Most herbs and spices should be added toward the end of the cooking period. Use cheese cloth for easy removal of herbs. Roots, berries, seeds and spices should be used fresh. Spices and herbs that are dried can be used up to a year. Over cooking and boiling herbs will make them bitter or dilute their flavor. ALLSPICE: A reddish brown berry whose flavor is a blend of cinnamon, cloves, nutmeg and juniper berries. For candied items and baked goods.
ANISE: Small, dried, ripe fruit of the herb, has the flavor of licorice and used in cakes, cookies, breads and candied items.
BAY LEAVES: Use with discretion, rather pungent. Use in stuffings, stocks, sauces, marinades, vegetables and meats. The leaves release their flavor best in oil. Great in stews, Middle Eastern cooking.
CARAWAY: The leaves can be used sparingly in soups and stews. The seeds are similar in flavor to cumin. Add to rye breads, cheeses, stews, marinades, cabbage, sauerkraut, turnips and onions. Good for pickling. Over cooking will make it bitter.
CARDAMOM: A lovely, strong scented spice that resembles cloves. It's good in soups and pea soup particularly when used with coriander and cumin. Used in Middle Eastern cooking.

My mother says she believes my interest in food stems from an incident in my youth...right before she gave birth to me, she ate a doughnut, and thus began my interest in food. I am not an excellent cook, nor a particularly inspired cook, but I'm a good cook. Creative and experimental with a touch of native ability handed down from my grandmothers. I collect interesting recipes, so don't hesitate to pass along interesting recipes.
Cookbooks in particular
This page primarily existed to give me a means to carry this list with me everywhere. However with the acquisition of a PalmPilot (later replaced by the TRGPro using the same OS and data) a robust, full-figured, but slender palmtop computer. The Pilot and an excellent database program created for the Palm called JFile , by the excellent John Lehett, I have allowed me to bypass this wide webbish world and carry my library comfortably in my purse. As such, I'm not sure what there is to do with this page. Technically it's no longer needed, but I've gotten so many comments on it and people who were interested in the list of the books and in finding them for me, I will leave it and continue to update it. Note: Not even a week after I put this new information up, I received intelligence that this list was being handed out some sort of authoritative collection. It isn't. In this intelligence was a request to add dates to the information I include. I willingly comply.

About Middle Eastern Cooking
Middle Eastern cuisine is a refined art. It is influenced by dozens of cultures, and its spicy dishes reflect the fact that the Middle East was either the source or the way station for spices that came to Europe from all over Asia. Lamb, rice and various legumes (especially lentils and chickpeas) are staples of main course dishes. Many dishes use burghul (cracked wheat or smead) in salads and chopped meat combinations. Middle East foods include lots of salads made from both fresh vegetables in season, and cooked or pickled vegetables, and fruit in quantities. Olive oil is the healthy and tasty "universal solvent" of Middle Eastern cuisine. Small green olives, hot green peppers and pickled or fried eggplant are served as side dishes along with dips such as tahini (made from sesame seed oil) and Humus (chickpeas and tahineh). Middle Eastern foods are eaten with (or in) pita bread. A pita is a flatish bread (it is the origin of the Italian word "Pizza") originally baked in a simple oven. Pita can be slightly risen and the size of a small platter. That kind of pita can be opened inside to form a pocket for salad or meat or falafel. Pita can also be baked in long flat sheets (Iraqi Pita). Salads and dips can be rolled up inside. Pita can also be baked with onions, Za'ater etc. on top. Ijjeh is a kind of fast food made by baking an egg mix on top of a pita.

It is my sole purpose to introduce you to some of the best recipes on the internet, and to share with you some of my own personally developed recipes and those of my mother, Gladys , who taught me how to cook. The recipes you find here are not normally found in your basic cookbooks, but are a collection of recipes from around the world that I love to prepare and that my friends have raved about. They may seem difficult at first sight, but they are really quite simple. They do, for a large part, take a little time to prepare. They are not what in today's "faddish" society you would call "lo-fat", but are nutritious. These recipes are not intended for daily faire, but are for those special occasions when you want to look and feel like the best damn cook that ever was. They are for impressing your friends and family with your culinary mastery. I also want you to know that recipes are made to be altered. Use your imagination when you cook. If one fruit or vegetable is not in season, use something that is. Keep things as fresh as you can buy at the time. Experiment with recipes. Change a spice or two. Use different meats, like substituting pork for chicken. Fry some sweet potatoes instead of white ones. Throw a handful of raisins into your gravy. Pick some nasturtiums out of your garden and toss them in your salad. Put some cranberry juice in your salad dressing. Use lots of olive oil! Raise a little hell in your kitchen! Everyone will think you know what you are doing and will go home and try it themselves.
