Sprinkle cheese on each serving. Yield 8 servings Food Program Meal Component1/4 cup fruit/vegetable + Return to CCNI Nutritious recipes Page.

Potato O'Connor
Ingredients:
1 Tbsp. margarine or butter
1/4 cup onion, chopped
1/4 tsp. garlic salt
1/8 tsp. pepper
2 Tbsp. enriched flour
1 1/3 cups milk
1 - 3 oz. package cream cheese
6 oz. of corn beef, thinly sliced
2 tsp. parsley flakes
4 baked potatoes (medium)
1/2 cup cabbage, finely chopped
Procedure:
In a saucepan, melt the margarine or butter. Add the onion, garlic salt, and pepper. Cook and stir until onion is tender but not brown. Stir in flour and add the milk. Cook and stir until thickened and bubbly. Add the package of cream cheese, cut up. Heat and stir until melted. Stir in the corn beef (cut up), the parsley flakes, and the cabbage. Heat through. Divide the mixture among the 4 potatoes.
Yield:
4 potatoes

6 1/2 cups carrots, peeled and sliced
1/2 cup onion, chopped
2 Tbsp. enriched flour

1 cup fluid milk
4 oz. American processed cheese
1/4 tsp. celery salt

Fresh Fruit and Vegetable Juicing Why Juice? Juicing is one of the healthiest things you can do for yourself and your body. And it's delicious too! As your body gets older it does not absorb nutrients like it did when you were younger. Fresh fruit and vegetable juices are rich in nutrients. They contain an abundance of natural vitamins, fluids, enzymes, amino acids, and *chlorophyll (*found in plants and grasses). These nutrients are easily assimilated by the digestive system. In fact, it may take only 20-30 minutes compared to hours for fats and proteins. Cooking and processing foods kills many of the vital nutrients and enzymes they were meant to provide. Canned, bottled, and frozen juices may contain extra chemicals and/or additives, plus they don't taste as good. If the juice has been pasteurized, it has been heated to high temperatures which kill the enzymes. This process, along with the storage time, allows for lost nutrients. Some health agencies say as much as 75% of our diets should be raw food! Though this is quite impossible for most of us, drinking as much natural juice as possible each day is a great benefit. Juicing is best done on an empty stomach, or at least 1/2 hour before or after a meal.
