    CRAB LASAGNA ROLLS
    1 package (8 oz.) dried lasagna
    2 tsp. olive oil
    1 onion, chopped
    1/4 pound mushrooms, sliced
    1 clove garlic, minced
    1 tsp. dried basil
    1/2 cup fat-skimmed chicken broth
    1 1/2 tsp. cornstarch
    1 package (8 oz.) cream cheese
    1/2 cup sour cream
    1 can (14 oz.) artichoke hearts, drained and chopped 3/4 pound shelled cooked crab salt and pepper 2/3 cup shredded jack cheese 2 tbsp. thinly sliced green onion In a 5-6 quart pan over high heat, bring about 3 quarts water to a boil. Add lasagna and cook just until tender to bite, 10-12 min. Drain and rinse w/ warm water. Mix broth and cornstarch. Pour into pan and stir until boiling. Add cream cheese and stil until melted. Mix in sour cream, artichokes, and crab. Add salt and pepper to taste. Remove from heat. Lay noodles flat. Divide all the crab mixture equally among noodles and spread the length of each strip. Roll noodles from a narrow end around filling. Set seam down, in a single layer, in a shallow 3-3 1/2 quart casserole. Cover with foil. SUBMITTED BY DENISE B.

    A Wisconsin Art Form Storing Your Wisconsin Cheese To keep cheese purchases at their peak once you get them home, they must be stored properly. In general, unopened cheese stored in the refrigerator between 34'F and 38'F will retain quality even beyond any freshness date stamped on packages. The key lies in keeping it tightly wrapped or sealed to prevent exposure to air and airborne, natural mold spores. Once you open the manufacturer's packaging, follow these guidelines.
    • Fresh cheeses, such as Cottage, Cream, and Mascarpone, are high in moisture, which makes them more perishable than firmer cheeses. These cheeses should be kept tightly sealed and cold and used within two weeks.
    • Semi-soft, firm, and hard cheeses wrapped tightly and stored in the refrigerator remain fresh for four to eight weeks. Some aged cheese may be held even longer under proper storage conditions.
    • Hard cheeses, such as Parmesan and Asiago, should be stored in grated form in sealed containers in the refrigerator for up to two weeks. Freeze for longer storage and use directly out of the freezer.

    Coffee Recipes Cooking with Coffee
    Frozen Coffee Parfait
    Makes 6 to 8 servings. We recommend one of the following coffees for this recipe: Yemen Mocha, Mexico Bourbon de Coatepec, or, Java Blawan Washed. In a large bowl, combine the sweetened condensed milk and the coffee with mixer on high whip for three to five minutes and then, by hand, fold in the whipped whipping cream. Make sure the mixture is evenly distributed. 1 14 oz can sweetened condensed milk Spoon the mixture in 6 to 8 serving dishes, then freeze for 3 hours or until firm. 1/3 cup double strength coffee (sweetened with 4 tablespoons of sugar while hot) allow to cool before using Garnish before serving with a chocolate covered coffee bean and chocolate syrup if desired. Return leftovers to the freezer. 1 cup whipped heavy whipping cream
    Serves 10 to 12 depending on the thickness of the slices 1 Pillsbury or other Moist Cake mix (the kind with pudding in the mix) Milk Chocolate or German Chocolate Instead of beating only at low to medium speed with the mixer, use low speed to blend the ingredients and then, using high speed, beat the batter for 3 to 5 minutes till it is fairly fluffy.

    I searched my recipe files and found these 19 recipes. The criteria I used was that the recipe had Cottage Cheese, with less than 10 grams of fat and no sugar. I don't have the opportunity to screen each recipe I send, so hopefully my software functioned properly and you will have some recipes that might work for you.

    Preparation Time: 0:00 Amount Measure Ingredient Preparation Method 1 1/4 cups Quick oats 1/4 teaspoon Cinnamon 1 cup Cottage cheese 3 Eggs 1/2 cup Pineapple juice 1 teaspoon Grated orange rind 1 cup 16 oz apricot halves drained 1/4 cup Melted butter or margarine 1/8 teaspoon Ground nutmeg 1 package Reduced calorie cream cheese 1 teaspoon Vanilla extract 3/4 teaspoon Cornstarch Combine oats,butter,cinnamon and 1/4 tsp. nutmeg in a small bowl.Press mixture onto bottom and up sides of a 9" pie plate. Bake @ 425 degrees for 7 to 10 minutes,until lightly browned. Meanwhile,combine cottage cheese and cream cheese,eggs,dates, 1/3 cup pineapple juice,vanilla extract,orange zest and remaining nutmeg in a food processor or blender.Blend until well mixed. Pour into cooled crust and bake @ 350 degrees for 30 to 35 minutes until filling is set.Chill at least one hour. Combine remaining pineapple juice and cornstarch in a small saucepan.Heat to boiling.Boil 1 minute,stirring constantly,until thickened and clear.Arrange drained apricot halves on top of cheese filling and spoon pineapple glaze,evenly,over apricots. Refrigerate until glaze is set.
