Swiss cheese, shredded 1/4 pound Gruyere cheese, shredded 1/4 pound Cornstarch 1 tablespoon Garlic, peeled 1 small clove Dry white wine 1/2 cup Lemon juice 1/2 tablespoon Cherry brandy - Kirsch 1/2 tablespoon Dry mustard 1/4 teaspoon Nutmeg A pinch White asparagus tips, trimmed and cut into 2-inch spears with tip 1/2 pound Green asparagus tips, trimmed and cut into 2-inch spears with tip 1/2 pound
METHOD OF PREPARATION 1. In a small bowl, coat the cheese with the cornstarch and set aside. Rub the inside of a ceramic fondue pot with the garlic and discard the garlic. Over medium heat, add the wine and lemon juice and bring to a gentle simmer. Gradually stir the cheese into the simmering liquid. 2. Note: Melting the cheese gradually encourages a smooth fondue. 3. Once the cheese is smooth, stir in the cherry brandy, mustard and nutmeg. In a pan of boiling water, cook asparagus spears for 3 to 4 minutes, or until they are tender. Transfer them with a slotted spoon to a bowl of ice-cold water to stop them from cooking.

48. ! Lasagna Recipes: Italian Zucchini Lasagna
A meatless lasagna recipe that uses cheese with a selection of vegetables.
http://www.cooking-italian-food.com/zucchini.htm
Lasagna Recipes
Italian Zucchini Lasagna
Lasagna Ingredients
  • 1 lb. lasagna noodles, cooked
    1 16oz can(1 lb.) stewed tomatoes
    3 or 4 lg. zucchini
    grated parmesan cheese
    1/2 lb. mozzarella cheese, shredded
    3/4 C. chopped onion
4 to 6 cloves garlic, chopped or minced
1 sm. can tomato paste 1/2 cup sliced mushrooms
    1 lb. lean ground beef
1/2 tsp. oregano 1/4 tsp. thyme 1/4 cup fresh basil/chopped ground pepper optional: 1/4 cup red wine Cook lasagna noodles according to package directions or until tender but still firm. Drain, keep warm. Meanwhile, to make lasagna sauce, saute ground beef, garlic and onion is a large heavy skillet or cast iron frying pan until beef is done. Add sauce, mushrooms, oregano, thyme, basil, wine or 1/4 cup water, touch of pepper and mix well. Simmer 45 to 50 minutes. To prepare Zucchini for this recipe, cut in half or cook whole in a large covered pot with 1 to 2 inches of water. Boil gently for about 5 minutes, drain and cut lengthwise into 1/4 inch slices. Grease a 9" x 13" or larger, baking pan. Arrange a first layer of noodles so the ends hang over both sides of the pan. These will be folded back-over the top on the final layer. Next, add a layer of the cooked zucchini, a layer of lasagna sauce, a layer of mozzarella cheese. Repeat. For the top layer, fold the ends of the pasta from the first layer over the top and add more sauce. Top with parmesan cheese and cover with foil. Bake at 350 degrees for about 35 to 40 minutes, uncover and bake until brown, approximately 10 minutes. Serve this Italian food with french bread and have additional parmesan cheese at the table.

http://www.goodcooking.com/amcheese/amcheese.htm
Ahh, the power of Cheese!™
Thanks to The A merican Dairy Association for allowing Good Cooking to reproduce their Cheese appreciation Guide! Limburger Cheese: I ran away from the kitchen every time my mother and father ate it! It was a special treat to them when my grandfather returned from visiting relatives in the Yorkville area of New York City with bricks of the "smelly stuff", as I called it. In fact I didn't like cheese at all, well, except Velveeta! You should see what I eat now, some that put that Limburger smell of my childhood to shame. French and Italian cheeses have long been cherished by the people of those lands and thanks to many factors they are available all over the world these days. In fact most American cheese production copies the methods and techniques of European cheese manufacturing. American cheddar is a good example. Cheddar is a town in England where this firm, yet crumbly, sharp, and slightly salty cheese was born and where its name comes from. Cheddar from all across the United States, whether from Vermont, New York or Oklahoma, derive from this. Blue cheese from Denmark is cloned in Iowa as Maytag Blue. Brie from France is produced in Wisconsin. And so the cheese crumbles across our country. American Dairy Association Here are a few of Good Cooking's favorite American made cheeses.
