  • two porgies (or sea bream, scrup, tilapia, or any firm, low-fat flesh fish), one to two pounds each; cleaned flour salt, black pepper, to taste one quarter cup palm oil or vegetable oil two onions, finely chopped two tomatoes, chopped one cup fish stock or water red pepper flakes or cayenne pepper (optional)
What you do
  • Cut the fish crosswise, into two-inch sections. Mix the flour, salt, and pepper in a bowl. Roll the fish in the flour mixture. Heat the oil in a skillet. Cook the fish in the oil, turning it until it is golden brown all over. Remove the fish and set aside.

      Introdution
      Its not easy reproducing recipes from old cook books, or should I say translating them. These recipes came from authentic handwritten 'receipt' books of the eighteenth century. It is not just the ingredients which are strange to the modern eye - although many of them seem strange enough - 'Cowcumbers' may be obvious, but how many of us now use 'orringoe' roots, or 'shivred pallats'? There is also a tendency to not explain much in the way of weights and measures - some recipes just call for 'sugar' and '2 or 3 eggs'. These receipts were well known to these women, as was cooking. They new the proportions needed and so they need not spell things out in their own handwritten books. There is also a complete lack of temperature and cooking times - well that's fairly obvious. The first closed stoves were not really in use until the early nineteenth century anyway. To measure temperature was futile, just as a cook would time it according to what she knew.

    by Patricia Mitchell I f you've cooked for a family for any length of time, you probably have dishes in your repertoire whose ingredients you wisely keep secret. If they knew that moist, rich chocolate cake contained mayonnaise, for instance, they might not eat it. I wonder, in fact, if that same psychology is the reason behind the ever popular buttermilk dressing being dubbed Ranch Dressing most everywhere. The fact is that people have food prejudices. People think they don't like all kinds of food. And, as with the Chocolate Mayonnaise Cake, they have aversions to particular food combinations. If people were rational, rather than emotional, about these things, they would realize that mayonnaise is composed mainly of oil and eggs, ingredients that no one would argue have their place in making a good cake. But since most everyone associates mayonnaise with potato salad, sandwiches and pickles, adding mayonnaise to cake batter just sounds

    Paper Mario: Recipes
    At the end of Chapter One, when you return to Toad Town, pay a visit to Tayce T.'s house. Tayce T. is a renowned chef who just loves to cook using strange and rare ingredients. If you bring her stuff, there's a good chance that she'll create something quite delicious and helpful in your quest. Tayce T's house is one screen south of the Post Office, right past the fallen timber that blocked off southern Toad Town in the Prologue and Chapter One. When you talk to this grandmotherly chef, she'll ask you for an ingredient. You can give her anything from a power-up like a Volt Shroom or a Fire Flower to a more normal food-like item, such as Dried Pasta, Berries, or Cake Mix. Once you get the Cookbook from Gourmet Guy in the Shy Guy's Toy Box (in Chapter Four), Tayce T. can combine up to two items at a time.
    The Ingredients For the most part, Tayce T. can cook with anything that seems edible (like Mushrooms and Honey Syrup). However, her best recipes are made with the rare food items that Mario finds on his journey through the Mushroom Kingdom. The following is your grocery guide through the different worlds. Goomnut Goomnut-bearing trees are extremely rare and limited to the Goomba Village. In fact, there is only one of these trees and it is next to the Goomba family's house. Whenever you need one of these delicious nuts, be sure to knock one out.

    "Good morning! We have two very unusual recipes for today's program, so grab your measuring cups and spoons and prepare to make: 'Mock Mono Lake Soup" and "Tufa Porridge Extraordinaire.' Sounds yummy? As always, we offer only the unique and highly seasoned on the Mono Lake Recipes Show.
    "Ingredients! Mock Mono Lake Soup can be made with normal items you keep around the house, but I'll list the ingredients slowly to give you time to gather them together. Some of these things are not generally kept in the kitchen. Mono Lake has been busily accumulating its various ingredients for over 700,000 years, we figure, so speed is obviously not of the essence.
    "Oh, yes, you'll need some sort of closed container. Something that will hold the ingredients in place, creating the perfect environment for a highly seasoned soup. No seives, you understand. The Mono Basin has no outlet; neither should your bowl.
    "So, those ingredients: as you see, we have fresh clean water, direct from the tap. And regular old table salt (sodium chloride, to you chemistry buffs). Then some baking soda; this is very critical to both recipes we are preparing. Do you recall its chemical name, "sodium bicarbonate?" Yes, it is that bitter stuff that helps you burp and feel better when your tummy's upset. Mono Lake is loaded with baking soda. And then, some epsom salts (magnesium sulfate, that is), along with a little borax. Finally, just a pinch of a phosphate-containing laundry soap.
