Black-Eyed Peas with Canadian Bacon Serves 16 1 pound dried black-eyed peas, sorted for stones and rinsed
4 ounces Canadian bacon
2 medium onions
2 ribs celery
6-ounce can no-salt-added tomato paste 1 small bay leaf 1 medium clove garlic, chopped, or 1/2 teaspoon bottled minced garlic 1/4 teaspoon cayenne Pepper to taste Put peas in a large saucepan and add water to cover. Soak for 45 minutes. Meanwhile, dice Canadian bacon and chop onions and celery. Drain peas and return them to saucepan. Add just enough fresh water to cover. Add all other ingredients. Bring to a boil over medium-high heat. Reduce heat and simmer, covered, for three hours, or until tender. Serves 2 Ingredients: 1/2 cup Beef stock
2 tablespoons Gin
2 tablespoons Balsamic vinegar
2 teaspoons Juniper berries, crushed
1 teaspoon Vegetable oil
2 Beef tenderloin steaks
1/2 teaspoon of coarsely ground black pepper
Salt to taste
  • In a measuring cup, combine beef stock, gin, vinegar and juniper berries. Set aside.
  • Brush or rub steaks with vegetable oil. Press pepper onto the steaks with vegetable oil. Press pepper onto the steaks and season with salt. Heat a medium-sized cast-iron or heavy skillet over high heat until nearly smoking. Place steaks in the heated pan and cook for 2 to 3 minutes per side, or until browned on the outside but still pink inside. Transfer steaks to a plate and keep warm.
  • Reduce the heat under the skillet to medium and add the reserved stock mixture to the pan. Cook, stirring to scrape up any brown bits on the bottom of the pan

4 tbsp. unsalted butter
225g unsalted dry roasted peanuts
3 tbsp. diced garlic
3 tbsp. fresh diced ginger
1 medium onion, diced
1 red pepper, halved and cored then sliced into long thin strips
1 green pepper, halved and cored then sliced into long thin strips
250 ml smooth peanut butter
60 ml soy sauce
175 ml Canadian whisky 375 ml chicken broth Pat chicken breasts dry and season with salt and fresh cracked pepper Melt 2 tbsp. of butter in a large skillet over a medium high heat. Cook the chicken breasts, three at a time in the butter for 3 minutes per side or until a nice crispy brown exterior developed, turning only once. Add more butter between the two batches of chicken breasts if necessary. Put the chicken aside on a plate and tent with tin foil. Add remaining butter and dry roasted peanuts. Sauté for 1 minute. Add onion and ginger, sauté for 5 minutes. Add garlic and sauté an additional 30 seconds.

Style and function in new kitchen gadgetry. Mechanical timers and bland colours are not flavours of the month where it comes to kitchen utensils in Canada. Today's cooking implements have to be versatile and value-for-money, with consumers looking for attractive colours and ease of function. With home styles to the fore, stylish and well-equipped kitchens are becoming increasingly common, meaning that appliances have to fit in with latest fashions, which might take their cue from clothing, the motor industry or cosmetics! For example, retro toasters are appliances with bagel-toasting functions, as well as electronic cancel and defrost capabilities. Toasters with digital displays showing precise toasting levels with set-and-shade memories are becoming more and more common. According to Canadian market tracking firm NPD Intelect, the toaster category has increased in both numbers of units sold and average prices. The four-slice device posts better results than others. For the 12 months ending June 2002 total units sold rose 17%, while sales revenues hit 15%.

Beef Cut Labelling - Voluntary New Cooking Method Labelling System
A task force, comprised of members of the Consumers Association of Canada, the Canadian Council of Grocery Distributors, the Canadian Meat Council, the Beef Information Centre, and Agriculture and Agri-Food Canada, has developed a voluntary new system for the provision of appropriate cooking method information on the label of retail beef cuts. Cooking methods proposed include grilling steak, marinating steak, simmering steak, pot roast, premium oven roast, oven roast, and stewing beef. Terms, which include the required common name of the meat cut (e.g. "Sirloin") and the corresponding cooking method (e.g. "grilling"), have been developed and are listed in a "Retail Meat Scale Library" which is available from:
