the ambiance is as "great" as the staff is "friendly"? Search no further for, according to the 2002 Zagat Survey , the answer is clear: Alloro Ristorante. Owned and operated by chef Maria Vasconcelos, Alloro has been packing them in - quite literally - since 1997. This miniscule 26-seat restaurant has the distinction of being not only one of the neighborhood's smallest eateries, but also one of the favorites for its "home-style Italian cooking" - the kind of authentic Italian comfort food that Mamma used to make. And the Mamma in this instance knows her cooking inside and out. Maria has worked both at Mamma Maria's and at the Bay Tower Room, and also cooked for over 10 years at 5 North Square Restaurant. When, in 1997, the Hanover Street Alloro location became available, she and her husband, Antonio, leapt at the opportunity to run their very own establishment. "It's extraordinarily hard and very time-consuming running your own restaurant," she says. "But when you are both owner and cook your relationship with your dinner guest is much closer, more intimate and much more rewarding. 2 20-ounce New York strip steaks, 1 3/4 to 2 inches thick
Olive oil
Coarse salt and freshly ground black pepper to taste
For the chimichurri sauce:
3 bunches flat-leaf parsley
5 large garlic cloves
3/4 C. extra-virgin olive oil
1/2 C. white-wine vinegar
1/2 t. crushed red chili pepper
Coarse salt and freshly ground black pepper to taste Prepare the grill (brush grate clean, oil grate, then light grill). Grill steaks on a hot charcoal fire for 6 to 8 minutes per side for medium-rare. Transfer steaks to a platter; brush with olive oil and season with coarse salt and freshly ground black pepper. Let the steaks stand for 10 minutes. To make the sauce, combine all the sauce ingredients in a food processor and pulse until smooth. Slice the steaks in half and serve with the chimichurri sauce and any juices that have accumulated on the platter. Makes 4 servings.

We simply gathered images which we want to share with you (as this mountain of garbage along the side of the freeway that joins Frankfurt and Breda, in Germany). After loading my baggage in a taxi, the day I arrived in Brussels, the chauffeur told me: "if you want I'll take you, but that is only four blocks away and I have to charge you no less than ten dollars for that", I thanked him, took hold of my bag and went on by foot. I share the first night in a community hotel's with a fellow from the USA, one from Germany and an Englishman. The American guy was reading "A hundred years of solitude" (by the Colombian Gabriel García Márquez). In the room next ours, there was a family from Togo, in Africa. They were over 12 people, dressed in their traditional clothes and cooking their traditional meals wich they shared with whoever accepted, in a hall in the hotel. I met with people from Japan, New Zealand, and other distant countries. I recive a lot of astonishings images and experiences.
