This was my Mom's recipe for Gaulettes
(we called them Gullets, before we knew what to call them.)
2# of light brown sugar
1# good butter (a must)
6 eggs beaten
pinch of salt
1 teaspoon vanilla
Flour about 3#, (7 or 8 cups)
Cream sugar and butter together, add beaten eggs and cream well. Add salt and vanilla, then the flour one cup at a time, until you have 4 cups added. Then 4 more gradually so you get the consistency of stiff batter but not sticky, just slightly. (like you make peanut butter cookies) Don't make the batter too dry with too much flour. Roll into walnut sized balls. Heat gaulette iron on stove and season it with Pam or Crisco for the first few cookies. (the first ones always stick and are flops, so eat them.) Count about 15 seconds then turn the iron over to bake the other side. Store them in a closed container away from everyone, or you won't have any left when they really get good after a couple of weeks. They soften slightly then.

These light, tender dessert waffles are made from a yeast batter. They should be baked on a waffle iron with a deep grid, especially made for Belgian waffles. Top with fruit plus whipped cream and/or ice cream before serving.

  • 1/2 cup lukewarm water
  • 2 tsp.. sugar
  • 1 packet active dry yeast yeast
  • 2 1/2 cups flour
  • 1/4 cup sugar
  • 2 cups skim or 1% milk - lukewarm
  • 2 T. canola oil
  • 1/4 cup applesauce
  • 1 tsp. vanilla
  • 1/4 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • dash of salt
  • 1/4 cup egg substitute
  • 2 egg whites
Preparation - Place the first 3 ingredients in a bowl. Stir, then let stand for about 5 minutes or until until bubbly. Add all other ingredients except the 2 egg whites. Whisk, or beat on low speed of electric mixer until smooth. Cover and let rest in a warm place for about 1/2 hour. Beat egg whites until stiff and fold into batter. Bake in a moderately hot waffle iron for about 4 minutes or until a golden color. Makes 5 or 6 waffles, depending on size of waffle maker. Top with fresh fruit and Low-fat whipped topping.

It never ceases to amaze us how ignorant most Americans are of their Belgian ales. Where were you people raised? Liefmans Goudenband is one of the 650 beers produced in Belgium. According to Denis Blais and Andre Plisnier, authors of Belgo Canada UK ), Liefmans Goudenband was the classic Flemish brown ale, given a somewhat sour flavor by boiling dark malts and roasted grains for a long time. They say it was the perfect partner for rustic meat dishes and stews. With the advent of commercial production, Blais and Plisnier wail, the sourness has given way to a sweeter taste, which makes it a better accompaniment to chocolate, but still they use it in their Carbonade Flamande recipe. Frying:
Meat should always be at room temperature before frying. Cooking time depends on the thickness of the meat and personal preferences as to doneness. A one and half inch thick steak (3 cm) will be medium rare when cooked 4 minutes, 2 minutes on each side. If cooking time is increased by 1 ½ to 2 minutes on both sides, steak will be well done. Roasting: Preheat over to 450 F (240 C). As Belgian Blue Beef has very little, if any fat, it must first be seared before roasting. Then, place a strip of bacon on top (optional) and place uncovered in oven. Reduce heat to 350 F (180 C) after 15 minutes. Allow 3 minutes of cooking for every 3 ounces (100 gr) of meat.

    This is the question posed to me many times over, everywhere we go and talk about cooking with beer. There are three basic reasons. First, with beer you introduce specific flavors and aromas in your food. It can be the bitterness of the hops, the maltiness of the grain, or the real unique flavor of the beer you are using. Never forget, that the range of tastes in the available beers of the world to you, is so much wider than the tastes of wines on the market. Second, with the beer you introduce all the healthy stuff that is in the beer. The many B-vitamins, the rich variety of phytochemicals like folate, niacin and isoflavonoids, the hops and its cleansing and cancer-fighting characteristics, and yes, the alcohol.     The best of Indian food always has a full balance of flavors. And a great way to layer these flavors is to use flavor carriers. A couple of my favorite flavor carriers are rice and lentils. These ingredients, by themselves, are fairly bland, but when they are cooked with full-flavorful broths and aromatics, they soak up all the flavor and become a distinctive component of any dish. Probably my favorite rice is basmati. Basmati is in the long-grained rice family. Long-grained rices are used throughout India and the Middle East. These are in contrast to the short-grained rices (arborio, carnaroli, bomba, etc.) that are preferred in Italy, Spain and Japan. One reason I like basmati as an all-around rice is that it is lower in starch than most other rice varieties, which makes it very easy to cook, and it has a very memorable nutty flavor and fragrance (actually the word

    Special Care must be taken when cooking Belgian Blue Beef. It cooks faster than traditional beef due to the low fat content. We recommend using low heat and cooking your meat to a doneness of rare to medium for the best quality. ROASTING: Cook at 250-275 F until internal temp reaches 120-140 F. Add a small amount of water to the pan. GRILLING: Cook over medium hear and shorten cooking time (about 1/3 less time than ordinary meat). BROILING: Place rack lower and shorten the cooking time. PAN FRYING: High heat only for searing! Then turn down heat. Remember, don't overcook and watch your cooking time. A crockpot works well also, add some seasonings and water. Then cook on low for 8 hours or so and enjoy. Also, when browning ground beef, we always add water. There won't be all the grease you're used to.
