Davis Arts Center
Born and raised in Egypt, Shayma Hassouna is a Muslim woman who is on a mission to find peace. Her father was a professor of plant pathology and a mother a genetic engineer, and together they raised Shayma to think for herself and to always be kind to others.
Today, Shayma and her family are active Muslim residents of Davis. Having moved to America 10 years ago, Shayma takes pride in demonstrating her Middle Eastern culture to others but believes that it's necessary to combine all cultures in order to have peace and understanding in a world filled with so many stereotypes.
With a desire to educate others about the ways and traditions of the Middle East, Shayma created "Reach Out and Touch: Exploring the Middle East," a 6 week class that is taught at the Davis Art Center. Each week, Shayma and students discuss superstitions, music, politics and the roles of women in Egypt. While one special class each semester is devoted entirely to cooking an authentic Middle Eastern dish.
Together the students learn that Middle Eastern Culture revolves around food and that love is expressed by the food and hospitality one shows towards guests.

Middle East Times staff If good Egyptian food made with fresh local ingredients is what you're after, then Alfi Bey in downtown Cairo is hard to beat. Established in 1938, as the new gold lettering outside states, the restaurant originally catered to Cairo's former elite, and had a reputation as one of the best places in town. The recent facelift to the façade means that it has lost its simple classic look, but at least the waiters are the same friendly old-timers and the cook of the last 40-odd years is still there. Now the restaurant is patronized by tourists looking for authentic local dishes, Egyptians who are still unconvinced by American fast food, and today, a Gulf Arab family have also put in an appearance. White linen tablecloths, original marble-tiled floors and the waiters' stylish wine-colored jackets help preserve some of the old ambiance. The menu is still written in French and Arabic, as it was originally, and the waiters can give any explanations if necessary. My dining companion and I decide against the choice of three soups, which seem more suited to the winter months, and instead ordered dolma, a selection of stuffed vegetables, along with a plate of tahina as an accompanying dip and a mixed salad. The neat tubes of zucchini and eggplant together with baby peppers, all filled with herby rice are attractively arranged and taste delicious. The lightly-dressed salad is also refreshing.

You can find small, inexpensive establishments that serve good Egyptian food for only a few pounds. If you're in a hurry, try the local snack bars. While the cubbyholes off the street (which probably have running water) are generally safe. The larger cities even have Western-style fast-food chains like McDonald's and Kentucky Fried Chicken, but they're relatively expensive. In cities both food and water are safe although the change in your diet may produce short-term gastrointestinal upsets. EGYPTIAN MEALS Although Egyptian eating habits may seem erratic, most natives begin the day with a light breakfast of beans (or bean cakes), eggs, and/or pickles, cheeses, and jams. Most families eat their large, starchy lunch around 1400-1700 and follow it with a siesta. They may take a British-style tea at 1700 or 1800 and eat a light supper (often leftovers from lunch) late in the evening. Dinner parties, however, are scheduled late, often no earlier than 2100, with the meal served an hour or two later. In restaurants lunch is normally 1300-1600, dinner 2000-2400. Restaurants In Egypt, as in the rest of the world, restaurants are only as good as the cooks they employ, and cooks seem to be continually changing. For current information on the best restaurants, the expatriate community is unbeatable, and the magazine Cairo Today includes monthly tips listing places to try, and publishes an annual dining guide. Most establishments use native ingredients and will offer fruits and vegetables in season. Menus are in both Arabic and English except in Alexandria, where they are in Arabic and French. In large restaurants, the maitre d'hotel will speak English, French, and possible German, Italian, or Greek. These establishments serve a mixture of international cuisine but often include Egyptian or Middle Eastern fare as well. Most hotels also maintain 24-hour coffee shops.

    Egyptian Cooking Main Course Kushari -Lentils, rice, and macaroni mixture 1 cup brown lentils 1 cup rice 1/8 Kg macaroni 2 large onions, chopped 2 cups tablespoons oil 2 cups tomato sauce hot chili, salt Cook lentils in saltet water until tender.Strain.Cook rice in salted water until tender. Strain. Cook macaroni,preferably the small, roundvariety, strain rinse and strai again. Place these three ingredients in a cooking pot. Fry onion to a rich brown, then remove the onions onto absorbent paper and strain the oil into lentil mixture. Return the pot to the flame andcook for 7 - 10 minutes, tossing often to prevent sticking. Serve by topping each individual plate with tomato sauce and fried onions.Sprinkle with hor chili Dim'a misabbika - Tomato sauce, stewed 2 cups tomato juice 1 - 2 onions chopped very finely 5 - 7 garlic cloves, crushed 1 teaspoon vinegar cooking oil, salt, and pepper Saute onions until soft, then add garlic and fry to a pale brown. Add tomato juice and simmer for 15 - 20 minutes, until sauce is cooked and become dark. Add vinegar and seasoning and cook for 2 - 3 minutes longer Desserts and Sweets khoshaf 'ar' 'asali - Pumpkin pudding 1/4 kg sugar 1/4 kg raisins, grated coconut, almonds, hazelnuts,etc,combined
