    THE NEW CUISINE OF SPAIN
    In spite of the diversity of the cuisine, several dishes appear everywhere in Spain. One is the Tortilla (nothing to do with the Mexican tortilla), a round, flat omelet made with chopped potatoes, and a favorite fare in bars specializing in tapas , those small, bite-sized dishes served with drinks. Another is the Cocido, a meal-in-a-pot with meat, vegetables, pulses and sausages, typical home-cooked food, as is Sopa de Ajo, garlic soup, which though it varies slightly from region to region basically consists of little more than bread, oil, garlic and water. Of solid peasant origin, the soup is better than the sum of its parts, like that other simple soup, Gazpacho, a nutritious and delicious concoction of fresh tomatoes, peppers, cucumber and garlic, served cold in summertime.

Leafing through Camilla Jessel's The Taste of Spain (St. Martin's Press, $22.95, 160 pp.), one passes page after page of large color photographs of arid scenery (in one, a farmer guides a plow pulled by a camel through jet-black soil) interspersed with equally washed-out pictures of ham broth, chickpea soup, boiled meat and vegetables, fried eggplant, and veal stewed in mushrooms. Like the Iberian landscape itself, this cuisine seems all tones of beige and brown. It isn't that this food isn't goodtake a look at Jessel's recipe for chicken with red peppers or liver with onions and garlic. But recipes with names like 'noodles with potatoes and clams,' 'grated potato soup,' or 'stewed white beans' need more than photographs to bring them to life. In Pepita Aris's

    Exhibit brings beautiful works from half a world away to Art Institute of Chicago

    Showcasing the artistic beauty of a region many Americans affiliate with mountains to conquer was a project five years in the making. The result is the most extensive exhibition ever of art from the entire Himalayan region, which spans 1,800 miles from Afghanistan in the west to India's Arunachal Pradesh in the east. "Himalayas: An Aesthetic Adventure," which opened Saturday at the Art Institute of Chicago, 111 S. Michigan Ave., features 187 pieces — sculpture, paintings, terra-cotta works, ritual objects and other masterpieces — created between the 5th and 19th centuries. "All objects were chosen with the object's beauty in mind," Pratapaditya Pal said. As curator of the exhibition, and the Art Institute's visiting curator of Indian, Himalayan and Southeast Asian art, Pal hand-selected each item from nearly 50 public and private lenders, finding impressive artistry in many objects made some 1,600 years ago. More than half of the pieces have never been on public display.
