Hotel cooking is usually international with some Bermudian specialities such as Bermuda lobster (in season, September to mid-April), mussel pie, conch stew, fish chowder laced with sherry, peppers, rum and shark. Other seafoods include rockfish, red snapper and yellowtail. Peculiar to Bermuda is the Bermuda onion; other fine home-grown products include pawpaw and strawberries in January and February, and a variety of local citrus fruit. Traditional Sunday breakfast is codfish and bananas while desserts include sweet potato pudding, bay grape jelly and a syllabub of guava jelly, cream and sherry. There is a vast variety of restaurants, cafes, bars and taverns to suit all pockets. Service will vary although generally table service can be expected.

Off-shore in Bermuda
The new Bermuda government does not intend to pursue independence from the United Kingdom in its first term in office despite British government proposals related to, among other things, regulatory controls on off-shore business in its dependencies, Premier Hon. Jennifer Smith said in late May. The Progressive Labour Party (PLP), elected to government last November, has independence as one of its aims; but Ms Smith said it would not become a priority just because the U.K government s proposed to offer full British citizenship to citizens of dependencies which implemented prescribed policies on off-shore business, capital punishment and homosexuality. Bermuda has a strong off-shore insurance business, although it does not licence off-shore international banking as erroneously reported in Parliamentary Update of February 1999.

CACAC The North America, Central America and Caribbean Athletic Association of the International Amateur Athletic Federation (NACAC/IAAF) was founded on December 10, 1988 at an extraordinary meeting held in San Juan, Puerto Rico convoked by the area representative and attended by the IAAF General Secretary, John B. Holt. Delegates from 20 of the 32 member federations debated at length a draft text that had been previously circulated and finally unanimously approved the current statutes which were ratified at the IAAF Congress in Barcelona in 1989. The IAAF Constitution specifically provides that continental, area or group associations, confederations or committees may be formed for each of the six groups recognized by the IAAF (Rule 4.6) which shall draw up its own rules relating to its constitution and powers which shall in all cases be limited to operations within its own area and in no sense conflicting with any IAAF Rule.® The North America, Central America and Caribbean Athletic Association was the last of the six area associations to be established under that provisions. The area representative, Amadeo Francis, was elected president of the association and, after several votes failed to unlock a tie, Dr. Bernard J. Nottage (BAH) and Neville McCook (JAM) were elected co-vice presidents. Keith Joseph (STV) was elected Treasurer.
