An Excerpt T HE BUTTER TART is the quintessential Canadian sweet, our national pastry. Though the exact date of its invention is lost, the butter tart was first documented in 1903, appearing in recipe books compiled by the Canadian food companies Ogilvie's and Five Roses from recipes sent to them by families across Canada. This mouthwatering delight has had many imitators through the years, but the secret to a real tart lies in two not-so-secret ingredients: its enticing good looks and raisins, in no special order. Experts say that a real butter tart should stick to the ribs as well as the fingers, and raise the national pride quotient in any pastry lover. Many share the view of Charles Pachter, one of Canada's leading contemporary artists. When asked to write an essay for an Ottawa newspaper about what he would do if he were prime minister, Pachter wrote that he would require all foreign dignitaries to be served butter tarts at all diplomatic functions at home and abroad.
