Pediatric Nutrition Emphasis
The Pediatric Nutrition emphasis is a residency-training program outside the Division of Foods and Nutrition that is offered to individuals who desire increased knowledge and additional clinical experience in pediatric nutrition. Registered dietitians who are interested in improving their pediatric skills and U of U CMP students who have completed their second year of study may apply to a 6-12 week pediatric practice experience provided at Primary Children's Medical Center. Primary Children's Medical Center is a 240-bed tertiary care pediatric hospital located next to the University of Utah campus and University Hospital. A fee is charged for the residency; however, scholarships are available. Up to 4 students are accepted each year. When you return home after your transplant, your immune system is still functioning below normal. You may also have increased nutrient needs due to medications or loss of muscle mass. Calories, protein, fluid, vitamins, and minerals are necessary for you to regain your immunity, maintain or achieve your weight goal, strengthen your muscles, and feel better!
Food Safety
  • Allogeneic patients should continue the "Immunosuppressed Patient Diet" until off all immunosuppressive therapy (such as prednisone, FK506, cyclosporine). Autologous patients should continue the diet during the first three months after transplant. When you discontinue the Immunosuppressed Patient Diet continue to use care when purchasing foods, preparing meals and dining out. Situations where you cannot control the cleanliness of the food put you at greater risk for acquiring a food-borne illness. Examples include salad bars, smorgasbords, delicatessens, bulk food bins, free food samples offered in stores. Review the Food Safety Guidelines in the Patient/Caregiver Manual. Continue to avoid herbal and other preparations, since they may contain harmful ingredients or infectious organisms. Herbs are not regulated for purity or for effect on health.

The birth of a child leaves mothers with many questions; some of the most important are about what foods are best for the newborn's health. Fellowship in Pediatric Nutrition
Individuals who have completed residency training may apply for a combined clinical and research fellowship in nutrition. Clinical training consists of 6-12 months of clinical service in pediatric nutrition and in related areas in adult medicine as appropriate to trainee's interests. Content areas include: inpatient nutrition support; outpatient assessment and treatment of growth and nutrition problems; breastfeeding assessment and management; obesity assessment and treatment. Trainees also have rotations with subspecialty clinics for conditions with nutrition-related problems, including cystic fibrosis, short gut syndrome and feeding intolerance, liver disease, diabetes and others.
Support for two years of research training is also available through a National Institutes of Health-funded Nutrition Training Grant (T32 DK07658-11; PI: K. M. Hambidge, MD). The objective of this program is to provide research training in the nutritional sciences to both physicians and basic scientists who demonstrate a commitment to a career in nutrition research. The foundation of nutrition research at the Center for Human Nutrition is the presence of program faculty with expertise in whole-body, tissue, cellular and molecular methodology. Areas of interest include obesity and energy balance, childhood eating behaviors, substrate utilization and gender-based differences and trace mineral nutrition and bioavailability, with emphasis on children and women of childbearing age in both the U.S. and in developing countries.

COLUMBUS, Ohio, Oct. 30, 1998 Most mothers and mothers-to-be are seriously uninformed about five basic infant nutritional practices, according to a national survey conducted by The Institute of Pediatric Nutrition. Most of the 323 women surveyed are uncertain about a range of nutritional issues including: when to introduce cow's milk into the infant's diet, whether fruit juice has any nutritional value, and how to deal with a low milk supply during breastfeeding. Additionally, the survey shows that mothers misinterpret normal spitting up as an allergic reaction and mistakenly believe iron-fortified formula causes constipation misconceptions that can lead to improper feeding decisions. An analysis of survey results shows that only five percent of mothers and mothers-to-be were able to provide accurate answers indicating they understood all of the following: Cow's milk should not be introduced when the baby starts eating solids.

Other conditions, including cancer , require special care to encourage children to eat properly to help their bodies get the greatest benefit from treatment. Still other conditions, such as failure to thrive , malnutrition, nutritional anemias, obesity and food allergies are related directly to a child's diet.
Sutter Children's Center team of pediatric specialists, under the direction of a pediatric endocrinologist and pediatric gastroenterologist, provide nutrition screening, assessment, intervention, education and counseling to ensure patients' diets match the needs of their body. Team members include pediatric nutritionists and pediatric rehabilitation feeding specialists, as needed.
