This spiked eggnog with the funny name (rohm-POH-peh) is so popular in Mexico that a pasteurized version is sold in liquor stores. You can enjoy it, mostly as an after-dinner drink, any time of year. As an alternative to brandy, you can substitute rum.
Preparation time: 25 minutes, plus chilling
Yield: 8 to 10 servings (7 cups)
6½ cups milk
1½ cups sugar
2 whole allspice berries
2 small cinnamon sticks
2 whole cloves
5 egg yolks
1 cup brandy Combine 6 cups of the milk, 1 cup of the sugar, allspice, cinnamon, and cloves in a saucepan and bring to a boil. Simmer, stirring occasionally, for about 15 minutes. In a bowl, combine the egg yolks with the remaining ½ cup milk and the remaining ½ cup sugar and whisk until smooth. Slowly pour a few cups of the warm milk mixture into the bowl and whisk.

When the Spanish arrived in New Mexico they found the inhabitants engaged in agriculture to one degree or another. While the Pueblos had formed agricultural communities, the Navajo and Apache practiced varying degrees of cultivation.
The Pueblo Peoples were the first to settle in New Mexico. In fact, the earliest signs of maize cultivation that we know of began almost 5,000 years before New Mexico became a U.S. territory. Although the Pueblos depended greatly on cultivated foods, they also relied to some degree on wild plants and animals.
The Navajo built seasonal villages where they remained to plant and harvest their crops. The various Apache tribes planted in the spring, traveled throughout the summer, and returned to reap their harvests in the autumn. The Apaches depended more on wild plants and animals than did the others.
However, all three were growing three basic crops: beans, corn, and squash, and each depended a great deal on wild foods to supplement their cultivated food supply.
Corn, beans, and squash are called "The Three Sisters." In traditional southwestern agriculture, they are often planted together and symbolize the model of how a community works together. The corn supports the tendrils of the beans. The squash repels most insects, but its bright yellow flowers attract the helpful pollinating bee. The bean returns health-giving nutrients to the soil. They all work together as three sisters should.

    • 3 ripe avocados
    • 1 tomato (peel and seeds removed)
    • 1 medium red onion (diced)
    • 1 tablespoon hot jalapeno pepper (chopped)
    • dash of ground coriander
    • 1 tablespoon lemon juice
    • 1 tablespoon vinegar
    • 2 tablespoons salad oil
    • 1/2 teaspoon salt
    Mince the avacados and tomato. Add the remaining ingredients and mix well. Can be used as a chip dip or raw vegetable dip.

Despite searching vigorously I was unable to find such a place. A Mexican Home cooking school in Mexico was recommended. My teacher Estela Salas Silva and her American husband made an impressive team. The purpose built accommodation with a very large kitchen was located close to Tlexcala a historical city near Puebla. I was so impressed by the whole set up that I convinced Estela to share some of her cooking skills with us in the UK. Q uote by Estela Salas: M y classes are enjoyable and fun but also serious instruction based on dishes and traditions that have been kept alive in my family for generations. Rather than teach a nouvelle Mexican cuisine I prefer to teach a very traditional basis and then leave it up to the creativity of each individual chef to adjust each dish as he or she desires. I began a classical culinary apprenticeship at the age of seven in the traditions of Mexico that still existed at that time under the tutelage of my grandmother and the older women of my family. My experience in restaurants began at age 9 in Mexico City and continued to San Francisco California, where I was head chef of El Rebozo Restaurant for many years.
