Simply put, I am not a great outdoor cook. The only real advice I have is from Smokey Bear: Only you can prevent forest fires. Do not leave a fire unattended. Make sure the fire is completely out before you leave. Put water over the campfire remains. Stir with a stick. Then douse with water again and stir.

Most Dutch Ovens are a cast-iron pot 10 to 12 inches wide and a few inches high that sits on hot charcoals in a campfire. (Lighter aluminum Dutch Ovens is available but not recommended.) Three-legged Dutch Ovens are the preferred design, allowing them to perch easily over the coals. When using charcoal briquettes, heat is controlled by placing 1 briquette under the pot for every 25 degrees of heat required by the recipe. Coals are sometimes placed on the lid as well, which can also be used as a skillet or griddle when placed upside down on the fire or stove. For easy cleanup, the bottom and the sides of Dutch Ovens are often lined with aluminum foil. Whether baking or boiling, a Dutch Oven is always used with the lid on to prevent ashes from falling into the food. Cooking gloves or hot-pot tongs are always used when removing the lid or handle any part of the hot oven. A wooden or bamboo spoon is best for stirring. A Dutch Oven won't rust if it is correctly "seasoned" with oil before use and properly maintained and kept dry. Never scrub Dutch Ovens (or any other cast iron appliance with soap. Store Dutch Ovens in a warm, dry place with the lid cracked so air can circulate. While appearing to be indestructible, Dutch Ovens can shatter if dropped on a hard surface, or crack if cold water is poured into them when too hot.

I became interested in Dutch Oven Cooking in the waning years of the twentieth century. I was originally drawn to this type of cooking through my interest in American History. Dutch Ovens have a long history in America, and were in common use well into the 1900's. Paul Revere is often credited with standardizing the design of Dutch Ovens. A Dutch Oven accompanied Lewis and Clark on their famous Expedition, and the Dutch Oven was the cooking implement of choice for the westward bound pioneers and on the chuck wagon of the Old West. I like cooking, so long as I can do it outdoors. Dutch Ovens are a natural for that. I have cooked everything from breads to desserts in my Dutch Ovens. If you are interested in this historic cooking method, I hope you will give these pages a look as they celebrate this historic cooking method. Then go out and get a Dutch Oven (or two) yourself, and begin your own adventure.

    INGREDIENTS: INSTRUCTIONS: In a large pot, fry a little oil (2 tbps) and add the onions. Fry a few minutes, and then add all other ingredients. Cook over medium heat till beef is cooked. Then heat on low and cook 6-7 hours till the beef has broken down. Serve with mashed potatoes or noodles. Smaakelijk eten!

    INGREDIENTS: 2 cups split green peas 3 quarts cold water 1 pig's foot (or ham bones) 4 slices thick-cut bacon, cut into squares 4 frankfurters (use your favorite sausage) 1 pound potatoes 1 celeriac, diced 1 cup celery, chopped 2 leeks, well washed and chopped 2 onions INSTRUCTIONS: Wash the peas, soak them for 12 hours (unless you use quick cooking peas), and boil gently in the water they were soaked in for at least 2 hours. Cook in this liquid the pig's foot, and bacon for at least 1 hour. Add the sliced potatoes, salt, celeriac, leeks and celery; cook until everything tests done and the soup is smooth and thick. Add the sausage during the last 10 minutes. The longer the soup simmers, the better the flavor. Three hours is usual. The soup thickens -so much it can almost be cut - as it cools. Smaakelijk eten!!!!!
