Candidates for the M.S. degree select one major in the field and one minor outside the field. Candidates for the Ph.D. degree select one major in the field and two minors outside the field. There are no general course credit requirements for the M.S. or Ph.D. degrees. All graduate students must take the field seminar (FS 600) each term and must make at least one seminar presentation prior to graduation. All students are required to assist with the teaching program for at least one semester. In addition to the examinations required by the Graduate School, a qualifying examination is required of Ph.D. degree candidates before the start of their second semester of residence. Excellent opportunities for graduate study in both basic and applied research are available. All course work is done on the Ithaca campus, but students may conduct their research at the New York State Agricultural Experiment Station at Geneva as well as on the Ithaca campus. In addition, the M.P.S. (Agriculture and Life Sciences) program has a Peace Corps option in which the student undertakes two semesters of academic work at Cornell and a Peace Corps assignment. Admissions Food Science Supplying the world population with safe, nutritious, appetizing, and economical foods is the ultimate goal of Food Sciences. Achieving this goal requires the processing, packaging, distribution, and evaluation of food. It involves many disciplines and uses the principles of biology, microbiology, chemistry, biochemistry, nutrition, physics, and engineering to solve practical problems related to foods and food systems. Food scientists were among the first to work with biotechnology. Food scientists work with food from the time it leaves the farm through processing, preparation, distribution, and storage of the final product. They determine the factors that affect the safety, nutritive value, and acceptability of foods, and, apply scientific principles to controlling these factors. Therefore, individuals with a wide range of technical expertise are needed. Career Opportunities The food industry offers diverse and exciting career opportunities. Approximately one-third of these are in research, usually in large food companies, universities, or government agencies. In these jobs, people conduct laboratory research on the basic properties of foods such as flavor, color, and nutritive value. Those who enjoy chemistry, biology, and laboratory work can find a variety of positions as food scientists.

Food Science Additionally, a Master of Agriculture degree in Animal Science is offered, which is not a research oriented degree. It is considered as a terminal degree.
Admission Requirements:
No entrance examination other than the TOEFL for foreign students is required for admission to any of the departmental graduate programs.
Course of Study:
The Plan of Study for each degree program is determined by the student and his/her Advisory Committee. In the Master of Science degree programs, students are expected to take courses in areas that support their discipline or interest, that are above and beyond the courses normally required for a B.S. degree in that major or closely related major. For the Ph.D. degree, students take courses related to their major that are beyond those for the Master of Science degree. The emphasis is usually on research at the Ph.D. level.
The Department:
The Department of Animal Science owns large herds and flocks of beef and dairy cattle, sheep, swine, horses and poultry. In addition to the livestock facilities, the Department has a modern facility for processing meat and milk products. The Animal Science Building contains well equipped laboratories devoted entirely to research efforts of the faculty and graduate students in all degree programs.
