Christmas is the culminating point of the Wischik culinary year. Weeks beforehand the preparations have already begun, with the pickling of the sledzi and the souring of the beetroot juice. But before we look into the culinary framework of the holiday, let us recall the historical roots of the celebration. At its heart, the Wischik Christmas is a Polish Christmas, and a number of old Polish traditions are kept. We sit down to the Christmas Eve dinner at dusk, at the moment the first star appears. First, a consecrated wafer is divided among everybody and greetings are exchanged. But there are many other traditions, some brought each year by guests from far away, others invented on the spur of the moment. There is a saying: 'A legend, a lie, and a likelihood make a tradition'. And so the first course is Picture sushi During this course is held the ritual wasabi contest. Wasabi is a powerful Japanese spice, much stronger than mustard. The fieriest-mouthed guest and the most foolhardy compete to see who can eat the most in one mouthful, while denying flatly that there is any competition between them. The next course is part Polish but pure Wischik. It consists of rounds of sledzi (a type of pickled herring) on rye bread, with vodka. The vodka must be kept freezing cold, because otherwise it tastes horrible.

This commitment made her a great cook over the years. When she died back in 1984, she left a big empty space in all of our lives. A few years later, my Mom happened upon a large shoebox that was tucked away in the corner of what used to be my Grandmother's closet. ...No gimmicks - just geeky things... Main December 21, 2002 Weekend before christmas That translates into laundry, cleaning, cooking, baking, running around like crazy. All this so we can have a big, family dinner on Christmas eve (Poles have the 'big dinner' on the eve as opposed to Christmas day, we also get our gifts after the dinner not next morning). On the bright side, Christmas eve is a lenten day so for once I can cook all-veggie dishes and not listen to a litany of complaints about the lack of meat on the table. What I make ever year:
  • Dumplings with dried mushroom filling - uszka - they look a bit like ears, so that's what we call them and they're served in barszcz (spicy red-beet soup). Sauerkraut and mushroom (fresh) filled pierogis Cooked vegetable salad - carrots, potatos, eggs, onions, apples, pickles all finely diced and mixed together with mayonnaise, bit of mustard and few drops of vinegar.. salt, pepper, etc.. Cauliflower and peas samosas - this is a hindu dish, not Polish with tumeric and other spices - it's really yummy
Time permitting I'll probably make other things.. plus the staples.. potatos and such.. and then there are the numerous fish dishes my mom always makes..

For years in Poland a meal out meant wandering down to the local milk bar - a state-run canteen serving good solid food - and as long as you didn't want meat or alcohol, at bargain prices. Many thought the milk bar's days were numbered with the end of communism, but after more than a decade later, those that remain are carving out their own place in the country's competitive catering marketplace. This recipe was taken from POLISH COOKING - Marianna Olszewska Heberle) Hunter's Stew (Bigos) A harmonious blend of flavors known as the Polish national dish. Ingredients: 3 lbs sauerkraut 2 lbs ham with bone, pork spareribs or pork rib roast 2 bay leaves 1 oz dried mushrooms, chopped 20 black peppercorns 10 allspice berries 1/2 tsp salt 11 cups beef broth, bouillon or water 2 lbs green cabbage, chopped like sauerkraut 2 Tbsp butter or margarine 1 lb Polish smoked sausage, cut into 1/2-inch cubes 1 lb Polish white sausage with garlic, cut into 1/2-inch cubes 1 lb bacon, cut into 1/2-inch cubes Rinse sauerkraut with cold water; drain well. In a large stockpot, combine sauerkraut, ham or pork, bay leaves, mushrooms, peppercorns, allspice and salt. Add 6 cups broth, bouillon or water. Cook, uncovered, 15 minutes over medium heat. Cover and simmer over low heat 45 minutes. Remove meat. Let meat cool. Place cabbage in a large saucepan. Add remaining 5 cups broth, bouillon or water. Bring to boil. Cook, uncovered, over medium heat, 1 hour or until cabbage is tender. Add to sauerkraut mixture. Bone cooked meat. Cut cooked meat into 1/2-inch cubes. Melt butter or margarine in a large skillet. Add cooked meat, smoked sausage and white sausage. Saute over medium heat 10 minutes or until browned. Add to sauerkraut mixture. In same skillet, saute bacon over medium heat until crisp. Drain bacon on paper towels. Add to sauerkraut mixture. Cover; cook over low heat 1 hour or longer. Remove and discard bay leaves. Serve hot. Makes 12 to 14 servings. Use only meat with large bones, so bones can be removed easily. The secret of old-time Bigos is that it gets better as it's reheated on successive days, peaking at the 6th or 7th day. In between, store covered in the refrigerator.
