That's among the findings of two extensive University of Nebraska Food Processing Center market studies designed to identify real-world, high-value niche markets for farmers and ranchers. An NU Institute of Agriculture and Natural Resources team conducted these studies for the North Central Initiative for Small Farm Profitability, which NU heads. The initiative includes Iowa, Missouri and Wisconsin as well as Nebraska. It is an effort to improve profitability for small- and mid-sized farms and ranches.
