This is a bouquet of the herbs the Finnish use frequently in their cooking Allspice, Bay, Cardamom, Dill, Marjoram, Parsley, Pepper and Vanilla Latyt Pancakes, Kalakukko Filled Pastries, Dark Rye Bread, Baltic Herring, Mushrooms, Perch, Emmenthal Cheese, Lingonberries, Cloudberries, Kaloa Beer, Sima Mead and flavored Vodka can be found on most of their tables. Caraway, Celery, Chives, Cinnamon, Cloves, Garlic, Ginger, Horseradish, Leeks, Mustard, Nutmeg, Onion and Thyme would complete their herb garden.
Finland, squeezed between Sweden and Russia, stretches northward, a phalanx of forests. Its foods are those that grow in humus, in shadowed nooks, in beds of moss, or swim in any of the many lakes. For more than 600 years the Finns lived under the Swedish crown, then 100 years under the Russian czars. As a result Finnish cooking is a melange, an exciting blend of influences from both West and East.
With a third of Finland within the Arctic Circle, the seasons affect the life style and diet of its people. Winters are extremely cold, with long nights from mid-November to the first of February. The summer growing season, though mostly daylight, is very short. The Finns see food as a gift from nature and are resourceful in raising, preserving, and preparing foods so they still have a fresh natural taste.

Whether you are Finnish American or a Finn who immigrated from Finland the common thread that connects us and endures the test of time and distance is the art of making and enjoying traditional Finnish foods. We all can remember times when "pulla" (Finnish coffee bread) has been discussed at length - how to braid it - what is the right consistency of the dough - raisins or no raisins - how much cardamom - what the texture of the baked pulla should be and all the different things you can bake from the dough.     By Autumn Moon Blessed Be Kitchen Witches! I hope this year's feasting season (Thanksgiving and Yule) went well for you! Right now, your house is probably overstuff with plenty of leftovers, so this column will be light on recipes and long on introduction. Those of who are not cooks, or don't enjoy cooking may ask, why food magick? Well, for one thing it's good magickal training. Think about it, you have to eat every day. If, once a day you fix a meal with awareness, putting energy into it, in no time you will have the basics of spellwork down pat. In cooking as in magick a trance-like state can be easily achieved. Baking yeast bread by hand requires at least ten minutes of kneading, this monotonous work clears the mind and you can focus on whatever goal you want your bread to symbolize. Then when it's done you internalize your goal by eating the symbol. Is this great or what? I know, I know, alot of people reading this (especially women) have issues with cooking and eating. Cooking can seem awfully backward to a feminist witch. Then there is the plague of disordered eating that effects so many woman in this sick society. For those who see cooking through the lens of Donna Reed Show, remember that food preparation was used as a tool for women's oppression, but there's nothing inherently oppressive about it. Pick one day a week to cook and make enough for the next week, or alternate cooking days with your partner. When you do cook make your kitchen un-Donna like as possible. I like to play hard rock and punk at loud volumes and dance around the kitchen. Cooking in nothing but your apron and a silly hat helps too. (Tip: Do not cook totally butt-naked. Hot grease splattering delicate parts is a lesson you need only learn once.)

    A Finnish banqueting table provides a good general picture of Finnish food. It's a Swedish-type smorgasbord, but with a Finnish flavor.
    The traditional selection includes salted salmon or whitefish, and spiced and salted herring or Baltic herring with a choice of sauces. Finnish fish aspics are second to none and Finnish vendace, whitefish and burbot roe is on a par with caviar. The fish is eaten with hot boiled potatoes. Potatoes are a staple food, almost as important to the Finns as to the Irish.
    Fish can be prepared in a great variety of ways, one popular method being smoking. Salmon, whitefish, bream and Baltic herring can be cold or hot-smoked, grilled, baked in paper or over an open flame. The latest Finnish invention is a smoke-curing bag.
    Koskenkorva or Finlandia vodka schnapps goes well with Baltic herring, lamprey or other types of fish. For 'cheers', Finns say 'hei', 'kippis' or the Scandinavian 'skal'.
    The fish is followed by smoked reindeer or smoked ham, meat in aspic, a root vegetable salad and homemade cheeses.
    The highlight of the table is often roast meat, but it can also be a meat casserole, such as the Karelian variety, made of different types of meat and cooked slowly in the oven.
