This is a great late night snack or lunch dish. For this you need soft (white) bread rolls. You cut them open and take out some of the soft bread from the bottom and the top. Open a bag of Sauerkraut and drain it.
Fill each bun with a heap of sauerkraut and a slice of bacon. Put the buns in the oven (180degr cent) for 20 minutes. For variation add a frankfurter or some tomato or pineapple. Eet smakelijk

Picture this: It's a quiet Sunday morning and you're awakened by the warm, yeasty smell of waffles. You wander into the diningroom only to marvel at the perfect pattern of squares sprinkled across a plate of Belgian waffles. Fresh strawberries and whipped cream are set out and you grab a plate and dig in! Well, Belgian waffles don't need to be a dream. This month, I present my favorite recipe. It features sour cream and a hint of vanilla in the form of vanilla sugar and extract. The combination results in a fluffy waffle that's both sweet and creamy. The texture is perfect for holding a serving of fresh, juicy strawberries and a dollop of whipped cream my personal favorite accompaniments! I used to think that Belgian waffles were weekend fare until I realized that they freeze well. This recipe makes 8-10 waffles and unless you have a full house, there will probably be leftovers. Just lay a sheet of waxed papper between each waffle and pop them in a resealable plastic freezer bag. Then, when you get the urge to have them during the week, take them out and toast them in a 350 degree oven for 15-20 minutes or pop them in your toaster for a really quick treat. You can also microwave them, but you lose some of the crunchy outer texture.

Two new cookbooks celebrate cuisine a la biere
My most treasured cookbook, a now-battered paperback, contains no fewer than 19 recipes for beef "aromatised" with beer. So much for the idea that the only one is carbonade Flamande (though in the cool of autumn that classic stew is a fortifying dish, especially with Belgian fries, cooked twice, in horse lard). Nor is the use of beer in the kitchen restricted to beef dishes. That cookbook, published in Brussels decades ago, in French, contains "the 300 best" recipes employing beer. All the brews used are Belgian, and they are specified according to style, ranging from pale lagers to wild-yeast brews, wheat beers and ales. (Recipes that just specify "beer", wherever they appear, are not worth pursuing). The book is called "La Cuisine au Pays de Gambrinus." Who was Gambrinus? The name is a corruption of Jan Primus, the first Duke of Flanders and legendary King of Beer. A brand-new, large-format, beer cookbook from Belgium restricts itself to about 70 recipes, more current in style, and is published in English. The syntax can be quirky but the recipes are easy to follow, and there are pictures of the finished dishes. The book is called "Cooking with Beer at 't Hommelhof" ("The Hop Garden"). That is a cottagey restaurant in the village of Watou. The restaurant is in a building that was once a brewery-owned dance-hall and earlier a courthouse Watou is the only place I know with a statue of a brewer in one of its main squares. He is not a named brewer, just a personification of the local art. The village is near the hop-growing town of Poperinge, not far from Ypres, and within striking distance of the Channel ports and tunnel. The Belgians call this distinct little region the West

Article from February 2002 Cook's Illustrated. Reproduced with permission. R aw Belgian endive, with its sharp and pleasantly bitter flavor, may be an acquired taste. The right cooking method, however, transforms endive into a vegetable side dish of uncommonly complex flavor - at once mellow, sweet, and rich, yet still faintly bitter. According to generations of French and Belgian cooks, braising is the cooking method of choice. Just try to find a classic French cookbook without a braised endive recipe, along with the suggestion that it accompany a simple roast chicken, veal, or pork supper.
Most recipes for braised endive follow the same protocol: Brown the endive in fat, then finish cooking it, covered, in a small amount of liquid over low heat. The challenge is to develop the deep flavor, richness, and gentle sweetness necessary to balance the endive's natural bite.
Available year-round, Belgian endive heads should have tightly packed leaves and a torpedo-like shape. The white leaves, essentially devoid of color because they are grown in the dark, are tinged slightly with yellow at the tip. It is said that if the yellow tinge is particularly deep, the endive will taste more bitter than usual. Our observations confirmed that notion when we tasted the endive raw, but we noted no effect on the flavor once the endive had been braised.

Drain. Place bacon and butter or margarine in a large covered pot or Dutch oven. Cook over medium heat until bacon is browned. Add onions; cook until golden. Add garlic, and cook for 1 or 2 minutes; take care not to burn the garlic. Remove bacon mixture from pot, and set aside. Add beef to the fat left in the pot, and brown on all sides. When meat is browned, return bacon mixture to the pot. Stir in flour, salt, and pepper. Add enough beer to just barely cover the meat. Bring to a boil, reduce heat to simmer, and cover. Cook for 1 1/2 to 2 hours. Remove pot from heat, and stir in parsley, lemon zest, and lemon juice. Serve hot.

Cooking New recipes - Belgian Style - January 2003 Featured recipe: Ingredients (serves 4)
* 1 kilo/2 1/4 lb stewing beef, cut into 2.5 cm/1inch cubes
* 2 medium size onions, shredded
* 1 bottle (33 cl) of Belgian beer, any Trappist will do
* thyme, rosemary, marjoram
* 2 bay leaves
* half litre/1 pint of beef stock
* one slice of (old) white bread, crust cut off
* mustard
Make sure they're nicely colored.
Glaze the onions in a large casserole in a bit of olive oil. Add the beef to the onions, pour the bottle of beer over it. Throw in the bay leaves and a teaspoon of thyme and marjoram and half a tsp of rosemary. Add, if necessary, some stock to cover the mixture. Spread some mustard on the slice of bread, put it on top of the beef. Bring to the boil and let simmer for about 2 hours (till soft enough). Try to avoid stirring too much (breaks up the beef). If that's what you like: thicken the sauce at the end. Season with salt and freshly ground pepper. Best prepared the night before (turn off the heat after 1.5 hours), better taste! You'll need about 1 kilo/2 1/4 lbs of soft cooking potatoes.

BELGIUM Chicken Braised in Beer with Belgian Endives (Mechelse Koekoek Op Zyn Brussels or Coucou De Malines Aux Chicons) This popular one-dish meal is a Sunday lunch favorite and is typically made as soon as the first endives of the season come to market (the season runs from September through April). A more elegant variation of this meal is to roast a whole chicken, braise the endives separately, and serve two together. But my favorite has always been to braise the cut-up chicken and endives together in Belgian beer so that they can exchange their complementary bittersweet flavors to make a truly enticing dish. Traditionally this is served with steamed potatoes, and except for some good country bread to mop up the wonderful sauce, you need not serve anything else.

History of the Breed Belgian Blue genetics come from several different areas of Europe. These countries include Belgium, England, Denmark, and Ireland. The most prodominate genetics coming from Belgium and England. There is also excellent genetics from Denmark and Ireland. Characteristics of the Blues are of course the extreme muscle, fine bone, thin skin, and docile temperament for both the bulls and cows. Bulls at two years of age average 1800-2000 pounds, with cows averaging 1000-1200 pounds. The dress-out percentage of a 1/2 Belgian Blue will average 65% to sometimes 70% hanging weight. The higher the percentage of the animal the higher the dress-out. The color of the animals are white, white with black markings, white with blue markings, blue roan, black with white markings, and a few are black. There are a few bulls that carry the red factor but this is not a common trait. The most traditional color is white.
