I'm wild about Dutch oven cooking! For that reason I've put this page together to share my Dutch oven cooking tips Dutch oven recipes , and a few links to my favorite Dutch oven cooking pages. If you are new to the world of Dutch oven cooking, I have put together a page of Dutch oven cooking tips covering topics such as what to look for when purchasing a Dutch oven, different types and makes of ovens, caring for your Dutch oven, and regulating Dutch oven cooking temperature. I also cover some of the tools that will make Dutch oven cooking a little easier, and offer some tips for cooking.
Try some of the Dutch oven recipes listed on my recipes page and send me your comments.
Tina and I having fun at a Payson Onion Days cookoff. Dutch oven cooking is a fun way to socialize with people and make some new friends. There's nothing I enjoy more than getting my ovens out to cook up something special for an evening get together with family and friends. Hopefully by sharing a few tips and recipes I can encourage others to join in the fun.

I am a Wood Badge trained scouter and have been working as a leader in the Boy Scouts of America for a number of years. I have worked in all four families of Scouting and currrently serve on the Boy Scout Troop Committee. Here are a couple of links to some great scouting resources online! US Scouting Service Project - This is the best site of its kind I have seen! Information for Cubs, Boy Scouts, and their leaders. Gary Hendra's MacScouter - terrific all-around Scouting Site by a devoted scouter.
Among my favorite hobbies is Dutch oven cooking . I have several recipes to share with you if you are interested in learning about this skill. All it takes is practice, and who doesn't like to eat? The worst you can do to your food is burn it. Otherwise, it just takes some patience and a little experience to make something really delicious. For several years I have taught a class with some friends, on Dutch oven cooking for Scouting Leaders at the BYU/UVSC Merit Badge Pow Wow in November. We give out recipes every year.

    SCOUT COOKING
    I became interested in scout cooking after seeing my son's patrols menu for an upcoming outing. I knew there had to be more to scout cooking than beans and franks, sandwiches and cold cereal. I started with two recipes for Dutch oven cooking. I now have assembled a book with about 200 recipes for Dutch ovens. My son has even competed in a few cooking events now.

    Dutch Oven Enchilada Pie - Dick Hill
    2 lbs ground beef
    1 onion chopped
    1 tsp salt
    1 can (10 oz) condensed tomato soup
    2 cans (10 oz) mild enchilada sauce
    1 cup water
    9 flour tortillas (8 inch)
    2 cups grated cheddar or mozzarella cheese Green onions, chopped Sour cream Brown in Dutch oven ground beef, salt, onion. Drain off drippings. Add tomato soup, enchilada sauce and water. Simmer mixture 5 minutes. Spoon off into a medium bowl. Layer meat mixture, 3 tortillas and cheese. Repeat three times ending with cheese. Sprinkle with chopped green onions. Cook until cheese melts and tortillas soften about 7 to 10 minutes. Serve with sour cream. Grand Junction Omelet - Jeff Currier 20 Large Eggs 1/2 to 1 lb Bacon, cut up in 1" pieces

    STEAK SOUP
    1-1/2 lbs. lean ground beef
    2 c. diced onions
    1 c. diced carrots
    1 c. diced celery
    1 tbsp. minced garlic
    3 cans (13 or 14 oz.) chicken broth
    1 can (16 oz.) crushed tomatoes
    1 tsp. red pepper sauce (can use flakes 1/2 tsp.)
    2 tbsp. Worcestershire sauce
    1/2 tsp. freshly ground pepper
    1/4 c. margarine 1/2 c. flour Brown meat in Dutch oven over med-high heat. Drain and rinse. Add onions, carrots, celery and garlic to meat. Cook 10-12 minutes until vegetables are softened. Add broth, tomatoes, red pepper sauce, Worcestershire sauce and pepper; bring to a boil. Reduce heat, cover and simmer 15 minutes. Meanwhile, melt margarine in small pan. Stir in flour. Cook over med-high heat until deep brown. *note, it may seem like it scorches, but it needs to be dark. Whisk into soup. Cover and simmer 15 minutes more. Makes 11 cups. SUBMITTED BY CHRIS M.     BLACK EYED PEA SOUP
    1/2 pound sliced bacon
    2 cups diced celery
    2 cups diced green peppers
    2 cups diced onions
    1 can beef broth
    2 cans whole tomatoes
    2 cans black-eyed peas
    In large Dutch oven, cook bacon until crisp; remove with slotted spoon, drain on paper towel. Add celery, green pepper, and onion to bacon drippings; sauté until soft, about 5 minutes. Drain off excess drippings. Add beef broth to Dutch oven; bring to boil. Add tomatoes and black-eyed peas; bring to boil again, then lower heat and simmer 30 minutes. Serves 10.

    1/2 teaspoon nutmeg
    6 whole cloves

    6 apples, peeled, sliced
    2 teaspoons Dijon mustard
    1 cup shredded cabbage 1 3/4 cups low sodium chicken broth, warm 1 cup applesauce Spray large Dutch oven with vegetable cooking spray and heat over medium high temperature. Add chicken and cook, turning to brown on all sides, about 10 minutes. Sprinkle with nutmeg, salt and pepper. Spread mustard over chicken pieces; add warm broth, vinegar, cloves and carrots; bring to a boil. Cover, reduce heat to low and cook 15 minutes. Add apples and cook 5 minutes. Add cabbage, stirring into liquid. Cook, covered, about 10 minutes more or until fork can be inserted in chicken with ease. With slotted spoon, remove chicken and vegetables to warm serving bowl and keep warm. Into liquid, stir applesauce; boil on high temperature 5 minutes and pour over chicken and vegetables. Serve with brown rice, if desired. Makes 4 servings. Per Serving: 159 calories; 19.8 g protein; 2.2 g total fat; 0.6 g saturated fat; 14.8 g carbohydrates; 49 mg cholesterol; 574 mg sodium.
