    HATZ (Breads) CHOERAG 1 Armenian roll 1 CHOERAG 2 Armenian roll 2 ... Convert US weights to metric CHOERAG -Sirna Piligian
    (Armenian roll) 3 cups lukewarm milk
    1 cup melted shortening
    1 cup sugar
    few dashes cinnamon
    1 heaping tsp. mahleb, crushed (opt.)
    1 tsp. salt
    1 yeast cake
    1 cup eggs
    1 heaping tbsp. B.P.
    11-12 cups flour Heat milk, set aside. Blend shortening, sugar, cinnamon, mahleb, salt, yeast cake, eggs, baking powder and milk together. Add flour a little at a time and mix and knead together. Dough will be a little sticky. To test, roll a piece of dough in hand. Press down; if it springs back, it is ready. Cover and let rise overnight. roll into desired shape by using small amounts of dough. Put on greased pan (about 12 on each pan). Put same shape on each pan so that it will cook evenly. Let rise again for 2-3 hours. After rising, brush tops with mixture of 1 egg and 1 teaspoon sugar and sprinkle with sesame seeds. Bake in preheated oven of 400F for 10-15 minutes. Put on the bottom rack of oven until bottom is browned and then move to higher rack.

    Globe Peqout Press $35/176 pages From the moment I first opened Country Breads of the World (called simply Country Bread when originally published in England, hence the cover you see above) quite at random to the wonderful photograph of Pierre Koffmann I felt as if I had stepped into a magical place. Nothing has changed my mind since. No bread book I know manages to be quite so welcoming and instructive at the same time or, really, so charming. (This last quality is due in part to the breadbakers themselves, who are a fascinatingly various lot, and in part to the immediacy of Anthony Blake's photographs, some of which continue to haunt the imagination long after the book is shut.) I'm very flattered to find myself standing at the doorway, beckoning readers in. I'm also quite ashamed of myself for not reviewing the book sooner. The problem has been trying to find the right words really, to pull together lots and lots of impressions in some kind of sensible way. There are numerous individual points worth making, but the single most impressive thing about the book for me is how it has taken the various aspects of bread baking milling the grain, developing the leaven, working and shaping the dough, and finally, of course, baking the loaf and made each one of them the beginning of a section of their own instead of lumping them into one big chunk at the beginning.

    Pumpkin Bread Ingredients 8 oz wholemeal flour 3 tsp baking powder 4 oz of vegetable margarine 4 oz of raw cane sugar 1/2 lb cooked pumpkin 2-3 tbs milk 3 oz raisins 1/2 tsp freshly greated nutmeg Method
    Sift the flour and baking powder. Cream the margarine and sugar together in a bowl. Mash the cooked pumpkin until smooth and add the creamed mixture. Fold in the sifted ingredients and moisten with the milk. Finally, stir in the nutmeg and raisins. Spoon the misture into a greased 2 lb loaf tin and bake for 30-45 minutes at 350 degrees f. Grater Cakes Ingredients 1 large coconut 3-4 slices fresh root ginger 1 1/2 pt (850 ml) water 1 lb (450 g) raw cane sugar Method
    Peel and grate the coconut and the peeled fresh ginger. Pour the water into a large heavy based saucepan, add the coconut and ginger and simmer on a low heat until the water is reduced to about 1/2 pt (275 ml). Add the raw cane sugar and once dissolved boil hard stirring continually until the mixture becomes thick and, if a little is dropped into cold water, will harden imediately. Drop spoonfuls of this onto a lightly oiled tray and allow to cool. Molasses and Cornmeal Bread Ingredients 6 oz cornmeal 2 oz wholemeal flour 4 tsp baking powder 1/4 tsp freshly grated nutmeg 1/4 tsp ground cinnamon 4 oz vegetable margarine 2 tbs molasses 2 tbs milk 4 oz grated coconut Method
    Sift the cornmeal, flour, baking powder and spices together in a bowl. Melt the vegetable margarine and molasses in a saucepan and pour on to the dry ingredients. Stir in the milk and grated coconut. Mix Well. Pour the mixture into a greased 2 lb loaf pan. heat the oven to 350 degrees f. and bake the bread for 35 - 40 minutes until well risen.

    1 Medium Loaf
    1 1/2 tsp. yeast
    1/3 c. non fat dry milk powder or buttermilk powder
    2 c. bread flour
    1 c. oatmeal
    1 1/2 tsp. salt
    2 tbsp. sugar
    4 tbsp. margarine or oil
    1 c. warm water Place into bread container in order given. Choose setting on machine. Options: Add 1/2 teaspoon cinnamon and 1/2 cup raisins after the first mixing cycle. The machine should beep at the correct time. Bread Machine Potato Bread 1 small potato, peeled and halved 3 tablespoon vegetable oil 2 tablespoon granulated sugar 1 1/2 teaspoon salt 3 cup all-purpose flour 1 1/2 teaspoon quick-rising dry yeast (or 1 1/4 tsp. bread machine yeast) In saucepan of boiling salted water, cook potato for 10 to 15 minutes or until tender; drain, reserving 3/4 cup cooking water. Mash potato well to make 1/2 cup. Let potato and cooking liquid cool to room temperature. Remove baking pan from large ( 1 1/2 to 2 lb.) bread machine. Add to pan (in order) cooking water, oil, sugar, salt, mashed potato and flour. Sprinkle yeast over top, making sure yeast does not touch water mixture.

    Starting Your Starter (for Sourdough)
    Sourdough starters have a history going back to ancient Egypt, when people discovered how to use the strains of wild yeast in the air around them to leaven and flavor their bread. You can develop your own sourdough starter with minimal trouble, using either commercial yeast or wild yeast strains. 1. Be sure to use non-chlorinated water. Chlorinated water will destroy the very organisms that you want to nourish. Use filtered or spring water rather than normal tap water. 2. Don't starve your yeast. Even if you don't see any activity, feed your starter every 24 hours by adding additional flour and water. This will help keep your yeast active and prevent mold and other bacteria from taking over your starter. 3. If you notice that the amount of starter is decreasing, go ahead and feed the starter again, even if it's before the scheduled feeding time. This will prevent the yeast from running out of food and dying off.
