Friday, March 12, 1999 The C AMBODIA D AILY R ESTAURANT G UIDE Korea Offers Home Cooking Plain and Fancy Considering there are fewer than 300 Koreans in town, Phnom Penh has a surprisingly large number of restaurants offering their native cuisine.
Embassy people tend to head for the comforts of home at Seoul Garden , across the road from the Sofitel Cambodiana. Get a friendly Korean to take you there, because it is not easy to find. The atmosphere is plain and the focus is on the food, which Koreans figure to be about the best in town. For $5 a meal, they look for their traditional dishes of rice, pickled vegetables, soups and side dishes. Try asking for han jung sik.
Korea House
Another major presence on the Korean scene is Dong Bang at 114 Sihanouk Boulevard, where the jovial Mrs Kin Ok Hee rules the kitchen and prides herself on her kim chee, the pickled vegetables that made Korea great.
Patrons at Dong Bang make a beeline for the roast pork and roast beef; for $5, they also get eight side dishes of various colors and flavors.

  • Cooking dead rats to eat Walking the streets of Pyongyang at dawn, one can find dead rats that have eaten the rat poison laid out for them outside apartments. I was able to pick up quite a few. With no other way to tide over my hunger, I had an uncontrollable urge to eat those rats. I couldn't resist eating the rats, despite realizing that I might meet their fate. I took the rats I had collected to the banks of the Daedong River, removing their insides from the head to the abdomen. I built a fire with some scrap paper and roasted the rats. Although they looked scary, the meat tasted good. It made me feel pretty smart to be roasting rats in the middle of the capital. Behind Namsan hill I could see the Party Central Committee building. My hands and mouth were black as I chewed on the rat meat, and in my heart I asked General Kim Jong-il: "General! My grandfather died before he ever saw the white rice with meat soup, the silk clothes and the tile-roofed house that the Great Leader had promised. Father and mother also departed. Now my children have left, too, and isn't it time the General made good on the Great Leader's promises?" This is the truth. No one said anything as three million North Koreans starved to death. We believed our Great Leader would make good on his promises, remaining dutiful even unto death. Now it is your turn General. Your loyal people do not think that you would deny us, but we believe that you will carry through on your promises. I speak as a bereaved family member, as an ordinary citizen. I am sure you will give us these things, but I want to say, don't ask us to wait any longer! This is because I have given up 54 years waiting for white rice with meat soup, silk clothes and a tile-roofed house . . .

The leftover rice is warm and ready to use for kim-bop or rice and kimchi for after school snacks. After 2 days though, the rice turns yellowish and needs to be discarded. I have selected a number of rice cookers with varying prices and cooking capacities.

    The relationships between men and women have changed; and this has affected cooking at home. In recent years, husbands have started doing some of the cooking at home. Why is this happening? Joon-Woo Ko from Korea
    In the past in Korea, there were large families with grandparents and over four children. Each family had up to eight members in the household. Men usually worked outside of the home and made money for the family to live on. In the case of women, it was completely the opposite. Women were supposed to stay at home and do only things related to housework. In those large families, there were really strict traditional rules about men's and women's roles. The women used to manage the housework, especially the cooking. Men were not allowed in the kitchen for any reason at all; only women could be there. However, as generations have changed little by little, the relationships between men and women have changed; and this has affected cooking at home. In recent years, husbands have started doing some of the cooking at home. Why is this happening?

    Korea is a country of extraordinary contrast and diversity. The peninsula is bordered on the west, east, and south by water while rugged mountains inland give way to rolling hills, plains, and estuaries on the coasts. For 200 years, it was known as the Hermit Kingdom, but in September 1988 South Korea hosted the Olympic Games in Seoul to a record 161 countries, 13,600 competitors, 250,000 tourists, 15,000 journalists, and some 3 billion television viewers. If you find yourself in Seoul, you might question the appellation "The Land of the Morning Calm," in this – the fifth largest metropolis in the world. Yet look closely in the shade of the modern high-rises and you will see palaces, shrines, and city gates which are over half a millennium old. Take a step back and you will see that four mountains in four directions further dwarf the skyscrapers. Not surprisingly, Korean cuisine reflects the colorful variety of its land and the passionate temperament of its people. Korean meals are served buffet-style with meat, poultry, and fish dishes served concurrently with an impressive assortment of vegetables for sampling, rather than for individual portions. Historically two distinct types of Korean cooking can be noted: the cuisine of the royal court and the home cooking of the common people. While court cuisine is characterized by highly refined seasonings and elaborates cooking procedures, homestyle cooking is less complex and elegant. In general, Korean food is heavily seasoned, typically with some combination of garlic, red and black pepper, ginger, scallions, soy sauce, and sesame.
