MACEDONIAN PITA (PITA SO SIRENJE) INGREDIENTS: 2 packets (ca. 500 grams) of phyllo dough (phyllo from the frozen desserts section), 200 grams of yellow cheese (Macedonian kashkaval or a mixture of cheddar and mozzarelle), 500 grams of white cheese (Macedonian sirenje or feta cheese), 7 eggs, 100 grams of butter, 1/2 cup of soda water, 1 cup yogurt HOW TO MAKE IT: Mix six of the eggs, the grated butter, the crumbled white cheese, the yellow cheese cut in small pieces, and the yogurt. In a buttered pan, lay a layer of the filo dough, spread a layer of the mixture. Finish with a layer of filo dough. Then cut the banitsa into serving pieces. Mix the last egg with the soda water and stir. Pour the mixture over the banitsa MACEDONIAN SALAD 2 small eggplants
2 medium tomatoes
2 scallions
1 cucumber
1 green pepper
1 sweet red pepper
chopped parsley
Marinade:
2 cloves crushed garlic
2 T dry red wine
juice from 1 lemon 1/2 C wine vinegar 1/2 tsp sale black pepper 1 tsp basil I added more vinegar to make it enough liquid Serve on greens, topped with yogurt.

The society is traditionally patriarchal, with Orthodox Christianity exerting a strong influence among the non-Muslim population. Traditional clothing is colorful, with rich embroidery, but folk costumes are no longer worn by many people, who dress instead like other southern Europeans. Traditional foods have much in common with those elsewhere in the Balkans, favoring breads and roasted meats. The republic produces excellent fruits and vegetables and is famous for its peppers. The wines are very good and are being increasingly produced for export. As might be expected in a country with such a diverse population, the cultural life of the FYROM is rich. Folk music draws on Byzantine traditions as well as those associated with the Muslim cultures of the Middle East. Current popular music groups have drawn on this mixed heritage to produce strikingly original music. Many of the Orthodox Christian monasteries and churches are decorated with beautiful frescoes and other works of art. In 1995 a FYROM film, Before the Rain, gained recognition in the United States and was a finalist for an Academy Award in the best foreign-language film category. An internationally renowned gathering of poets is held every year in Struga, on the shores of Lake Ohrid.

Destined to their role as professional musicians as a secondary result of their social status, the Rom people have often been the exclusive source of traditional music, as well as faithful mirror to the culture of the country they inhabit, across the ages. But at the same time, thanks to their travels, they have developed the capacity to mix a multitude of sources and transform them into a style that is uniquely their own. Contrary to the preconceived notion that Gypsies are gifted with a capacity for imitation, they have always forged a music with their own very distinct character, even though they have continually been forced to deal with the necessity of adapting to local demand. With the Rom people, playing music has always been synonymous with creating it.

    Prehistory. The geographic location of Macedonia allowed contact between two cultural spheres: the Aegean and the Anatolian. This contact was the reason why Macedonia since prehistory took a significant part in the cultural development of the Balkans. The finds at Vrshnik, near Tarinci (in the region of Shtip) are proof of the existence of the "Vrshnik" or east Balkan culture of the Neolithic. The Neolithic sites by Anzabegovo (also near Shtip), by Zelenikovo and Madzari (near Skopje), Buchim (Radovish), Lopate (Kumanovo), and somewhat later in Pelagonia and Ohrid, where primitive pottery has been discovered, prove that a native cultural tradition-though a tradition susceptible to outside influences, especially from the east-developed in Macedonia.
    This Neolithic development was discontinued at the beginning of the second millennium B.C. in the early transition from the Neolithic to the Bronze Age (2600-1200 B.C.). Sites from this period have been discovered in Macedonia at Skopje, Crnobuka, Shuplevac and Bakarno Gumno. The discoveries at these sites include stone houses, pottery with smooth coatings, graphite-painted ornaments, roughly stylized seated figures and roughly-modeled figures with an opening on the upper part and a modeled head.

    Cultural Wealth
    Macedonia is a treasury of cultural wealth. The Slavonic alphabet was born in Macedonia, where the Macedonian educators Cyril and Methody , and Clement and Naum played an important part in the spread of Christianity. Macedonian builders and mosaic masters shone like a bright star in the dark period of European culture prior to the Renaissance. Scholars and writers often refer to Macedonia as a magical country for archaeology - there are many historical sites, including those at Stobi (Gradsko), Heraclea Lyncestis (Bitola), Lychnidos (Ohrid) and Scupi (Skopje). In the site of Vinicko Kale (near Vinica), the discovery of terracotta icons aroused great interest among historians and archaeologists. The Basilica Mosaic in Heraclea Lyncestis is one of the most famous mosaics of antiquity. There are many remains from Roman times and the early Christian period. Macedonian cities have an imposing number of churches. The famous architects and fresco-painters worked on numerous churches, and in Ohrid alone their number exceeds 30. Lake Ohrid and the town of Ohrid are under the protectin of UNESCO. Several churches, the most renowned among which is St. Pantelejmon, bear witness to the times of the educator St. Clement. The churches and other cultural monuments built between the 11th and 12th cenbturies are characterized by unique architecture and priceless frescoes and icons, famous throughout the world.
