Jewish Cooking
Level:  Basic Jewish cooking is a unique synthesis of cooking styles from the many places that Jews have lived throughout the centuries.  Jewish cooking shows the influence of Middle Eastern, Mediterranean, Spanish, German, and Eastern European styles of cooking, all influenced by the unique dietary constraints of kashrut and other Jewish laws. Many of the foods that we think of as Jewish are not unique to Jewish culture.  Stuffed cabbage, a traditional Jewish dish, is common in Eastern Europe.  Blintzes and knishes are familiar to all Germans, not just Jewish ones.  Falafel and hummus, increasingly thought of as Israeli-Jewish foods, can be found in any Greek restaurant.  But the combination of these varied foods into one style of cooking, along with our own innovations, is uniquely Jewish. On this page, we identify and describe several of the better-known, popular Jewish dishes.  Most of these dishes are Ashkenazic , because that is what we know best.  Sephardic Jews have their own distinct cooking traditions.  We will provide recipes for those foods that we know how to cook, and will provide links to other recipes scattered throughout this web site.

    Baking is a great way to transmit a culture. Not only does baking fill the kitchen with wonderful aromas; it also provides that relaxed family time when, while working with your hands, you can comfortably ease into conversation, a challenge in most households today. One of my favorite meals is lunch after the first day of Rosh Hashanah . I invite a few close friends and family to a buffet after synagogue. After blessing the round challah for a full year, and dipping an apple in honey, we sit down to eat lunch, which I finish with zwetschgenkuchen, honey cake, and taiglach, and we linger for the afternoon.

    Spicy Romanian sausage tops list of family favorites
    By Betty Newman How often my Romanian heritage is evident when I want to prepare something special for family or friends. Many priceless recipes are part of my family's past recipes that I continue to make and enjoy. One of my favorites, Carnatzlach, is the Yiddish name for what Romanians call "mititei." Carnatzlach is a spicy ground beef "sausage" with tapered ends and distinctive seasonings of garlic and pepper, and may include additional spices depending upon personal taste. Best when grilled, Carnatzlach is traditionally eaten with mamaliga (polenta) and an assortment of salads. These hamburger-like alternatives are especially good with a mashed white bean salad, laced with liberal amounts of garlic. As with so many Jewish foods, it has cousins in other parts of the world: ground lamb kebabs from the Middle East, spicy koftas of India, wursts of Germany and Polish sausage. Gevetch is another Romanian favorite. Essentially a fish stew, it is even better when prepared a day in advance so the flavors permeate. To complete a Romanian meal, make strudel with a filling of Turkish Delight candy known as rahat. It is a delicious alternative to the usual apple strudel and may be frozen and thawed prior to baking.
