The history of mankind is a saga of migrations. Several centuries after the dawn of civilization, humans numbered only a few million. Today the population is nearly 6 billion. Homo sapiens now occupy almost all of the terrestrial globe except for the polar reaches. Humans migrate for a variety of reasons; e.g., environmental deterioration, political and religious persecution, economic hardship and a sense of adventure. A few examples will suffice to provide elaboration for these causes of migration. Environmental deterioration has been a major factor in the movement of people. The area now occupied by the sands of the Sahara was once lush, green, productive, and occupied by a substantial population. Desiccation occurred, water courses shriveled, trees died, the topsoil blew away, and the people left. The earliest settlers in America the Indians migrated from the Orient because of severe climatic changes. When glaciers advanced, the sea level fell, and the shallow waters of the Bering Strait became a land corridor which allowed Asians to walk to North America. Columbus 'rediscovered' America in 1492. Just as environmental austerity or opportunity may facilitate migration so will man's inhumanity to man. The Pilgrims who landed in Plymouth, MA in 1620 came to America to avoid religious persecution in England and to worship according to their belief. In our time, political persecution has replaced religious persecution as a spur to migration. Most 20th Century migrations have been caused by tyrannical regimes. The extreme right and the extreme left are equally intolerant to human rights.

Patti Hill Confucius said, "A man cannot be too serious about his eating, for food is the force that binds society together." This statement summarizes the importance of food in the Asian culture. Preparation is meticulous, and consumption is ceremonious and deliberate. Two key elements draw the diverse cultures of the Asian region together: 1) the composition of meals (emphasis on vegetables and rice, relatively little meat); and 2) cooking techniques.
Description of Region
Asian-Americans have emigrated from the Philippines, China, Hong Kong, Cambodia, Vietnam, Laos, Thailand, Korea, and Japan. The religions they practice include Confucianism, Buddhism, Taoism, and Shinto (Japanese only). A large number of native Filipinos are Roman Catholic. The Vietnamese, Laotian, and Hmong cultures are discussed in separate fact sheets.
Food Habits and Their Relationships to Dietary Guidelines
Most Asians living in America adhere to a traditional Asian diet interspersed with American foods, particularly breads and cereals. Dairy products are not consumed in sufficient quantity, except for ice cream. Calcium is consumed through tofu and small fish (bones eaten). Fish, pork, and poultry comprise the main proteins. Significant amounts of nuts and dried beans are also eaten. Vegetables and fruits make up a large part of their food intake. Rice is the mainstay of the diet and is commonly eaten at every meal.

Caught Between Cultures
Asians born in the U.S. are trying to find their identity in two cultures very different from one another by Dan Ampie
I never really had to think about this when I was little. I just wanted to go outside and play with the other kids. But as I grew older, I began to ask myself where I belonged. I began to see the discrimination that Asians faced in this country. I took notice of the prejudice, racism, and stereotypes. I sometimes felt that people treated me differently because of the way I looked, even though I spoke perfect English. My feeling was one of rejection. I may have grown up in America, but I did not feel part of America because I was different. I sought acceptance from my Asian culture, but some saw me as "Americanized" and not as Thai. I spoke little Thai and was not familiar with many of the customs.
I had different values from the traditional beliefs that my parents held. Again, I felt rejected. I felt like I was not accepted in either culture. So where does that leave me?
Children of Asian immigrant parents are finding that they have to deal with a whole new set of issues and challenges unlike those of their parents. There are many pressures in trying to be successful in this society. Some feel that in order to be accepted by the mainstream they have to assimilate into the American culture. They lose touch with their Asian roots because they feel that being Asian will hinder their progress in American society. They want to feel accepted; they want to belong, so they reject their Asian culture so that they can be accepted into American culture. It hurts too much being alone.

Widespread Asian immigration to the States, more ethnic restaurants and increased travel to Asia account for heightened awareness of Asian cuisine. In addition, Americans perceive Asian cooking to be healthier than its Western counterparts. Indeed, Asians themselves attribute health-giving benefits to specific foods. In many Asian cultures, food is a medium that helps to keep the body in harmony and balance. Pioneered in part by Kikkoman, soy sauce is the first Asian seasoning to reach mainstream status in America.     In a flip remark last June, University of California (UC) Regents Ward Connerly said: "I would be quite comfortable with only white and Asian students at UC, I have no problem with that."
    It was Henry Der, Chair of Chinese for Affirmative Action who took Connerly and Pete Wilson to task. In his eloquent address to the UC Regents, August 20th, Der said: "If Asian American students were to attend certain UC campuses that are exclusively Asian and white, such segregated education would not prepare Asian American students to assume leadership positions in a multiracial California society. As a parent, I do not want any of my three children to experience or choose a segregated college education."
    Pete Wilson's attempt to foment hostility between Asian American and African American communities has already backfired. Asian American support for affirmative action is growing. Throughout California's communities of color there is an awakened sense that an injury to one is an injury to all.

Despite many intellectual and business successes here, they're raised to act modestly in a nation that rewards self-promoters. They tend to be short in a society that values tall. They're pushed to excel in academics in a way that often labels them nerds. So what could be better than the achievements of more Asian athletes to add machismo to the Asian-American male image? Five Asian men are now part of the 40-man Red Sox roster, including pitcher Hideo Nomo of Japan, who made his team debut this month by throwing a no-hitter.     Mura and Houn Both Mura and Houn had defined "Asian American Art," as something that doesn't come easy to those artists who are Asian Americans. They had respectively defined "Asian American Art," as to focus on the lives of Asians in America. To be able to express their work is difficult due to the fact that the majority of the spectators are non-Asians. It is hard for them to even to have audiences of their own race. There are so many different kinds of Asian Americans that it is hard to focus on just one race. Regardless of the many different Asian Americans, the one thing that bring them together is the fact that everyone goes through the same situation of not having to prove themselves to the "white" Americans but rather also the other Asian Americans. I felt as though some aspects of their views aren't quiet agreeable. From his personal experiences, Mura had lived a life of a "white" American rather than an "Asian American" and after he had realized how different his life has become, things started to look different. I am sure, many Asian American had experienced some form of realization that no matter how many generation one has been here, others will always recognize you as an Asian Americans rather than an American, who was born and raised in America. In order for Mura to show or to express his art, he would not only have to capture the other Asian American audiences but rather start with his own Japanese American audiences to get the ability to survive as an artist. This is due to the fact that in order for the audience to recognize you, especially, you being Asian American, one has to start from the root, which is your ancestry or your back ground of being an Asian.

    Diabetes mellitus poses a rapidly growing health challenge to Asian and Pacific Islander Americans in the United States. In 1997, the Asian and Pacific Islander American (APIA) population was estimated to be about 10 million, almost a 50 percent increase since the 1990 Census and representing about 3.8 percent of the total U.S. population. This group includes people whose origins are in the Far East, Southeast Asia, the Indian subcontinent, and the Pacific Islands. Results of the 1990 census showed that the APIA population had the greatest increase of any major ethnic group, doubling in size since the 1980 census. The Immigration Act of 1965 and the arrival of many Southeast Asian refugees under the Refugee Resettlement Program after 1975 contributed to the increase in population observed in the past two decades. Asian and Pacific Islander Americans in the United States were classified into 28 Asian and 19 Pacific Islander ethnic groups for the 1990 U.S. census (see table 1). These populations include people whose families originated in a variety of countries, providing great diversity in language, culture, and beliefs. Nearly 75 percent are foreign-born, but other members of this group are fifth-generation Asian-Americans.
