    A Down Under menu Purobi Menon Australian cuisine best reflects the multi-ethnicity of the country. Here are some recipes that have taken on the local flavour. While Australian folklore is full of `dreamlines', an umbrella term for the myth and legend woven by aboriginal ancestors, the strands in the cuisine of this highly multi-racial country are many and diverse. Chef Bruno Cerdan, who has spent 11 enjoyable and enriching years in Australia, introduced the flavours of Australia at the Oberoi's restaurant in Delhi, La Rochelle. Australia is truly a melting pot of cultures as diverse as Chinese, South-East Asian, Italian, British and the indigenous aboriginal culture. "Australian food is vibrant in colour and employs fast-cooking methods," says Cerdan. The master chef's menu was an eclectic mix of the die-hard continental, which is a part of Chef Bruno's mindscape and Asian wok-style cooking which has a strain of influence on the cuisine.

    1 cup very fine sugar
    2 heaped teaspoons cornflour
    ½ teaspoon vanilla essence
    1 cup whipped thickened cream
    2 passionfruit
    3 kiwis 2 bananas 200 g (7 oz) strawberries
    Preheat the oven to 180°C (350°F). Then grease a 18 cm (7 inch) round baking pan and dust it lightly with a little cornflour. Beat the egg whites until soft peaks form and gradually beat in the sugar. Beat until the mixture is thick and the sugar is dissolved. Carefully fold in the cornflour and vanilla essence. Spoon into the baking pan . Reduce the oven heat to 150°C ( 300°F) and place in oven. Bake for 1 hour. Let stand for 5 minutes before turning onto a serving plate. Allow to cool completely before decorating with the whipped cream and sliced fruit. Serve with: Iced Wattleseed Coffee 2 teaspoons coffee, roasted and ground

        3 lb Boneless chuck or rolled rump roast
        6 whole cloves
        1 bay leaf
        4 c water
        2 med. onions, quartered
        2 med. stalks celery, cut into 1" pieces
        1 tsp salt
        5 peppercorns
        1 lg clove, garlic
        4 med. carrots cut into quarters
        2 med. turnips cut into quarters Place beef roast, salt, thyme, clove, peppercorns, bay leaf and garlic in Dutch oven, add water. Heat to boiling, reduce heat and simmer covered for 2-1/2 hours. Add remaining ingredients. Cover and simmer until beef and vegetables are tender, about 30 min. Remove beef and vegetables. Cut beef into 1/4" slices. Strain broth and serve with beef and vegetables.

    CAMP OVEN COOKING
    Cast iron camp ovens are fun and a time-proven way to cook a variety of food including breads, roasts, stews and casseroles. Camp ovens come in various sizes and a good one will last a lifetime if cared for. Most camp stores carry good quality ovens but look for one that has a strong handle and a lid with a large lip to hold the coals. Before using a camp oven and to prevent rust it needs to be "seasoned". The first step with a new cast iron camp oven is to peel off any labels and then wash the oven and lid in warm water only, rinse and dry completely. Grease the oven and lid inside and out with a good grade of olive or vegetable oil. Do not use lard or other animal products as they will spoil and turn rancid. Do not use a spray in coating the oven but rather use oil soaked in a paper towel. Place the oven upside down on an oven rack with the lid separate and place aluminium foil underneath to catch any excess oil. Bake at 300-350 degree oven heat for at least an hour. You will probably need to repeat the process for the oven to obtain the desired uniform black patina that provides the non-stick qualities and protects your oven from rust.

    And it is a bit of a challenge to cook in a recreational vehicle. Storage space for cooking utensils and foodstuffs is less than in a conventional house kitchen. So is table and workbench area. Sharing floorspace with other occupants can be tricky (and even dangerous) while cooking. You may not have access to hot water or special ingredients when you want them. And you may feel a bit handicapped by lack of appliances or a full library of recipe books. Top of this page
    Rising to the challenge
    First of all, regard the limitations mentioned above as advantages. The absence of hot running water just means you have to think more strategically about the order in which you do things, either using an electric jug to boil water before you need it or using a gas kettle to boil water before you need to use the burner for something else.     It is often a good idea to make lunch in the morning and store it in an insulated container before you set off for the day. Not only does this save time (in both preparation and washing up) while you are travelling, but it allows you to take advantage of special dining locations, such as an invitingly placed picnic table with a view.

    Stefano cooking up a storm

    February 17, 2001 STEFANO de Pieri has been using food as a metaphor for water politics since he landed in Mildura a decade ago.
    A little stirring here, a gentle roasting there, and the cooking star of A Gondola on the Murray has taught a national and international community of foodies more about his beloved river, its produce and its problems than anyone could have predicted. Through the benign cooking show that showed a generation of "cod assassins'' how to properly prepare the native Murray fish, de Pieri has made frequent references to the state of the river and the increasing dearth of fish-life. The effusive Italian-born political adviser turned cook has built an international profile on the network of farmers, fishermen and irrigators that supply him and many of Australia's kitchens with fresh local ingredients. His enthusiasm for the region shines through his books, television show and the annual literary festival that draws such luminaries as Les Murray and Helen Garner.
