Eating Fish Dateline 10/18/99 The cooler weather made me want some fish chowder, so I cleaned a few bass Sunday to make my tomato chowder recipe. I especially like it on cool days - it really helps warm me up! Cleaning the fish is not a hard job, especially if you filet them. I have lots of recipes I use , and fish can be very good for you. Many of the guides here at About.com have compiled recipes for fish, and some of them are listed below. Most any saltwater fish recipe can be adapted for freshwater fish, just use similar fish. Match white, mild saltwater fish recipes with bass, crappie and catfish and use hybrids and stripers for recipes for oily fish. Fish are good for you and make great meals. Check out these recipes and sites and you will find some you like.

(Hungarian fish soup) This superb bright-red soup is made with freshwater fishreflective of landlocked Hungary, which is blessed with Lake Balaton and many rivers. And it's traditionally cooked in a narrow-bottomed black kettle hung on a tripod over an open fire. The soul of it is big chunks of fresh fish in a savory broth absolutely larded with paprika. Serve hot to 6-8 people as a meal, with white bread, pickled salads, and a fine Hungarian wine.
  • 12 cups fish stock (ideally made with the remains of the fish fillets and sliced onions)
  • 1 Tablespoon paprika
  • 3 pounds freshwater fish fillets (perch, catfish, carp, etc.), cut in bite-sized chunks and seasoned with salt (reserve milt and roe, if available)
  • 3 Hungarian peppers , chopped (green/yellowthe pointy ones are hot, the blunt ones are mildmix them as you please; if you can't find Hungarian, use a green bell pepper and jalapenos)
  • tomato , skinned and chopped
  • salt and pepper to taste
Garnish: sliced green bell pepper , with sliced hot peppers served on the side Bring the stock to a boil and stir in the paprika. Let simmer for a minute. Add pieces of fish, their roe and milt (if available), the chopped tomato and peppers, and cook over fairly high heat for about 20 minutes. Don't stir the soup or you will break up the fishjust tilt the pan from side to side to keep the fish from sticking.

The Diversity of Fish (click on the images below to enlarge them.) There is a great deal of diversity among the fish groups today. Their morphology (shape) is highly diverse in order to adapt to the varied habitats each species lives in. We have fish that live in the ocean and others that live in lakes and streams. Some fish (salmon) are born in fresh water, live most their lives in the ocean, then return to the exact fresh water place they were born in order to breed. Still other fish (American eel, sculpin) do the reverse, living in fresh water, but returning to the ocean to breed. It is amazing to think that a salmon spends most of its life circling the Pacific Ocean (thousands of miles), and still knows exactly where to come back to breed (the same place it was born). Scientists believe the way they remember is by the odors in the water as they leave the stream from which they were born. Not only is the type of water (fresh water or salt water) a factor for fish, so are water depth, temperature, and light. Many fish live in shallow waters where there is a greater amount of light, and warmer temperatures. There are fish however who are adapted to the high pressures, low light, cold waters of the deep (eg. lantern fish). Each fish no matter what habitat it occupies must be able to cope with the day-to-day struggles of life around it. Another factor in the development of fish is what is the fish going to eat? Almost every creature in the ocean is preyed upon by at least one species of fish or another (except for the largest whales and the large sharks). In order to eat something the fish must first be able to catch the prey, then kill it, then consume and digest the meal.
