Recipe for 4 people:
You need:water, 2 large carrots, cut into thin sticks, 1 teaspoon salt, 4 celery stalks, cut into thin strips, 3 pound beef brisket, 2 leeks, white part only. 2 gherkins, 1 onion - cut into rings, parsleyBeef
Heat 2 qt. water with salt. Add beef; bring to a boil. Skim foam from surface until clear. Partially cover pot; simmer 1-1/2 hours. Cut leeks in 2 inch pieces, then cut in half lengthwise. Add leeks, onion, carrots and celery to beef. Cook until beef and vegetables are tender.
Cut beef into 1/2 inch slices. Cut gherkins lengthwise in thin slices, leaving 1 end uncut. Spread out slices like a fan - garnish beef with gherkins.
Serve vegetables in a separate dish with 4 tablespoons cooking liquid spooned over the top. Garnish with parsley. Serve with Swedish mayonnaise.

    Nourishing Soups with Roasted White Bread
    Beer Soup
    Ingredients:
    3/4 liter (1,32 pints) blond beer (and if you want a pint for yourself), 4 cloves, 1 cinnamon stick, lemon-peel, sugar, 2 tablespoons cream, 3 yolks, white bread.
    Cooking:
    Cook beer together with cloves, cinnamon stick, lemon-peel and some sugar (and don't forget to drink your pint). While cooking skim off the foam. Mix cream and yolks and pour it in the cooking beer. Trim down heat until soup thickens. Serve soup immediately garnished with in butter roasted dices of white bread.
    Garlic Soup
    Ingredients:
    5 cloves of garlic, 4 tablespoons spelt-flour, some oil, herb salt, black pepper, 1/4 liter (0,44 pints) of milk, 3/4 liter (1,32 pints) of beef soup (it's allowed to use 1 stock cube instead of newly-made beef soup), sweat cream, in butter roasted dices of white bread, chives.
    Cooking:
    Roast spelt-flour in some oil. Squeeze garlic, add it to spelt-flour and pour beef soup over it. Add herb salt, cook soup shortly and pour milk in it. Sim soup for 1/2 hour on low heat. Season it with sweet cream and serve garlic soup garnished with in butter roasted dices of white bread, chopped chives and coarsely ground black pepper.

    Austrian Cream Cheese Soup Ingredients

    1/3 cup butter or margarine 4 celery ribs, chopped 1/3 cup all-purpose flour 3 (14-1/2 ounce) cans chicken broth 3 cups water 1 teaspoon salt 2 (8-ounce) packages cream cheese, softened 1-1/2 cups plain yogurt 4 egg yolks 1 teaspoon ground white pepper chopped fresh chives (optional) Instructions Melt butter in a dutch oven; add leeks and celery; saute until tender. Add flour, cook, stirring constantly, 3 minutes. Stir in broth, 3 cups water, and salt; bring to a boil. Reduce heat; simmer, stirring occasionally, 15 minutes. Microwave cream cheese and yogurt in a 2-quart microwave-safe bowl at High 15 to 20 seconds or until warm; whisk until smooth. Whisk in egg yolks; gradually whisk in 2 cups leek mixture.

    Austrian Pancake 1/2 cup raisins
    1/4 cup Amaretto, warmed
    6 eggs, separated
    2 cups milk
    Salt
    1 Tbsp. sugar 1 tsp. vanilla 2 cups all-purpose flour 1 Tbsp. butter 1 Tbsp. confectioner's sugar
    A number of years ago, I spent 3 days in a small Gasthaus in the Austrian Alps, and this dish was my choice for breakfast every day. ItÂ’s a delicious dish, and although very simple, presents itself well to any group. Preheat the oven to 400 F. Soak the raisins in warm Amaretto to cover for approximately 5 minutes. Drain (you can save the Amaretto for use in the sauce) and pat dry. In a medium bowl, beat together the egg yolks, milk, a pinch of salt, sugar, and vanilla. Gradually stir in the flour. Add the raisins. In a separate bowl, beat the egg whites until stiff. Fold the egg whites carefully into the milk mixture. Spray a baking pan with cooking spray. Pour batter into pan and bake for 20 minutes. Transfer pancake to cutting board and tear it into small pieces using a fork and knife. Melt butter in a large skillet. Add pancake pieces and fry until well browned. Add with confectioners sugar and keep frying until sugar turns into glaze. Serve in a large platter. Sprinkle with additional confectioners sugar.
