Schools Can Donate Leftover Food!
Unused school lunch and breakfast food can be donated! Although leftover foods may contain USDA donated items, the USDA Western Region Office and the Nutrition Services Division of the California Department of Education have determined that leftover foods may be donated to charitable feeding programs rather than be discarded.
  • As a result of district-wide food recovery program in Tulsa, Oklahoma, 4,000 pounds of food are recovered each month from 20 participating schools. This means approximately 20 tons of food waste are recovered each year, resulting in avoided disposal costs and additional assistance to the needy. Many other schools have also had successful programs.
A majority of what students throw away includes packaged food or fresh whole fruits and vegetables. These foods can be placed on a donation table or in a reuse box. Reusable food may not require additional handling because other hungry students may choose to make an immediate selection. Excess prepared food that is not served may be donated to charitable organizations, soup kitchens, convalescent homes, childcare centers and other facilities. Some donation recipients may pick up the food for same day distribution. Collection staff are trained on how to handle the food to minimize any possibility of food-borne illness, and this has generally not been a problem. Often, there are questions or concerns regarding liability; however, the

Food and Nutrition Services, Greenville County Public Schools, is a nonprofit $17 million business. Over 500 food services professionals take pride in serving approximately 36,000 customers daily at 87 schools and special centers. Lunch and a la carte items are available in all schools. Breakfast programs are offered in all schools. The food service program, as an extension of the educational programs of the schools, is operated under the federally funded National School Lunch Act and Child Nutrition Act. The federal laws regulating the food service programs are administered by the United States Department of Agriculture through the regional office and implemented within South Carolina by the State Department of Education. A registered dietitian plans the menus.

HealthScoutNews Reporter SATURDAY, Sept. 21 (HealthScoutNews) An apple a day may keep the doctor away, but why stop there? Research proves that a minimum of five daily servings of fruits and vegetables can ward off a host of ills, including cancer, heart disease, hypertension, diabetes and macular degeneration. However, nine servings a day is even better. In fact, the National Cancer Institute will be emphasizing the upper limit of the range during "5 A Day" week, which runs Sept. 22-28. "Eating 5 to 9 and Feeling Fine: Fruits and Vegetables Anytime!" is the program's new mantra. "Adults really need to eat nine servings a day. That's what the science says, and we decided we needed to start clearly communicating this," says Lorelei DiSogra, director of the "5 A Day" program at the cancer institute. "Fruits and vegetables play a really strong role in reducing the risk of all kinds of diseases." Studies have shown people who ate the recommended amount of fruits and vegetables had an almost immediate reduction in blood pressure. People who chowed down their greens and reds and purples also had half the risk of developing certain types of cancer than those who didn't.

Drying is the oldest method of preserving food. The early American settlers dried foods such as corn, apple slices, currants, grapes, and meat. Compared with other methods, drying is quite simple. In fact, you may already have most of the equipment on hand. Dried foods keep well because the moisture content is so low that spoilage organisms cannot grow. Drying will never replace canning and freezing because these methods do a better job of retaining the taste, appearance, and nutritive value of fresh food. But drying is an excellent way to preserve foods that can add variety to meals and provide delicious, nutritious snacks. One of the biggest advantages of dried foods is that they take much less storage space than canned or frozen foods. Recommended methods for canning and freezing have been determined by research and widespread experience. Home drying, however, does not have firmly established procedures. Food can be dried several ways, for example, by the sun if the air is hot and dry enough, or in an oven or dryer if the climate is humid. With the renewed interest in gardening and natural foods and because of the high cost of commercially dried products, drying foods at home is becoming popular again. Drying is not difficult, but it does take time and a lot of attention. Although there are different drying methods, the guidelines remain the same.
