Pronounced “poi-key” (pot) and “poi-key-cos” (pot food). The "Potjie" is the pot and the "potjiekos" is the "traditional way of cooking " that dates as far back as the 1500's. The Potjie pot however dates back to the iron age when man learned to cast iron into vessels of different shapes for a variety of purposes. The pots during this time also developed a lot of mystery and romance due to the fact that they were very popular amongst the witches and druids of the time, who used the pots for their respective rituals and ceremonies. The Potjies also bring to mind cannibals and the name "Missionary pots" which they are often called.

Metis: Those peoples who were called Bois Brûle, Half-breed, Country-born, Mixed blood, Michif, Chicot, Mountain Men or even Savages (meaning those who have taken up savage ways) are included in my quest to understand my ancestors. Most folks limit the Metis to Canada and some parts of Northern United States to describe people of mixed North American Indian and Indo-European descent. The term 'metis' is a French term that refers to a person of half-breed, mongrel, cross-bred, mestizo or metif blood. I used the term 'Metis' as a generic term to refer to a distinct culture for all those people who are born into it or are adopted into this tradition. Biological metis-sage by itself does not determine a person's social, ethnic or political identity. Canadian 'common law' based on Indian tradition suggests those adopted into a culture have equal rights and responsibilities of those within that culture.

7. CULTURES 7.1 General Functions of Cheese Cultures Lactic acid bacteria and other microorganisms are present as 'contaminants' in cheese milk and further environmental contamination takes place during cheese manufacture. Provided the milk is not chilled, it is possible to make cheese without any additional cultures, but normal practice is to add domestic cultures for the manufacture of cheese from both raw and pasteurized milk. Culture, then, refers to prepared inocula of bacteria, yeast and moulds which are added to cheese milk and cheese. In the broadest terms cultures have two purposes in cheese making: (1) to develop acidity; and (2) to promote ripening. Lactic acid cultures contribute to both of these functions, while numerous special or secondary cultures are added to help with the second function. Development of Acidity Raw milk at warm temperature will support a variety of micro-organisms in succession as the pH changes over time (see illustration in Figure 7.1

Creoles were named for the offsprings of French and Spanish aristocrats who settled on the banks of the Mississipi River 265 years ago and the rich culture they created.     Material Culture
    The material culture of a people is more-or-less synonymous with its technology. It is the persistent pattern of their material existence - how they clothed themselves, how they provided shelter, how they moved about, how they procured or produced foods, and how they utilized resources to perform the manifold of other tasks that are associated with material survival. I have divided these matters into three areas. The first tended to be shared by men, women, and children. The second tended to be the province of men; and the third tended to be the province of women. Clothing, Housing, and Transportation This basic nudity did not change in winter but the need for warmth was met by adding a cape made from rabbit skins . The cape was tied around one's neck with cordage and it was usually long enough that it hung almost to the knees. At night the cape became both blanket and bed. It was perhaps the Great Basin's most significant technological invention. It was no mere blanket of sewn skins; in fact, it was a marvelously thick and warm garment with fir on both the inside and the outside. It was the product of weaving. Rabbit skins were first cleaned, cured, and dried. When enough skins were available, each skin was cut into a single long strip, about an inch wide, just as one might cut an orange peel into a single strip. When the rabbits skins were cut into strips , they were then twisted into what amounted to a thick "thread", fir side out, and woven into a fabric on a primitive loom.
