Asian Grilling Imagine sitting under the shady palapas, only steps away from the waves crashing onto a blazingly hot tropical beach by the Sea of Cortez, drinking ice-cold margaritas with a good friend. It was on such a summer day, a year ago, that Harriet Bell and I were reveling in how glorious our lives were. Learn Asia’s culinary secrets under the tutelage of our Executive Chef, then savour the tempting dishes prepared during each session.     4 sheets Phyllo pastry small bananas, peeled, quatered 6 Tbsp. caramel topping 4 Tbsp. walnuts, toasted, chopped fine 1/4 cup powdered sugar 1/2 tsp. ground ginger nonstick spray In a small bowl, mix ground ginger into caramel topping To make rolls:
    Place 1 sheet of phyllo dough on work surface (keep remainder covered with damp towel). Lightly spray with nonstick cooking spray. Place second sheet of phyllo on top of first. Using a sharp knife, cut dough in half lenghtwise and in thirds crosswise (you should have 6 pieces.) Place 1 banana piece lenghtwise about 1 inch from edge of each phyllo square. Brush opposite edge lightly with water. Drizzle each banana with 1/2 teaspoon caramel sauce and 1 teaspoon walnuts. Fold in edge clsoest to banana. Roll wrapper over banana once, then fold in sides and roll up as for egg roll, pressing ends to seal. Repeat filling and rolling remaining phyllo. (Can be made 2 hours ahead. Cover with damp towel and plastic warp and chill.) Spray baking sheet with nonstick spray. Lightly spray rolls with nonstick spray (use of butter flavor spray if you prefer) Please rolls on baking sheet.

While the past century focused on Europe for culinary inspiration, expect a turn to Asia as we look ahead. Widespread Asian immigration to the States, more ethnic restaurants and increased travel to Asia account for heightened awareness of Asian cuisine. In addition, Americans perceive Asian cooking to be healthier than its Western counterparts. Indeed, Asians themselves attribute health-giving benefits to specific foods. In many Asian cultures, food is a medium that helps to keep the body in harmony and balance. Pioneered in part by Kikkoman, soy sauce is the first Asian seasoning to reach mainstream status in America. Soy-based Asian flavors are commonly found in supermarkets todayespecially in the prepared foods categorywhere consumers can find teriyaki-flavored rice bowls and noodle bowls by major U.S. food processors. Many Asian cuisines employ ingredients that have been fermented, dried, or brewed as a means of preservation. These foods develop intense, complex flavors in the process. Soy sauce and fish sauce, two of the most important seasonings of Asia, are such examples. Soy sauce is primarily used in China, Japan and Korea, while fish sauce is more often used in Southeast Asia.

The Asian variety is more pungent and stronger with an anise-like taste than either the French or Italian varieties. You can, however, use any of the three with an Asian recipe. But use only fresh basil, never dried. TOP Bean sauces - Bean sauces (including brown bean sauce, brown bean paste and yellow bean sauce) are made from soybeans, flour, salt and water, and come in bottles or tins. If you use a tinned variety, transfer the bean sauce to a glass jar. It'll keep in a refrigerator that way almost indefinently.

    Patak's Indian Foods is based in Lancashire, England. It is a family owned, Indian food ingredients company which has grown from modest beginnings into one of Britain's most successful brands, used by professional chefs around the world.
