Building on previous knowledge, students learn to mix, shape, bake, store, and distribute breads and rolls. Emphasis will be placed on increased use of traditional fermentation methods, equipment, and methods that emphasize flavor, texture, and appearance as well as techniques that increase shelf life. This course offers the opportunity to learn the principles and techniques of preparing multi-grain breads, sourdoughs, bagels, pretzels, holiday or seasonal breads, and flat breads. Cut in half the time it takes for bread dough to rise by following these simple ideas: 1. Prepare the dough as the recipe directs. Place it in a bowl and cover it with plastic wrap. Pour hot water in a second bowl and place the bowl with the dough on top of the bowl with the water. 2. Preheat your oven to 200 degrees then turn it off. Place a pan of boiling water on lower rack and covered bowl with dough on top rack. The dough will rise in about half the normal time using either of these methods. Lisa Stephenson, who began cooking at the tender age of nine, is one of the latter. Her pleasure comes not so much in eating her freshly baked foods herself but rather in watching others enjoy the fruits of her labors. "I love baking and watching the expression on people's faces when they bite into something I've made," she says. For more than three years now, Lisa has been creating baked goods for customers at Barn'rds restaurant. She came there from the Litehouse Grill after it closed. The owner had called Ken Hertel at Barn'rds to see if they could use Lisa, and Ken accepted enthusiastically.
"She was a great find for us," he says.
Lisa feels like part of the family. "I love the atmosphere, the people and the place! The Hertels are great to work for," she says. In addition to Lisa's breads and cookies, which she bakes fresh daily, customers can expect the freshest in sandwiches and salads.

  • Water or milk (whole, skimmed, evaporated or reconstituted nonfat dry) are most often used for breads. Water makes the crust crisp, while milk produces a soft crust and a creamy-white crumb. The liquid must be at the correct temperature; if it is too hot, it will kill the yeast; if it is too cold, the dough will take longer to rise. Many different kinds of fat (butter, margarine, shortening, salad oil or lard) can be added to bread dough to improve flavor and make the dough stretch more easily. The bread will have a tender crumb and stays soft longer. Eggs added to a yeast dough add flavor, color and nutrition. They soften the crust and give the interior a fine crumb. Do not try to speed up the yeast in bread dough by increasing the amount of flour, sweetener or salt, or by adding ingredients. These will only make the bread heavier. To test the rising of the yeast dough: The dough is doubled when two fingertips pressed 1/2 inch into it leaves dents that remain. If dents fill in quickly, let rise 15 minutes longer and test again.

    In our busy, hectic lives it is hard to find enough time to cook for a special diet. We have to make it easier on ourselves in every way we can. Using commercially prepared foods that will fit your allergy diet is a great time-saver. Shop at a large health food store, if possible, for crackers, pastas, canned goods, soups, breads, and cereals that you can eat. Or, 5 Years Without Food: The Food Allergy Survival Guide contains a listing of sources of commercially prepared foods for allergy diets that you may be able to mail order directly or have your health food store get for you. (Click here for more information about the book) A bread machine can also lighten your workload by making yeast breads, non-yeast breads, and cakes with very little effort on your part. Usually you just add the ingredients to the machine, push a button or two, and come back to a wonderful treat.. The question I am most often asked about bread machine baking for an allergy diet is, “What machine should I buy?” If you wish to bake spelt or kamut yeast breads or egg-containing rice yeast breads, almost any bread machine will work for you. You can make non-yeast breads with spelt, kamut, rye, barley, rice, or quinoa flour (or even wheat flour!) using a bread machine with a non-yeast cycle. Several companies make machines with quick bread or cake cycles for non-yeast breads. A few of these machines mix the dough for a very long time before baking. The ideal mixing time for the recipes in the books from which this website is excerpted is 3 to 4 minutes. If your machine mixes longer than 4 minutes, add the oil to the flour mixture, but delay adding the other liquid ingredients until about 2 minutes before the end of the mixing time. For example, if it mixes for 6 minutes, rather than adding the liquids 1 1/2 to 2 minutes into the cycle, wait until 4 minutes after you start the machine.
