The Best of Finnish Cooking
Activity We don't actually know if this qualifies as a full fledged ethnic adventure but how many areas in Vancouver do you know where there is a concentration of Finnish people. We haven't gone to the Finn Slough yet, so if you do go, let us know if there really are Fins living there. As the story goes, this area on the south arm of the Fraser River was established in the 1880s by immigrant fishermen from Finland. It's still a working fishing village, with somewhere around 50 people living and working there in beach cabins and float houses. Details To reach Finn Slough, follow the trail starting at the foot of No. 5 Road and head west through Finn Slough at No. 4 road and Dyke Road. For more information call (604) 271-5220. Base of the Finnish cooking: Potatoes, meat, fish, bread (predominating rye-/ leaven bread - rye is unpretentious and frost hard) The Finnish kitchen is stamped by the climatic relationships of Finland with its long and rough winters and the short, splendid and productive summers Casseroles and stews are particularly popular in Finland (e.g. swede casserole) and offer a good opportunity to use the stove rest warmth after baking, because many bread types are baked - from round flat dough-cake breads (in the west characterized Swedish) up to leaven rye breads (typical for the east of Finland till Russia) . Also popular are groatses and mash dishes from different grain types which are served with berry mush or cream. The Finns regard their "larder nature" as a present worth to be protected.

MINNEAPOLIS / ST. PAULWant to tango? How about tango dancing with a Finnish twist?
Ralph Tuttila, a musician and dancer, will be giving tango lessons as part of FinnFest 2002, running from Wednesday, Aug. 7, to Sunday, Aug.11, at the University. Minnesota has the second largest population of Finnish-Americans in the United States with 103,603 of them, according to the 1990 Census. More than 1,500 Finnish-Americans will converge on the University of Minnesota to celebrate Finnish culture. Tuttila will give tango lessons at 3 p.m. Thursday at the university field house. The lesson costs $5 and is free for children 16 and younger.
Not into tango? That's OK, FinnFest offers a wide array of activities for anyone who wants to explore Finnish culture. Here's a sampling of the dozens of FinnFest activities in Minneapolis.

Karelian rye-crusted pastries with egg butter
Filling 2 cups water 1 cup uncooked rice 2 cups milk salt Crust 16 pastries, 1 cup egg butter
Mashed Potato and Rutabaga* Casserole
2 pounds thin-skinned boiling potatoes salt 1 pound (about 1 medium) rutabaga* 1/4 cup flour 2 eggs 2 teaspoons salt 1/2 to 1 cup hot milk or light cream 1 tablespoon butter 1/4 cup fine dry break crumbs Put the potatoes in a large pot and cover them with water. Add 1 teaspoon salt for each quart of water. Heat to boiling and cook for 20to 25 minutes. Drain, mash, and add the cooked rutabaga* to the potatoes. Beat with and electric mixer until the potatoes and rutabagas* are smooothe and fluffy. Beat in the flour, eggs, salt, and milk (or cream). Preheat oven to 350 degrees F. Butter a 3-quart shallow baking dish. Turn the mixture into the dish. Using a spoon, spread out the mixture, making indentations in the top of the casserole. Dot with the butter and sprinkle with the bread crumbs. Bake uncovered for 1 hour, or untillightly browned. 12 servings
Finnish three-meat ragout
1 pound lean lamb, shoulder or leg 1 pound lean port, shoulder or leg 1 pound lean beef round 2-1/2 teaspoons salt 1 teaspoon whole allspice 1/2 teaspoon whole white peppercorns 6 large white onions, cut into 1/4-inch thick slices Chopped fresh parsley Preheat oven to 300 degrees F. Cut the meat into 1-inch cubes. In an enamelled, cast-iron pot or other deep oven proof casserole, layer the meat, salt, allspice, whitepe ppercorns, and onion. Cover lightly. Bake for 5 hous, or until the meat is very tender. Sprinkle with chopped fresh parsley and serve over mashed potatoes or mashed potatoes and rutabagas.

    C hristmas is the most traditional of Finnish festivals. It is a time for the family, close relatives, friends without family, but above all for the children. The good old traditional dishes appear on the Christmas dining table year after year. Casserole dishes Finnish cuisine at its best can easily be made a few days beforehand.

    FRESHLY SALTED SALMON
    Preparation time: about 25 minutes
    Salting time: 1-2 days
    Not suitable for freezing
    Large piece of salmon, about 41/2 lb. (2 kg)
    2 tablespoons coarse salt
    1-2 tablespoons sugar
    1 tablespoon roughly-ground white pepper
    plenty of fresh dill
    1. Fillet the salmon unless bought already filleted. Do not, however, remove the skin.
    2. Wipe the fillets with paper towels without rinsing.
    3. Sprinkle the bottom of a suitable sized dish with salt and place one of the fillets, skinside down, on the salt. Spread the seasoning over both the fillets, placing the other fillet, skinside up, on top. Sprinkle the rest of the salt and the dill over the fish. Cover the dish tightly with aluminium foil. Put a small weight on top and store in a cool place. 4. Scrape off all the seasoning and cut the fillets down to the skin into thin, oblique slices before serving.
