La Coccion sin Riesgos en el Horno de Microondas
Los hornos de microondas juegan un papel importante a la hora de preparar la comida, pero se debe poner un cuidado especial cuando se cocinan o recalientan carnes, aves, pescado y huevos de manera que su preparación sea sin riesgos. Los hornos de microondas pueden cocer los alimentos en forma desigual, dejando “zonas frías” donde es posible que sobrevivan bacterias causantes de enfermedades. Por esta razón es importante seguir las recomendaciones indicadas adelante acerca de la utilización sin riesgos de los hornos de microondas, con la finalidad de prevenir las intoxicaciones alimentarias.
La Cocina con Microondas
Coloque los alimentos en forma pareja en un plato hondo cubierto y añada un poco de líquido si fuera necesario. Cubra el plato con una tapa o envoltura de plástico; deje la envoltura o la tapa floja para que el vapor pueda escapar. El calor húmedo que se produce destruirá las bacterias dañinas y garantizará la cocción uniforme de los alimentos. Las bolsas para cocinar también hacen que los alimentos se cocinen de manera uniforme y sin riesgos. Spanish Toast For 8 servings • 8 (2-ounce) slices sourdough bread • 4 garlic cloves, halved • 4 small tomatoes, each cut in half crosswise (about 3/4 pound) • 4 teaspoons extra-virgin olive oil • 1/4 teaspoon kosher salt or sea salt • 1/4 teaspoon freshly ground black pepper Rubbing ripe tomatoes over garlic toast may seem strange. But it's a tradition in Spain, where it's common to find a plate of tomatoes and garlic on the table, waiting for the toast to arrive. The crisp toast almost melts the garlic and the tomatoes, which complement the crunchy kosher salt. Very ripe tomatoes and a hearty, dense bread work best. If firing up the grill to toast the bread seems daunting, you can broil or bake it in the oven. 1. Prepare grill.

Ingredients:
8 eggs
2 lbs potatoes
(actually 2 1/4 pounds...I'm translating from metric)
1 large onion (optional - preferably yellow)
2 cups oil (some will be left over. Use a light grade olive oil (not virgin) for best "authentic" results)
Salt (to taste)
Peel the potatoes, cut them in half lengthwise, and cut them in thin slices (a bit less than 1/4 inch thick). Rinse the slices in cold water and dry them VERY WELL with a clean towel, one by one if necessary. Dice the onion into fairly small pieces.
Heat the oil in a skillet (non-stick is best) and add the potatoes, onion, and a little salt.
Stir occasionally with a spatula or slotted spoon. The heat should be medium low - so that the potatoes cook through without getting brown on the outside.
When the potatoes are cooked through, remove from heat and transfer them to a large colander to let them drain. (The oil can be saved and used again.) Leave a little bit of oil in the skillet, just enough to cover the bottom. In a large bowl, beat the eggs well with a fork, add a little salt, and add the (now drained) potato/onion mixture. Stir well, and let stand for a few seconds.

A b c d e ... z A La, Au, Aux - French terms meaning "served with" or "served in the manner of". Abalone - A mollusk, related to a sea snail, similar in flavor to a clam. It may be cooked by various methods and is best suited to very long or very short cooking times. Also called "Awabi" in Japanese cuisine and "Loco" in South American cuisine. It has been over-harvested and is very exspensive when available. A small amount is being commercial raised. Achar - Very spice relish from the cuisine of India and the Caribbean Islands. Achar may be made from fruits an//d vegetables. Acidulated Water - A mixture of water and a small amount of vinegar or lemon juice, used to purify or prevent discoloration in meats and vegetables. Adobado - Paste or sauce made from chiles, vinegar, and other seasonings. Used as a seasoning for meats. Adzuki Beans - Small reddish brown beans. Aerate - To pass dry ingredients through a fine-mesh sifter so large pieces can be removed. The process also incorporates air to make ingredients like flour, lighter. Sifting dry ingredients aerates them while distributing small amounts of chemical leaveners or dry seasoning evenly through the mixture. Use sifters, sieves or tamis to both aerate and sift. Agnolotti - A small half-moon shaped ravioli.
